Whip up a delicious Strawberry Burrata Salad in minutes! Sweet strawberries, creamy burrata, peppery arugula, drizzled with balsamic honey dressing – delicious! This is a Food and Wine recipe, and it did not disappoint, also gets bonus points for begin easy to throw together for lunch or even a light dinner.  I used my Quick Slice for the strawberries, and served it up with the Whisk Tongs in my Wood Salad Bowl:

Ingredients

  • 1/3 cup extra-virgin olive oil
  • 1/3 cup balsamic vinegar
  • 1 tablespoon honey
  • 1-pound strawberries
  • ¼ cup pine nuts
  • 5 ounces baby arugula
  • ¼ cup small basil leaves
  • 8-ounce ball burrata, room temperature
  • Kosher salt to taste
  • Freshly cracked black pepper to taste
  • Crostini for serving

Instructions

Remove tops from strawberries, then slice in half.

Whisk together olive oil, balsamic vinegar, and honey in a medium bowl until emulsified. Add strawberries to bowl, toss to coat with dressing, and let marinate 15 minutes.

Toast Pine Nuts

Toast the pine nuts in a dry small skillet over medium-low heat. Stir frequently, until golden brown and fragrant, about 3-5 minutes. Remove from heat and allow to cool.

Toss arugula and basil together and place in salad bowl. Place burrata in center, and gently break open at top, to expose cream and mozzarella inside. Spoon macerated strawberries, along with dressing, over the arugula-basil. Scatter pine nuts on top, season with salt and pepper, and serve with crostini.

Naturally sweet and tangy, this silky raspberry vinaigrette recipe levels up any salad, and only takes minutes to make! I was searching for a recipe that tasted like a dressing I had at one of our local restaurants, and this one from Lisa over at Downshiftology topped the list!

The combination of this dressing with my Honey-Grilled Peach, Prosciutto & Burrata Salad is like nothing else, it’s absolutely superb! You can learn more about Lisa here. What I seem to be finding more and more is that people who create blogs are in some kind of flux. They may be leaving a job, suffering from burnout, or a mix of things and they are looking for a creative outlet. Reading about Lisa, I find that this is also in part what happened with her, and I am so glad that she chose this outlet to share with everyone. Her recipes are wonderful, and her blog is very helpful, with lots of great tips to help all of us get in and out of the kitchen.

I’ve made one other recipe of hers, Baked Cod, which was really delicious, and I encourage you to head over there and check out all of her terrific recipes.

  • ¼ cup red wine vinegar
  • 2 tablespoons diced shallot
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon sea salt, or to taste

Instructions

Add all ingredients to the blending container. Use the immersion blender to blend ingredients until smooth.

Fresh, juicy peaches grilled with honey, salty prosciutto and creamy burrata atop a bed of peppery arugula will make this salad a summer favorite for years to come! I had a similar recipe at a local restaurant and couldn’t get enough of the delicious flavors!  This is fabulous served with a raspberry vinaigrette. I used our new 12″ (30cm) Cast Iron Grill Pan Skillet to grill the peaches:

  • 4 peaches
  • ¼ cup honey
  • 1/8 teaspoon salt
  • 3-ounces prosciutto di Parma torn in large pieces
  • 8-ounces burrata
  • 8-10 ounces arugula

Instructions

Wash peaches, slice in half and remove pit. Combine honey and salt, mix well.

Creamy and full of summer flavors, this Fruit Salad recipe from Pampered Chef is a perfect side dish for all your summer parties!  To be honest, I was surprised how much I enjoyed this, considering I am not big on fruit, however this was really very tasty and super easy to make. 

For this recipe, I used my Cup Slicer and my On-the-Go 2-qt. (1.9-L) Serving Bowl:

Ingredients

For the Salad

  • 2 cups (500 mL) strawberries, stemmed
  • 2 cups (500mL) red or green grapes
  • 2   kiwis, peeled and quartered
  • 1 cup (250 mL) blueberries
  • 1 can (15 oz/425 g) mandarin oranges, liquid drained and reserved
  • 2   bananas, peeled

For the Dressing

  • ¾ cup (175 mL) 2% plain Greek yogurt
  • 2 tbsp (30 mL) reserved mandarin orange juice
  • 1 tbsp (15 mL) honey

Directions

Slice the strawberries, grapes, and kiwis with the Cup Slicer. Add to a mixing bowl.

Add the blueberries and drained mandarin oranges. Toss gently to combine.

Mix the dressing ingredients together in a small bowl.

Place the cut fruit into the On-the-Go 2-qt. (1.9-L) Serving Bowl. Just before serving, cut the bananas with the Cup Slicer and add to the bowl, then pour the dressing over the fruit and toss gently to combine.

Greek Yogurt Fruit Salad

Creamy and full of summer flavors, this Fruit Salad recipe is a perfect side dish for all your summer parties!

Ingredients
  

For the Salad

  • 2 cups strawberries stemmed
  • 2 cups red or green grapes
  • 2 kiwis peeled and quartered
  • 1 cup blueberries
  • 15 oz mandarin oranges liquid drained and reserved
  • 2 bananas peeled

For the Dressing

  • ¾ cup Greek Yogurt
  • 2 tbsp mandarin orange juice reserved from can
  • 1 tbsp honey

Instructions
 

  • Slice the strawberries, grapes, and kiwis with the Cup Slicer. Add to a mixing bowl.
  • Add the blueberries and drained mandarin oranges. Toss gently to combine,
  • Mix the dressing ingredients together in a small bowl.
  • Place the cut fruit into the On-the-Go 2-qt. (1.9-L) Serving Bowl. Just before serving, cut the bananas with the Cup Slicer and add to the bowl, then pour the dressing over the fruit and toss gently to combine.

Notes

If you’re making your fruit salad ahead of time, store the cut fruit in the refrigerator and add the dressing and banana just before serving.

German Potato Salad – Five Heart Home (Video)

This German Potato Salad is full of tender potatoes and crispy bacon enveloped in an incredible dressing that will have everyone asking for more! A delicious recipe from Samantha over at Five Heart Home, who creates easy, homemade recipes that are sure to please even the picky eaters, and we have several in our family!

One of the ways that I’ve made this recipe easier for me is by using my Deluxe Multi Cooker to cook the potatoes.  I love using the pressure cooker method for potatoes, since I don’t have to worry about over cooking them, and they do not have to cook sitting in the water.  I find that my family enjoys the texture of the potatoes much better when prepared using this method.

Let’s jump right in!

Ingredients

  • 2 pounds baby red potatoes washed and cut in half
  • 1 cup water
  • 12 ounces bacon cut into 1-inch pieces
  • 1/3 cup apple cider vinegar
  • 1-3 tablespoons granulated sugar to taste
  • 1 tablespoon Dijon mustard
  • ½ teaspoon Kosher salt
  • Freshly ground pepper
  • 3 cloves garlic chopped
  • ½ cup flat leaf parsley chopped

Instructions

Wash potatoes and cut in half. Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot. Cook on CUSTOM for 20 minutes, then release the pressure manually.

Meanwhile, Chop garlic and parsley; set aside.

Cut bacon into 1-inch pieces and cook over medium-low heat until crispy.  Remove bacon from skillet, leaving the drippings.

Add vinegar, mustard, salt, and pepper to the skillet, stirring to combine with drippings and bring to a simmer.

Add garlic to mixture, stirring to incorporate, and cook until fragrant, about one minute. Remove from heat.

Add in potatoes, stirring gently to coat with dressing.  Fold in bacon and parsley.

Serve hot or warm.
