I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. You can learn more about their membership here; this is a code I found online, as I believe the normal cost is $35/year, but this code looks like you can still get it for $20/year, which is great! I have found it to be extremely useful, although I have not yet taken advantage of their hotline – yet.

One ingredient I used that they didn’t was mascarpone cheese, which is like cream cheese, except that it tastes a bit sweeter and buttery.  Yummy!

Ingredients

For the Pumpkin Roll

  • 3 large eggs
  • 1 cup granulated sugar
  • ¾ cup all-purpose flour
  • 2/3 cup pumpkin puree
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ teaspoon pumpkin pie spice
  • Powdered sugar, for dusting

For the Filling

  • 12-ounces mascarpone cheese can substitute cream cheese
  • 1 ¼ cup powdered sugar plus more for dusting
  • 1 tablespoon butter melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt

Instructions

Preheat oven to 350°F/175⁰C.

Line Stone Bar Pan or jelly roll pan with parchment paper.  Add all ingredients for pumpkin roll in large bowl, whisking until combined. Pour into parchment-lined pan, spreading to fill completely. Bake 15 minutes, or until cake tested inserted into the middle of the cake comes out clean.

Layout a large kitchen towel on the counter; dust with powdered sugar.  Lift pumpkin cake from stone, and immediately flip onto towel. Gently remove parchment paper and dust with more powdered sugar (optional). Starting at the short end, with the towel wrapped around it, tightly (but GENTLY) roll cake into a log. Allow to cool for approximately 45 minutes – 1 hour.

To Make the Filling

Add all filling ingredients to stand mixer (or bowl with handheld mixer) and beat on medium-high until smooth.

Put Together

Gently unroll pumpkin cake – it’s fine if it is still slightly curled.

Spread filling all over the cake, then re-roll and dust with more powdered sugar.

Slice and Serve.

Filled with tender pork and delicious vegetables, these Filipino Spring rolls made in the Air Fryer come out incredibly crispy and full of flavor! You won’t be able to stop at just one, and since you can make these at home, you won’t have to!

What is lumpia? Wikipedia explains:

Lumpia are various types of spring rolls commonly found in the Philippines[1] and Indonesia.[2] Lumpia are made of thin paper-like or crepe-like pastry skin called “lumpia wrapper” enveloping savory or sweet fillings.[3] It is often served as an appetizer or snack, and might be served deep fried or fresh (unfried). Lumpia are Filipino and Indonesian adaptations of the Fujianese and Teochew popiah, which was created during the 17th century in the former Spanish colonial era.[4][5]

In the Philippines, lumpia is one of the most common dishes served in gatherings and celebrations.[6] In Indonesia lumpia has become a favorite snack,[7] and is known as a street hawker food in the country.[8]

In the Netherlands and Belgium, it is spelled loempia, the old Indonesian spelling, which has also become the generic name for “spring roll” in Dutch.[7] A variant is the Vietnamese lumpia, wrapped in a thinner pastry, though still close in size to a spring roll, in which the wrapping closes the ends off completely, which is typical for lumpia.

Once I tasted them, I knew I wanted to learn how to make them. I made them with several different recipes, but was not a fan of one in particular. This recipe is something I’ve come up with through trial and error, and I hope that you’ll let me know what you think of my version.

For this recipe, , rather than deep frying, I used our Deluxe Air Fryer, along with the 12″ (30-cm) Signature Nonstick Skillet:

Let’s jump right in!!

Ingredients

  • One 16-ounce package of lumpia or Egg Roll wrappers
  • 3 cloves garlic
  • 1/3 cup diced carrots
  • 1 teaspoon freshly grated ginger
  • 1 medium onion, diced
  • 1/3 cup green onions, finely diced
  • ½ cup thinly sliced green cabbage
  • 1 tablespoon olive oil
  • 1-pound ground pork
  • 12-ounce can water chestnuts, drained, and chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 ½ teaspoons soy sauce
  • 2 tablespoons chopped cilantro
  • 2 tablespoons water to seal wrapper

Instructions

Dice garlic and carrots; peel and grate ginger. Dice onion and green onions.

Slice Green Cabbage.

Heat oil in skillet over medium-high heat until shimmering.  Add onions, garlic, ginger, carrots and cabbage.  Cook 4-5 minutes, until onion is translucent.

Add in the ground pork, and cook another 6-8 minutes, or until pork is cooked through. Add water chestnuts, salt, pepper, soy sauce, green onion, and cilantro.  Cook for 1-2 minutes, then remove from heat, allow to cool.

Make Lumpia:

Take one lumpia or egg roll wrapper and place in diamond shape.  Brush edges of wrapper with water. Place two tablespoons of pork mixture onto the bottom of the wrapper, being sure to leave approximately 1.5 inches of space at the bottom of the wrapper.

Fold the bottom portion of the wrapper over the pork, then roll once. Press down both sides close to pork, then fold the sides in like an envelope.  Roll to the top, set aside. Continue to do this until all lumpia are prepared. 

Spray air fryer trays lightly with oil, then place lumpia on trays.  Air Fry 14-16 minutes, until wrappers are crispy, switching trays halfway through.

