Air Fryer Mahi Mahi Tacos With Avocado-Lime Slaw – How to Feed a Loon (Video)

Quick and delicious, these Mahi Mahi tacos are a flavorful meal made even easier in the air fryer! This recipe comes from Kris and Wesley over at How to Feed a Loon.  You can learn more about them here.  This recipe is SO delicious, you can be sure that I’ll be back over to visit!!

A couple of changes I made to their recipe, due to hubby’s dislike of mayonnaise, is that I used Greek yogurt instead of mayo for the slaw, and I did NOT make the chipotle aioli.  I made a crema lima instead, so I will list that below. 

The day I was making this recipe, it was raining, so instead of grilling I decide to try it out in the air fryer.  I used my Tortilla Warmer for the corn tortillas as well!

If your family loves taco night, you need a Tortilla Warmer to easily heat your tortillas and keep them warm through dinner. Just place your tortillas into the warmer and heat them in the microwave. It also warms frozen pancakes, flatbreads, dinner rolls, and pitas.

Ingredients

For the Mahi Mahi Tacos

  • 1 ¼ pounds Mahi Mahi Fillets skinless
  • 4 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons lime juice
  • 3 tablespoons olive oil
  • 12 corn tortillas

For the Avocado-lime slaw

  • ½ cup Greek yogurt
  • 1 avocado
  • ½ cup cilantro
  • 2 garlic cloves
  • 3 tablespoons lime juice
  • 1 jalapeno cored and seeded
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 12 ounces slaw mix

For the Crema Lima

  • 8 ounces sour cream
  • one lime zested and juiced
  • 1 clove garlic pressed
  • ¼ teaspoon salt

For Garnish

  • ½ cup fresh cilantro
  • ½ cup sliced radishes
  • 2 jalapenos thinly sliced
  • Hot sauce

Instructions

For the Mahi Mahi:

Combine spices, lime juice and olive oil, mixing well to combine.  Brush all over Mahi Mahi; marinate 15 minutes. Air fry 12 minutes. Cut into taco size pieces.

For the Avocado-lime slaw

Add Greek yogurt, avocado, cilantro, garlic cloves, lime juice, jalapeno, salt and pepper to food processor.  Pulse to combine.

Pour mixture over slaw, mixing well until incorporated.  Refrigerate or set aside until ready to use. 

For the Crema Lima

Mix sour cream, lime zest and juice, pressed garlic and salt until combined. Refrigerate or set aside until ready to use. 

To Assemble:

Use the Tortilla Warmer to heat tortillas in the microwave, or heat them in a pan on the stove.   

Using two tortillas together (per serving), place Mahi Mahi, avocado-lime slaw, cilantro, radishes, crema lima or any of your favorite toppings.  Serve immediately.

  • 1.25 lb Mahi Mahi filets skinless

You can marinate the mahi mahi up to 30 minutes, if desired. You can use chipotle chili powder for more heat.  We prefer to use Spice Island Chili powder.

Ingredients

For the apple pie filling

  • 5 medium Granny Smith apples, peeled, cored, sliced and diced into chunks
  • 3 tablespoons water
  • 3 tablespoons unsalted butter, brought to room temperature
  • ½ cup granulated sugar
  • 2 teaspoons cinnamon
  • 1.5 tablespoons cornstarch
  • ¼ teaspoon nutmeg

For the apple pie bombs

  • ¾ cup granulated sugar
  • 3 teaspoons apple pie spice
  • 1 8-ounce can of Pillsbury Grands Biscuits NOT flaky layers
  • 1 cup apple pie filling (above)
  • 1 teaspoon cinnamon
  • ½ cup (one stick) unsalted butter, melted

Instructions

For the apple pie filling:

Peel, core and dice apples.

In a saucepan over medium-high heat, combine apples and water, cooking for six minutes, giving a stir every so often.  Add butter, then stir to incorporate. 

Meanwhile, combine sugar, cinnamon, cornstarch and nutmeg, whisking well. Add mixture to the apples and butter, stirring constantly until sauce is thick, approximately two minutes.  Remove from heat, and set aside. 

For the apple pie bombs:

Separate each biscuit into two pieces, then use your rolling pin to roll each into a 4-inch circle.  

