Buttery brie, tangy-sweet cranberry sauce and crunchy pecans in a bite size app?  Yes, please!  These Cranberry Brie Bites are perfect for any party. 

I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. I have found it to be extremely useful, although I have not yet taken advantage of their hotline – yet.

I used my recipe for Apple Cider Cranberry Sauce, and it was delicious!!

For this recipe, I used my Brownie Bite Pan :

Let’s jump right in!

Ingredients

  • 1 (8-oz) tube of refrigerated Crescent Roll Dough
  • Canola oil, to brush or spray pan
  • Flour, for surface to roll out dough
  • ½ cup whole berry cranberry sauce (homemade or canned)
  • ¼ cup chopped pecans
  • 6 sprigs rosemary, cut into 1” pieces

Instructions

Preheat your oven to 375°F/190⁰C (350°F/175⁰C if using the Brownie Bite Pan or any darker pan). Cut brie into small pieces, chop pecans, and cut rosemary into 1-inch pieces.

Brush or spray pan lightly with oil.

Roll out dough on a lightly floured surface, and pinch the seams together, use Pizza cutter to cut into 24 squares.  Place squares into Brownie Bite Pan or other small muffin tin. 

Place one piece of brie onto each square of dough, top with a teaspoon of cranberry sauce, chopped pecans and one small sprig of rosemary.

Bake 15 minutes, or until crescent dough is golden brown. Remove from the oven, serve immediately.

  • 8 oz refrigerated crescent roll dough
  • 8 oz wheel of brie
  • ½ cup whole berry cranberry sauce (homemade or canned)
  • canola oil, to brush or spray pan
  • flour, for surface to roll out dough
  • ¼ cup chopped pecans
  • 6 sprigs fresh rosemary cut into 1" pieces

Instructions
 

  • Preheat your oven to 375°F/190⁰C OR 350°F/175⁰C if using the Brownie Bite Pan or any darker pan.
  • Cut brie into small pieces, chop pecans, and cut rosemary into 1-inch pieces.

Sweet Honeycrisp apples, Bosc pears and dried cranberries with a crunchy oat topping is full of fall flavors and will be a delicious addition to your holiday dessert table!

I found this wonderful recipe from The Food Network, courtesy of Ina Garten – who is one of my all-time favorite cooks!

For this recipe, I used the new Pampered Chef Stone Round Baker, the Apple Wedger to wedge the apples AND pears and Cinnamon Plus Spice Blend:

Ingredients

  • 2 pounds ripe Bosc pears (4 pears)
  • 2 pounds firm Honeycrisp apples (6 apples)
  • 3/4 cup dried cranberries
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lemon zest
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 ½ teaspoons Cinnamon Plus Spice Blend

For the topping:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, lightly packed
  • ½ teaspoon kosher salt
  • 1 cup old-fashioned oats
  • 1 cup cold unsalted butter cubed (2 sticks)

Instructions

Preheat oven to 350°F/175⁰C.

Peel and core the pears and apples and cut them into large chunks, then place in large bowl.

Zest lemon and orange, then juice both to make 2 tablespoons juice from each. To the apples and pears, add the cranberries, zests, juices, granulated sugar, flour, and Cinnamon Plus Spice Blend, tossing gently to coat. Pour into Stone Round Baker and set aside.

For the topping:

Combine the flour, granulated and brown sugars, salt, oats, and butter in the Deluxe Stand Mixer with the paddle attachment. Mix on low speed for 1-2 minutes, or until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.

Place the Stone Round Baker on a parchment-lined sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm with vanilla ice cream, if desired.

One ingredient I used that they didn’t was mascarpone cheese, which is like cream cheese, except that it tastes a bit sweeter and buttery.  Yummy!

Ingredients

For the Pumpkin Roll

  • 3 large eggs
  • 1 cup granulated sugar
  • ¾ cup all-purpose flour
  • 2/3 cup pumpkin puree
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ teaspoon pumpkin pie spice
  • Powdered sugar, for dusting

For the Filling

  • 12-ounces mascarpone cheese can substitute cream cheese
  • 1 ¼ cup powdered sugar plus more for dusting
  • 1 tablespoon butter melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt

Instructions

Preheat oven to 350°F/175⁰C.

Line Stone Bar Pan or jelly roll pan with parchment paper.  Add all ingredients for pumpkin roll in large bowl, whisking until combined. Pour into parchment-lined pan, spreading to fill completely. Bake 15 minutes, or until cake tested inserted into the middle of the cake comes out clean.

