Awhile ago I made some garlic confit and was thinking how this could be made even better with the addition of some tomatoes. The result was delicious. Roasting the tomatoes and garlic at a low temperature gave a depth of flavor that was a combination of sweet and savory.

What can I use the confit for?

Tomato-Garlic Confit is a versatile condiment that can enhance various dishes. Here are some ideas:

  • Pasta Sauce: Mix the confit into cooked pasta for a rich and flavorful sauce.
  • Bruschetta Topping: Spread it on toasted bread slices and top with fresh basil for a delicious bruschetta.
  • Pizza Topping: Use it as a pizza sauce alternative for a burst of flavor on your homemade pizzas.
  • Salad Dressing: Blend it with olive oil, vinegar, and herbs to create a tasty dressing for salads.
  • Sandwich Spread: Add it to sandwiches or wraps for a gourmet touch.
  • Egg Dish Enhancer: Spoon it over scrambled eggs, omelets, or frittatas for added flavor.

Today, I’m showing you how to pair it with whipped ricotta, to make an easy yet amazing appetizer that you can bring to any holiday function or serve at your gatherings with pride.  This can be made a couple of days ahead of time as well.

For this recipe, I used my Mini Deep Covered Baker and Deluxe Stand Mixer:

Ingredients

For the Tomato-Garlic Confit

  • 1-quart cherry tomatoes
  • 2 bulbs of garlic peeled
  • 1 ½ cups Extra-Virgin Olive Oil enough to cover tomatoes at least halfway
  • ½ teaspoon red pepper flakes or to taste
  • Fresh thyme can also use basil or rosemary if you like

For the Whipped Ricotta

  • 15-ounces Ricotta cheese
  • 1 small lemon juiced and zested

To Serve

  • Crostini
  • Crackers

Instructions

For the Tomato-Garlic Confit

Preheat oven to 325°F/165⁰C.

Place tomatoes and garlic in Mini Deep Covered Baker. Cover at least halfway with olive oil, add in the red pepper flakes and thyme.

Bake for 45-60 minutes, or until most tomatoes have burst, and garlic is soft and tan in color.

For the Whipped Ricotta

Add ricotta to the Deluxe Stand Mixer and set to WHIP for 2 minutes. Add in lemon zest and juice, then set to WHIP for 2 minutes more.

Make the Appetizer

Transfer the ricotta to a serving bowl. Drizzle some of the oil from the confit onto the ricotta, then top with some of the tomatoes and garlic. Serve with crostini or crackers, and more confit on the side.

We wanted to try something other than my usual Brown Sugar Honey Ham that I usually make. The taste was a delightful fusion of sweet and spicy flavors. The honey brought out a rich sweetness while the jalapeños added subtle heat, creating a perfectly balanced and irresistibly delicious combination. It was perfect!

    Ingredients

    For the Ham

    • 1 bone-in ham (8-10 pounds)
    • Water for the roasting pan

    For the Glaze

    • ½ cup honey
    • ¼ cup apricot jam
    • 2 tablespoons Dijon mustard
    • 1 tablespoon apple cider vinegar
    • 4 cloves garlic smashed
    • 2 jalapeños seeded and diced
    • 1 orange zested and juiced
    • Freshly ground black pepper

    Instructions

    Preheat your oven to 350°F/175⁰C.

    For the Ham:

    Place ham cut-side down into your Enameled Cast Iron Pan or roasting pan fitted with rack. Add water to the pan approximately 1/2 -inch deep. Cover loosely with foil and bake 45 minutes.

    For the Glaze:

    In a small saucepan, combine all glaze ingredients over medium heat. Bring to a simmer, stirring often, for 5 minutes, or until glaze has reduced and thickened slightly.

    Remove foil from ham after 45 minutes and baste with the pan drippings. Pour or brush the glaze over the ham. 

    Continue to bake ham for 60 minutes, basting every 15 minutes with glaze/drippings until heated through and glaze is caramelized.

    For the Potatoes

    • 2 lbs. russet potatoes wedged
    • 2 tbsp butter
    • 1 tbsp olive oil
    • ¼ cup crumbled cotija cheese
    • 1 tsp Chimichurri Seasoning Mix

    For the Chimichurri Sauce

    • 3 tbsp water
    • 3 tbsp olive oil
    • 1   lime, juiced
    • ½ cup mayonnaise
    • 1   avocado peeled and pitted
    • 2 tbsp Chimichurri Seasoning Mix
    • Salt and pepper

    For the Red Pepper Sauce

    • 1 tbsp hot sauce
    • ¼ cup mayonnaise
    • 1 jar roasted red peppers, drained
    • 1   garlic clove

     Toppings

    • Cilantro
    • Crumbled cotija cheese

    Instructions

    Wedge the potatoes with the Veggie Wedger.

    Toss the potatoes, butter, oil, cheese, and seasoning in a large bowl. Place the potatoes in a single layer on both trays of the Deluxe Air Fryer and place on the top and middle racks.

    Cook on AIR FRY for 22–24 minutes, rotating the trays and flipping the potatoes halfway through.

    For the Chimichurri Sauce:

    Add the ingredients in the order listed to the Deluxe Cooking Blender. Set to CUSTOM BLEND at speed 5 for 45 seconds. Remove and set aside.

    For the Red Pepper Sauce:

    Add the ingredients in the order listed to the Deluxe Cooking Blender. Set to CUSTOM BLEND at speed 5 for 30 seconds. Remove and set aside.

    Top with cilantro and cheese, if you’d like, and serve with the sauce of your choice.