Serve with sweet chili sauce, if desired.

Ingredients

Make Lumpia

  • Take one lumpia or egg roll wrapper and place in diamond shape.  Use Medium Scoop to place two tablespoons of pork mixture onto the bottom of the wrapper, being sure to leave approximately 1.5 inches of space at the bottom of the wrapper.
    1 16-ounce package of lumpia or Egg Roll wrappers, 2 tbsp water
  • Brush edges of wrapper with water. Fold bottom portion over pork, then roll once. Press down both sides close to pork, then fold the sides in like an envelope.  Roll to the top. Continue to do this until all lumpia are prepared. 
  • Spray air fryer trays lightly with oil, then place lumpia on trays.  Air Fry 14-16 minutes, until wrappers are crispy, switching trays halfway through.
  • Serve with sweet chili sauce, if desired. 

Notes

You can freeze any leftovers on a freezer-safe container up to three months.  Reheat in Air Fryer for 5-10 minutes until heated through.

Let’s jump right in!

Ingredients:

  • 1 tbsp extra virgin olive oil
  • 6 tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy whipping cream
  • 4 cups sharp cheddar cheese
  • 2 cups Gruyere cheese shredded
  • salt and pepper to taste

For the Topping

  • 1 1/2 cups panko crumbs
  • 4 tablespoons butter melted
  • ½ cup Parmesan cheese shredded
  • ¼ teaspoon smoked paprika

Instructions

Shred Gruyere, cheddar, and Parmesan cheese; set aside.

Cook macaroni according to package directions, minus one minute under al dente.  Drain when finished, adding olive oil to the pasta to prevent sticking. Set aside.

Preheat oven to 350°F/175⁰C.

Melt butter in large skillet over medium heat. Add flour, whisking for one full minute until beginning to bubble, and slightly golden in color.

Slowly pour in the milk and heavy cream, whisking to fully incorporate.  Once mixture is bubbling and thick, continue to whisk and cook an additional 2 minutes, adding salt and pepper to taste. 

Add four cups of the Gruyere and cheddar cheese to the mixture one cup at a time, whisking between each addition to combine.

Add the pasta to the cheese sauce, gently stirring until pasta is fully incorporated with the cheese.

Transfer half of the macaroni and cheese to a 9 x 13 baker, followed by the remaining shredded Gruyere and cheddar cheeses. Top with the remainder of the pasta.

Make the Topping:

Combine Panko crumbs, smoked paprika, and melted butter. Pour over macaroni and cheese.

Bake for 30 minutes, or until the topping is golden brown, and the macaroni and cheese is bubbling.

Serve immediately.

Baked Mac and Cheese – Mom on Timeout (Video)

Rich and oh-so-creamy, this Baked Mac and Cheese is comfort food at its best!  Perfect as a side dish or weeknight dinner,this is one recipe you’ll want to make on repeat!

Ingredients
  

  • 16 oz elbow macaroni or other short pasta of your choice
  • 1 tbsp extra virgin olive oil
  • 6 tbsp unsalted butter
  • cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy whipping cream
  • 4 cups Sharp cheddar cheese shredded
  • 2 cups Gruyere Cheese shredded
  • kosher salt and pepper, to taste

For the Topping

  • 1.5 cups panko bread crumbs
  • 4 tbsp butter melted
  • ½ cup Parmesan cheese grated
  • ¼ tsp smoked paprika

Instructions
 

  • Shred Gruyere, cheddar, and Parmesan cheese; set aside.
    4 cups Sharp cheddar cheese, 2 cups Gruyere Cheese, 1/2 cup Parmesan cheese
  • Cook macaroni according to package directions, minus one minute under al dente.  Drain when finished, adding olive oil to the pasta to prevent sticking. Set aside.
    16 oz elbow macaroni, 1 tbsp extra virgin olive oil
  • Preheat oven to 350°F/175⁰C.
  • Melt butter in large skillet over medium heat. Add flour, whisking for one full minute until beginning to bubble, and slightly golden in color.
    6 tbsp unsalted butter, 1/3 cup all-purpose flour
  • Slowly pour in the milk and heavy cream, whisking to fully incorporate.  Once mixture is bubbling and thick, continue to whisk and cook an additional 2 minutes, adding salt and pepper to taste. 
    3 cups whole milk, 1 cup heavy whipping cream, kosher salt and pepper, to taste
  • Add four cups of the Gruyere and cheddar cheese to the mixture one cup at a time, whisking between each addition to combine.
    4 cups Sharp cheddar cheese, 2 cups Gruyere Cheese
  • Add the pasta to the cheese sauce, gently stirring until pasta is fully incorporated with the cheese.
    16 oz elbow macaroni
  • Transfer half of the macaroni and cheese to a 9 x 13 baker, followed by the remaining shredded Gruyere and cheddar cheeses. Top with the remainder of the pasta.

Make the Topping

  • Combine Panko crumbs, smoked paprika, and melted butter. Pour over macaroni and cheese.
    1.5 cups panko bread crumbs, 4 tbsp butter, 1/4 tsp smoked paprika, 1/2 cup Parmesan cheese
  • Bake for 30 minutes, or until the topping is golden brown, and the macaroni and cheese is bubbling.
  • Serve immediately.

