Ingredients

For the Peaches

  • 8 fresh peaches
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch

For the Topping

  • 1 cup all-purpose flour
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • ¼ cup milk

For the Cinnamon Sugar

  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon     

Instructions

For the Peaches

Preheat the oven to 425⁰F/220⁰C.

Peel peaches and use the Stone-Fruit Wedger to wedge into 12 slices.

Combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch in a large bowl; toss to coat evenly and pour into a 2-quart baking dish. Bake in preheated oven for 10 minutes.

For the Topping

Combine flour, white and brown sugars, baking powder, salt, and butter, until the mixture is crumbly. Stir in milk just until combined.

Cobbler

Scoop batter onto the warmed peaches.

Make the cinnamon sugar: Combine white sugar and cinnamon, sprinkling them over cobbler.

Bake for an additional 30 minutes, or until golden on top.  Serve immediately with vanilla ice cream.

Fresh, juicy peaches grilled with honey, salty prosciutto and creamy burrata atop a bed of peppery arugula will make this salad a summer favorite for years to come! I had a similar recipe at a local restaurant and couldn’t get enough of the delicious flavors!  This is fabulous served with a raspberry vinaigrette.   • 4 peaches
  • ¼ cup honey
  • 1/8 teaspoon salt
  • 3-ounces prosciutto di Parma torn in large pieces
  • 8-ounces burrata
  • 8-10 ounces arugula
  • 1-ounce honey-roasted almonds optional
  • Dressing of choice – I used this raspberry vinaigrette

Instructions

Wash peaches, slice in half and remove pit. Combine honey and salt, mix well.

Dip peach halves in honey mixture.

Cook peaches, skin side up, in 12″ (30cm) Cast Iron Grill Pan Skillet over medium heat for three minutes; turn and cook skin side down for one minute.  Remove from heat.

To Make Salad:

Place arugula on platter, add prosciutto; tear burrata into pieces and add to salad. Add peaches and toasted almonds. Serve with your favorite dressing.

Let’s jump right in!

Ingredients

  • 3 medium peaches, peeled and wedged into 12 slices
  • 1 ¼ cup sugar divided
  • ½ teaspoon lemon juice
  • ¼ teaspoon salt
  • 5 egg yolks
  • 1 ½ cups heavy cream
  • 1 ½ cups whole milk
  • 1 teaspoon vanilla extract

Instructions

Peel peaches and use the Stone-Fruit Wedger to wedge into 12 slices. Combine with ½ cup of the sugar and the lemon juice, stirring gently to coat fruit. Set aside for 30 minutes, until juices have developed.

Separate egg yolks from egg whites (save egg whites for another use).  Whisk yolks with ¼ cup of the sugar until pale yellow in color. Set aside.

Slowly add in heavy cream, milk, ½ cup of the sugar and the salt to a saucepan, stirring to combine. Heat just until bubbles begin to form – do NOT bring to a boil. 

Add ¼ cup of hot mixture into the yolk/sugar mixture, whisking quickly to temper the yolks.  Continuing adding ¼ cup of the hot mixture until completely incorporated into the yolks. 

Pour combined mixture back into pan, heat over medium-low heat until thickened.  You will know it’s ready when custard leaves a line that is not dripping on the back of spoon. Add vanilla to the custard mixture.

Mash peaches very well, ensuring there are no larger pieces left, then strain the juice from the fruit.

Pour custard mixture into Classic Batter Bowl, along with the reserved peach juice, cover and place in an ice bath or refrigerator, until mixture reaches 45⁰F/7⁰C.

Remove the bowl of the ice cream maker from the freezer and attach the assembled clear lid to the bowl.  Set the timer for 30 minutes.  Once the paddle starts rotating, pour the mixture into the bowl. Add reserved mashed peaches to the ice cream when there is less than one minute left on the timer.

When the Ice Cream Maker stops turning, check the doneness. The mixture should be a soft serve consistency.  If needed, add more time until the desired consistency is reached. Cover, and store in the freezer if you like hard ice cream.

I made two changes to this recipe. The first is that I added mascarpone cheese to the filling. I like to add this, because a fruit filling can be quite juicy, and the mascarpone helps to hold it together nicely. Also, it tastes delicious when coupled with the peaches! You could use cream cheese if you prefer, or skip it altogether.

The other change I made to this recipe was how I cooked it. Of course, I had to use my handy-dandy Deluxe Air Fryer! I love that I can take a dessert like this, and cook it in a way that is healthier, while still getting that “crunch” you would get by deep frying. They were seriously so delicious; I may have eaten most all of them this time around. Oh well, guess I’ll just have to make more!

Let’s jump right in!!

Ingredients

  • 2 cups chopped peaches
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons butter
  • ½ cup brown sugar
  • 4 tsp cornstarch
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • 12 egg roll wrappers
  • 2/3 cup mascarpone cheese OR cream cheese, softened
  • water to brush around edges of wrappers
  • 3 tablespoons MELTED butter (for brushing wrappers)
  • powdered sugar for sprinkling

Vanilla Dipping Sauce

  • ¾ cup powdered sugar
  • ½ teaspoon vanilla bean paste or vanilla extract
  • 2-3 tablespoons milk
  • Pinch of salt

Instructions

Peel and chop peaches. Press lemon for one tablespoon lemon juice.  Freeze the rest of the juice for future use.

Combine first six ingredients in skillet or saucepan over medium heat, stirring often.  Bring to a boil, then turn down heat and simmer for 8-10 minutes, until sauce has thickened slightly.  Remove from heat, add vanilla, stirring to incorporate, and let cool.

Once cooled, begin to make egg rolls.  Add one tablespoon of the mascarpone cheese to the egg roll, spreading to cover the middle. Top the cheese with two tablespoons of the peach mixture.  Brush edges of wrapper with water, then fold opposite corners to the middle, fold top side over, then roll.  (See photos and my video). 

Once all are rolled, brush egg rolls all over with melted butter, and place on air fryer racks.

Air Fry at 390⁰ F/200⁰ C for 14 minutes, switching trays at the halfway mark. 

Meanwhile make the vanilla dipping sauce:

Combine powdered sugar, vanilla milk and pinch of salt, whisking well. 

Once egg rolls are cooked, remove from Air Fryer. Sprinkle with powdered sugar.  Serve with dipping sauce on the side.