    Air Fryer Chimichurri Potatoes (video)

    For the Potatoes

    • 2 lbs. russet potatoes wedged
    • 2 tbsp butter
    • 1 tbsp olive oil
    • ¼ cup crumbled cotija cheese
    • 1 tsp Chimichurri Seasoning Mix

    For the Chimichurri Sauce

    • 3 tbsp water
    • 3 tbsp olive oil
    • 1 lime juiced
    • ½ cup mayonnaise
    • 1 avocado peeled and pitted
    • 2 tbsp Chimichurri Seasoning Mix
    • Salt and pepper

    For the Red Pepper Sauce

    • 1 tbsp hot sauce
    • ¼ cup mayonnaise
    • 1 jar roasted red peppers drained
    • 1 garlic clove
    • Toppings
    • Cilantro
    • Crumbled cotija cheese

    Instructions

    • Toss the potatoes, butter, oil, cheese, and seasoning in a large bowl. Place the potatoes in a single layer on both trays of the Deluxe Air Fryer and place on the top and middle racks.
    • Cook on AIR FRY for 22–24 minutes, rotating the trays and flipping the potatoes halfway through.

    For the Chimichurri Sauce:

    • Add the ingredients in the order listed to the Deluxe Cooking Blender. Set to CUSTOM BLEND at speed 5 for 45 seconds. Remove and set aside.

    For the Red Pepper Sauce:

    • Add the ingredients in the order listed to the Deluxe Cooking Blender. Set to CUSTOM BLEND at speed 5 for 30 seconds. Remove and set aside.
    • Top with cilantro and cheese, if you’d like, and serve with the sauce of your choice.

    Notes

    If you’re short on time, skip steps 1 and 2, and use frozen potato wedges or french fries and prepare according to package directions.
    You can swap the Greek yogurt for mayonnaise for in the sauces for a lighter version.

    Freshly baked potato rolls are easier than you think! Soft, fluffy, and oh-so-delicious. This recipe is my adaptation from two different recipes, one from Allrecipes and the other from Delish.

    For this recipe, I used my Deluxe Stand Mixer and Stone Rectangular Baker With Tray:

    Ingredients

    For the Rolls

    • ¼ cup water approximately 110°F/43⁰C
    • 1 teaspoon sugar
    • 2 ¼ teaspoons active dry yeast
    • ¼ cup sugar
    • 1 large russet potato cooked and mashed @1 cup
    • 1 cup milk
    • 6 tablespoons butter melted
    • 1 egg
    • 1 ½ teaspoons salt
    • 4 ½ – 5 cups all-purpose flour

    For the Topping

    • 2 tablespoons butter melted

    Instructions

    Peel, dice, boil, and mash potato; set aside. *

    In bowl of Deluxe Stand Mixer fitted with dough hook attachment, combine water and 1 teaspoon sugar. Sprinkle yeast on top and let sit until foamy, about 5 minutes.

    Add to bowl the sugar, mashed potato, milk, butter, egg, and salt.  Mix to combine.  Add in the flour.

    Set Deluxe Stand Mixer to Knead for five minutes**, or until the dough comes together and pulls away from the side of the bowl.

    Transfer dough to a clean bowl. Cover and let rise in a warm area for 1 hour, until doubled in size.

    Uncover dough and punch it down to release air then turn out onto a lightly floured board.  Divide dough into 16-20 even pieces, then roll each piece into a smooth ball.

    Place them into the Stone Rectangular Baker With Tray***, cover and let rise for another 30 minutes. 

    Preheat oven to 400°F/200⁰C.

    Remove cover, then bake rolls until golden, about 25 minutes. 

    Brush with melted butter and serve warm.

    Transform your leftover corned beef & cabbage into delicious egg rolls – an easy recipe for a tasty twist! Whether you’ve made Slower Cooker Corned Beef and Cabbage, or Sous Vide Corned Beef, you just might have some leftovers.  Maybe you’ll turn them into Irish Nachos.

    I love egg roll recipes, as you can tell here, here and here, and I thought, why not turn corned beef and cabbage into a fun appetizer?  It’s delicious, and a great way to use up any leftover corned beef.  In addition, these freeze beautifully, so that you can pull one or two out at a time for a quick lunch or healthy snack.

    • 2 carrots julienned or diced
    • 2 cloves garlic diced
    • 1 onion diced
    • ½ head small cabbage shredded
    • 1 tablespoon butter
    • ½ teaspoon kosher salt or to taste
    • ¼ teaspoon black pepper or to taste
    • 16-20 ounces leftover corned beef
    • 14 egg roll wrappers  
    • Water to brush wrappers

    Instructions

    Prepare your vegetables.

    Heat butter in skillet over medium-high heat until shimmering.  Add onions, carrots, and cabbage.  Cook 4-5 minutes, until onion is translucent. Add garlic, cooking until fragrant, about one minute. Remove from heat, then stir in corned beef.

    Make Egg Rolls:

    Take one egg roll wrapper and place in diamond shape.  Brush edges of wrapper with water. Place 2-3 tablespoons of corned beef mixture onto the bottom of the wrapper, being sure to leave approximately 1.5 inches of space at the bottom of the wrapper.

    Fold the bottom portion of the wrapper over the mixture, then roll once. Press down both sides close to corned beef, then fold the sides in like an envelope.  Roll to the top, set aside. Continue to do this until all egg rolls are prepared. 

    Spray egg rolls lightly with oil, then place on air fryer trays.  Air Fry 14-16 minutes, until wrappers are crispy, switching trays halfway through.

    Serve with spicy mustard on the side.