Combine 1 cup of the apple pie filling with 1 teaspoon of cinnamon.  Using small scoop, fill center of biscuit with one tablespoon of the filling.  Pinch to seal each biscuit and form into balls.

Use kitchen spritzer to lightly spray air fryer trays with oil, then place eight apple pie bombs onto each tray. Bake at 350°F/175⁰C for 8-9 minutes, or until golden brown.

While they are baking, combine sugar and apple pie spice, and place in one of the coating trays.  Melt butter, then place in another coating tray. 

Once they are finished baking, roll first in the melted butter, then in the sugar mixture to coat. Serve immediately.

Ingredients

  • 4 lb. whole chicken
  • 2 tbsp olive oil
  • ½ lime, juiced
  • 2 tsp sugar
  • 1.5 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp ground oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 garlic cloves, pressed

For the Peruvian Green Sauce

  • ½ bunch cilantro with stems
  • 1 jalapeno, seeds removed
  • 2 garlic cloves, pressed
  • ¼ cup grated Parmesan cheese
  • 1 tbsp white vinegar
  • ¼ tsp salt, or to taste
  • ½ cup Greek yogurt OR mayonnaise

Instructions

To make the Peruvian Green Sauce:

Add all ingredients in Manual Food Processor and pulse until combined. Chill until ready to serve.

To make the Peruvian Chicken:

Pat chicken dry with a paper towel, place on cutting board.

Add remaining ingredients in Manual Food Processor and pulse until combined. Coat chicken with the mixture. 

Tie the legs together with a 12″ (30-cm) piece of cooking twine. Tie the wings against the breasts with a 24″ (61-cm) piece of twine. Insert the Deluxe Air Fryer spit though the legs where they are tied together and through the cavity, centering the bird on the spit. Insert the forks securely into the chicken and tighten the screws.

Turn the wheel to select the ROTISSERIE setting; press the wheel to select. Turn the wheel to adjust the time to 45 minutes. Press the wheel to start.

When the timer is up, use the retrieval tool to remove the spit. Cook until the internal temperature reaches 165°F (74°C), adding more time, if needed.

Air Fryer Buffalo Chicken Egg Rolls – Delish (Video)

As soon as I see a recipe for egg rolls, I’m in!  Not sure why, but I love them, and I really love finding new recipes for my Deluxe Air Fryer.  In case you missed it, I recently did a recipe for Peach Cobbler egg rolls, which you can find here. This recipe from Delish really hit the spot.  We actually had them for dinner instead of an appetizer, and that was okay by everyone!

Deluxe Air Fryer

Let’s jump right in!

Ingredients

4-ounces (112 grams) cream cheese, room temperature 

2 cups (227 grams) shredded mozzarella cheese  

3 cups (400 grams) shredded chicken

1/4 cup (60 mL) hot sauce 

4 green onions, thinly sliced 

14 egg roll wrappers  

Serve with

  • Ranch Dressing
  • Blue Cheese
  • More sliced green onions

Instructions

Place chicken in Deluxe Multi Cooker with 1 cup water, set to CUSTOM, 10 minutes. Press button to start. Once timer goes off, release pressure and shred chicken.

In medium bowl, combine cream cheese, mozzarella cheese, chicken, hot sauce and green onions, mixing well.

Add @ three tablespoons of the buffalo chicken mixture to the egg roll.  Brush edges of wrapper with water, then fold opposite corners to the middle, fold top side over, then roll.  (See photos and my video). 

Once all are rolled, brush egg rolls all over with melted butter, and place on air fryer racks. Air Fry at 390⁰ F/200⁰ C for 15 minutes, switching trays at the halfway mark. 

Alternatively, you can deep fry egg rolls in heated oil for approximately one minute per side.

Serve with ranch dressing mixed with blue cheese on the side, and more green onions for garnish.

  • Once all are rolled, brush egg rolls all over with melted butter, and place on air fryer racks.
    Air Fry at 390⁰ F/200⁰ C for 15minutes, switching trays at the halfway mark. 
    Alternatively, you can deep fry egg rolls in heated oil for approximately one minute per side.
  • Serve with ranch dressing mixed with blue cheese on the side, and more green onions for garnish.