Layout a large kitchen towel on the counter; dust with powdered sugar.  Lift pumpkin cake from stone, and immediately flip onto towel. Gently remove parchment paper and dust with more powdered sugar (optional). Starting at the short end, with the towel wrapped around it, tightly (but GENTLY) roll cake into a log. Allow to cool for approximately 45 minutes – 1 hour.

To Make the Filling

Add all filling ingredients to stand mixer (or bowl with handheld mixer) and beat on medium-high until smooth.

Put Together

Gently unroll pumpkin cake – it’s fine if it is still slightly curled.

Spread filling all over the cake, then re-roll and dust with more powdered sugar.

Slice and Serve.

Buttery, flaky crust filled with sweet apples tossed in cinnamon sugar, these Air Fryer Apple Pies are incredibly easy to make and taste just like the ones from McDonald’s, only better! Ingredients

  • 4 apples peeled cored and diced
  • 2 tablespoons all-purpose flour
  • ½ cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 2 sheets puff pastry thawed
  • 2 tablespoons butter melted for topping
  • 1 tablespoon turbinado sugar for topping

Instructions

Peel, core, and dice apples, and place in mixing bowl.

Add in the flour, sugar and cinnamon, tossing gently to coat apples.

Cut thawed puff pastry sheets into six squares per sheet.

Scoop approximately 3 tablespoons of the apple mixture onto each square; fold over into the shape of a triangle.  Press sides to close, then use a fork to crimp the edges.

Brush each mini pie with the melted butter, then sprinkle some turbinado sugar on top.

Spritz the Air Fryer trays with oil, then place three pies onto each of the trays. Air Fry for 8-10 minutes, or until golden brown, switching trays at the halfway mark.

Serve immediately.

Ingredients

  • Brush each mini pie with the melted butter, then sprinkle some turbinado sugar on top.

  • Spritz the Air Fryer trays with oil, then place three pies onto each of the trays. Air Fry for 8-10minutes, or until golden brown, switching trays at the halfway mark
  • Serve immediately.

Notes

Cooking times can vary, depending on your air fryer.
Store in an airtight container for up to two days, or in an airtight container in the refrigerator for up to five days.
These can be frozen prior to cooking; to freeze, place on a baking sheet for 30 minutes. Once frozen, put them in a zip top bags, and freeze up to two months, then bake them from frozen.

Juicy sweet peaches topped with a sweet biscuit topping, this Peach Cobbler recipe from Allrecipes is the perfect way to end any meal!

For this recipe, I used our  Stone-Fruit Wedger and 2- Qt. Enameled Cast Iron Baker:

Ingredients

For the Peaches

  • 8 fresh peaches
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch

For the Topping

  • 1 cup all-purpose flour
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • ¼ cup milk

For the Cinnamon Sugar

  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon     

Instructions

For the Peaches

Preheat the oven to 425⁰F/220⁰C.

Peel peaches and use the Stone-Fruit Wedger to wedge into 12 slices.

Combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch in a large bowl; toss to coat evenly and pour into a 2-quart baking dish. Bake in preheated oven for 10 minutes.

For the Topping

Combine flour, white and brown sugars, baking powder, salt, and butter, until the mixture is crumbly. Stir in milk just until combined.

Cobbler

Scoop batter onto the warmed peaches.

Make the cinnamon sugar: Combine white sugar and cinnamon, sprinkling them over cobbler.

Bake for an additional 30 minutes, or until golden on top.  Serve immediately with vanilla ice cream.

Ingredients

  • 3 large peaches
  • 4 large egg yolks
  • Juice of one lemon
  • ½ cup granulated sugar
  • ½ cup unsalted butter
  • 1/8 teaspoon salt

Instructions

Wash peaches, slice in half and remove stone; cut in half once more.

Separate egg yolks from egg whites (save egg whites for another use). 

Add all ingredients, starting with eggs first, peaches last, to the Deluxe Cooking Blender.

Replace and lock the lid. Turn the wheel to select the SAUCE setting; press the wheel to start. When prompted to “ADD”, press cancel. 

Carefully remove the lid, and transfer curd to a heat safe container.  Depending on your container, you may want to cover the curd with plastic wrap to prevent skin from forming.  Cool completely prior to using it to fill tartlets, top cakes or ice cream, etc.