Notes

I find that this recipe turns out the best when using freshly grated cheese, as the preservatives in pre-shredded cheese doesn’t allow for the best melting. However, you can certainly use what you have on hand.
Store cooled leftover mac and cheese in an airtight container in the refrigerator up to three days.

Let’s jump right in!

Ingredients

  • 4 apples peeled cored and diced
  • 2 tablespoons all-purpose flour
  • ½ cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 2 sheets puff pastry thawed
  • 2 tablespoons butter melted for topping
  • 1 tablespoon turbinado sugar for topping

Instructions

Peel, core, and dice apples, and place in mixing bowl.

Add in the flour, sugar and cinnamon, tossing gently to coat apples.

Cut thawed puff pastry sheets into six squares per sheet.

Scoop approximately 3 tablespoons of the apple mixture onto each square; fold over into the shape of a triangle.  Press sides to close, then use a fork to crimp the edges.

Brush each mini pie with the melted butter, then sprinkle some turbinado sugar on top.

Spritz the Air Fryer trays with oil, then place three pies onto each of the trays. Air Fry for 8-10 minutes, or until golden brown, switching trays at the halfway mark.

Serve immediately.

These can be frozen prior to cooking; to freeze, place on a baking sheet for 30 minutes. Once frozen, put them in a zip top bags, and freeze up to two months, then bake them from frozen.

This Chicken Tikka Masala is filled with tender chicken bathed in a deliciously aromatic sauce! This recipe comes from Café Delites. If you’ve never tried Indian cuisine, I would HIGHLY recommend giving this recipe a try, along with the amazing Buttery Garlic Naan Bread that goes along with this dish.

Ingredients:

For the Marinade

  • 28-ounces boneless chicken thighs cut into bite size pieces
  • 1 cup Greek yogurt
  • 1.5 tablespoons diced garlic
  • 1 tablespoon ground ginger
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon Kashmiri Chili
  • 1 teaspoon salt

For the Sauce:

  • 2 tablespoons canola oil
  • 2 tablespoons butter
  • 1 large onion finely diced
  • 1.5 tablespoons diced garlic
  • 1 tablespoon ginger freshly grated
  • 1.5 teaspoons garam masala
  • 1.5 teaspoons ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 14-ounces tomato puree
  • 1 teaspoon Kashmiri Chili
  • 1 teaspoon ground red chili powder
  • 1 teaspoon salt
  • 1 ¼ cups heavy cream
  • 1 teaspoon brown sugar
  • ¼ cup water only if needed to thin sauce
  • 4 tablespoons cilantro freshly chopped for garnish

Instructions

Combine chicken thighs with marinade ingredients until chicken is thoroughly coated.  Cover and refrigerate, marinating 10 minutes – overnight, if possible.

Prep vegetables – chop onion, dice garlic, grate ginger.

To cook – heat oil in large skillet over medium-high heat.  Add chicken to pan, cooking 3 minutes per side until nicely browned.  Remove chicken to platter and set aside.

Add butter to the pan and, when melted, add the onions.  Cook until translucent, about 3-4 minutes, then add in the garlic and ginger, cooking an additional minute until fragrant. 

Add the garam masala, cumin, turmeric, and coriander to the skillet, stirring to incorporate.

Pour in the tomato puree, along with add in the chili powders and salt.  Simmer 10-15 minutes.

Add the heavy cream and sugar to the sauce, mixing to incorporate.

Combine the chicken and any accumulated juices with the sauce in the pan, and simmer an additional 8-10 minutes, or until the chicken reaches an internal temperature of 165°F/74°C. If the sauce is too thick, add some of the reserved water to thin it out.  Serve immediately with Jasmine rice and naan bread.

Soft and delicious, this Buttery Garlic Naan bread is dripping with butter, garlic, and just a touch of cilantro. Amazing with curries, or even by itself!  This recipe comes from Karina over at Crave it All.

Ingredients:

  • 1/4 cup water warmed to 110°F/43⁰C
  • 3/4 cup milk warmed to 110°F/43⁰C
  • 2 teaspoons granulated sugar
  • 1 1/2 teaspoons active dry yeast – can substitute instant yeast
  • 3/4 cup plain Greek yogurt, or natural plain yogurt
  • 1/4 cup vegetable oil, plus 2 tablespoons extra for cooking
  • 4 cups plain flour – plus more for dusting
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Garlic Butter

  • 1/4 cup butter
  • 2 cloves garlic
  • 1 teaspoon fresh chopped cilantro – can substitute flat parsley

Instructions:

For the Naan

Warm water and milk to 110°F/43⁰C. Sprinkle yeast and sugar on top of the liquid and allow to sit for 5-10 minutes or until the mixture begins to form bubbles.

In bowl of Deluxe Stand Mixer, combine mixture with the yogurt, oil, flour, baking powder and salt. Mix until just the dough comes together.

Set Deluxe Stand Mixer to KNEAD for three minutes, up to five minutes until dough has formed a ball. Alternatively, you can knead by hand.
