Whip up these easy Air Fryer Blueberry Hand Pies for a refreshing summer treat! Crispy, sweet, and perfectly portable—ready in minutes for everyday fun! 🍇🥧✨

Last year, I made Cherry Puff Pastry Pies in the air fryer, and they were a game changer! I decided to try them with blueberries (changed some of the other ingredients as well) and these were superb.

For this recipe, I used my Pampered Chef Deluxe Air Fryer:

Deluxe Air Fryer

Ours is family-sized to quickly cook up to six servings, a whole chicken or roast, or appetizers for a crowd. Like a convection oven, super-heated air circulates giving food a crispy texture. No preheating is necessary, saving you precious time. Conveniently fits under kitchen cabinets. Air Fryer, Rotisserie, & Dehydrator All-in-One Ours does more than just better-for-you air frying. It makes perfectly cooked rotisserie chicken, crispy outside and tender inside, so you can skip the hit-or-miss ones at the grocery store. And it dehydrates fruits, veggies, and herbs so you can enjoy their fresh flavors well beyond the season. Product Details

Ingredients

  • 10 oz fresh blueberries
  • 1/2 c. granulated sugar
  • 1 ½ tablespoons fresh lemon juice
  • 1 1/2 tbsp. cornstarch
  • 17.3-ounce frozen puff pastry
  • 1 large egg, beaten
  • coarse sugar, for garnish

Instructions

In a medium saucepan, combine blueberries and sugar. Cook over medium heat until blueberries begin to release their juices, 4 to 6 minutes, stirring occasionally.

Meanwhile, mix cornstarch and lemon juice together in a small bowl until combined. Stir in the lemon zest, along with the cornstarch slurry into blueberry mixture, then bring to a gentle boil, stirring often. Once boiling, remove from heat. Let cool completely.

Make the Hand Pies

Cut puff pastry sheet into 6 rectangles. Spoon 3 tablespoons of cooled blueberry mixture onto each of the 3 bottom rectangles.

Place the top rectangles over the blueberry filling, lining up the edges as best you can. Crimp the edges with a fork to seal shut. Repeat this entire step with 2nd pastry sheet so you have a total of 6 pastry pies.

In a small bowl, whisk the egg. Brush tops of pastry pies with egg wash, then sprinkle with coarse sugar. Chill pies in the refrigerator for at least 25 minutes.

Air Fry at 360⁰ F/180⁰ C for 12-14 minutes, switching trays at the halfway mark. Let cool on rack until ready to serve.

That’s a wrap! I’d love to hear your thoughts, so please leave a comment below. Your feedback means a lot to me! Together, we’re making kitchen life easier, one Pampered Chef tool at a time.

Happy cooking!

Notes

Tips for Perfect Hand Pies:
Thaw the Puff Pastry Properly: Make sure to thaw the puff pastry sheets according to the package instructions.
This will make them easier to handle and ensure they puff up beautifully in the air fryer.
Don’t Overfill: Be careful not to overfill the pies, as the filling can leak out during cooking
Seal Well: Use a fork to crimp the edges securely to prevent the filling from escaping.
Experiment with Fillings: This recipe works well with various fruit fillings, so feel free to get creative!

Indulge in summer sweetness with our Cherry Vanilla Crisp! 🍒 Easy prep, simple ingredients, and pure delight in every bite. Perfect for everyday bakers! I adapted this recipe from Food Network, using fresh cherries as they’re in season, and our Korintje Cinnamon, which is usually available towards the end of the year, and is delicious.

For this recipe, I used my Cherry & Olive Pitter and Stone Square Baker with Tray:

Cherry & Olive Pitter

Pit Four Fruits at One Time

If you love fresh cherries and olives, but not the mess or the time it takes to remove the pits, this handy tool quickly pits four cherries at once without bruising or wasting any of the fruit. The clear bottom tray catches all the juice and pits, mess-free. And the non-slip feet keep it in place while you zip through. The top locks to make it easy to store in a drawer.

Olive Pitter

We’ve included an extra insert so you can also pit smaller olives.

Stone Square Baker with Tray

Marinate Meats, Roast Veggies, and Serve ‘em Straight From the Oven!

The Stone Square Baker With Tray does double the work without doubling the dishes! You can take both the baker and serving tray straight from the microwave, oven, or freezer to your table. And when you’re not using it as a lid, the Stone Serving Tray can be used to bake cookies, roast veggies, serve food, or store leftovers in the fridge!

About White Satin Partially Glazed Stoneware

The elegant, white satin partially glazed exteriors combined with unglazed interiors make these stones ideal for going from the oven to the table. Made of all-natural clay, each stone develops a natural, nonstick finish over time—the more you cook, the better they get!

Spice up brunch or dinner with this one-pan Huevos Rancheros Casserole! Layers of salsa, black beans, eggs, and cheese. Baked perfection!

I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. You can learn more about their membership here; this is a code I found online, as I believe the normal cost is $35/year, but this code looks like you can still get it for $20/year, which is great! I have found it to be extremely useful, although I have not yet taken advantage of their hotline – yet.

For this recipe, I used my Stone Rectangular Baker With Tray:

The Stone Rectangular Baker With Tray offers the best of both worlds. The Stone Rectangular Baker and Stone Serving Tray combine the amazing cooking surface and heat retention of our unglazed stoneware with the beauty of our fully glazed stoneware. You can take both the baker and serving tray straight from the microwave, oven, or freezer to your table. When you’re not using it as a lid, the Stone Serving Tray can be used to bake cookies, cook veggies, serve food, or store leftovers in the fridge!

Ingredients

  • 17.6-ounce jar salsa Verde
  • 12 corn tortillas
  • 15.5-ounce can black beans drained and rinsed – divided
  • 8-ounces Cheddar and Monterey Jack cheese
  • 6 large eggs
  • Kosher salt
  • Freshly ground black pepper

Garnish

  • Crumbled Cotija cheese
  • Pico de Gallo
  • Avocado sliced thin
  • Fresh cilantro leaves
  • Sour cream

Instructions

Preheat oven to 375°F/190°C.

Spread ¼ cup of the salsa Verde on the bottom of the Stone Rectangular Baker With Tray.

Overlap six of the tortillas on top of the salsa to cover bottom of dish, slightly pushing up the sides.

Pour half of remaining salsa over tortillas. Top with half of the beans and half of the Cheddar and Monterey Jack cheese. Place the remaining six tortillas over the cheese. Drizzle with ¾ cup of the salsa. Top with remaining beans, salsa, and Cheddar and Monterey Jack cheese.

Bake casserole for 15 minutes, until the cheese is melted.

Using the back of a spoon, create 6 small divots in cheese. Crack eggs into divots; season eggs with salt and pepper.

Bake an additional 15 minutes, until egg whites are just barely set, and the yolks are still runny. The whites will continue to set while they rest.

Garnish with cotija, Pico de Gallo, avocado, and cilantro. Let sit until set, about 3 minutes. Dollop with sour cream before serving.

I like to use fresh Pico de Gallo for this recipe, but it also works will with the Pico de Gallo that is more like a salsa.
