Incredibly soft and delicious, this sandwich bread is the perfect recipe for fledgling bakers like me, and one you’ll want to make time and again! I’ll admit that I struggle with baking at times. 

Anytime I have a question about baking, or there’s a recipe I want to try to bake, the FIRST place I go to visit is Sally’s Baking Addiction.  You can learn more about Sally here, and you can also check out my first post about her blog, My Addiction to Sally’s Baking Addiction. My admiration has only grown since then, and I will ALWAYS recommend that you go to her blog for any and all advice and tips for baking.  Why yes, I’m a huge fan girl!! 

Of course, having the right tools to make cooking and baking easier also helps me immensely.  This was the first recipe I used while trying out our NEW Deluxe Stand Mixer:

Lastly, I have to say how much I love my Stone Loaf Pan.  This bread FELL out after baking, as you can see in the video.  I use it for banana bread, and even meatloaf!

Let’s jump right in!!

Ingredients

  • 1 cup water, warmed to 110°F/43⁰C
  • ¼ cup milk, warmed to 110°F/43⁰C
  • 2 ¼ teaspoons instant yeast Platinum yeast red star instant yeast recommended
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter softened to room temperature
  • 1 ½ teaspoons salt
  • 3 1/3 cups all-purpose flour or bread flour spoons and leveled

Instructions

Add first TWO ingredients to the Deluxe Cooking Blender. Replace and lock the lid. Push the wheel to get to the CUSTOM HEAT setting.  Turn wheel to select 110°F/43⁰C.  Push the wheel again to set the timer to 00:00 minutes. Press the wheel to start. Once the blender beeps and is done, carefully remove the lid.

Alternatively, warm milk and water to 110°F/43⁰C in the microwave.

Add warmed water and milk, yeast and sugar to Stand Mixer bowl fitted with dough hook attachment (can use paddle attachment). Cover for 5 minutes.

Uncover bowl, add in butter, salt and one cup flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add another cup of flour. Beat on medium speed one minute, then add remaining flour and beat on medium speed for two minutes, or until dough comes together and pulls away from the sides of the bowl.

Set Deluxe Stand Mixer to Knead for three minutes.

Brush large bowl with olive oil and place dough in bowl, turning to coat all over with oil.  Cover bowl, and let rise in a fairly warm area for 1-2 hours, until doubled in size.

Grease Stone Loaf Pan.

Uncover dough and punch it down to release air. Roll out on a lightly floured board into a 8” x 15” rectangle, then roll up into an approximately 8-inch log.  Place into loaf pan, cover with clean kitchen towel or foil and let rise for one hour. 

Preheat oven to 350°F/175⁰C and be sure to move rack to lower portion of oven.

It will be ready to bake when the dough rises about one inch above loaf pan.

Bake for @30-35 minutes, until golden brown on top – also, if you gently tap on the bread, it should sound hollow.  If you use an Instant-Read Thermometer to test the bread, the temperature should read 195°F/90⁰C.

Cool about 5 minutes prior to slicing.

  • 1 cup water warmed to 110°F/43⁰C

Instructions
 

  • Add first TWO ingredients to the Deluxe Cooking Blender. Replace and lock the lid. Quick and delicious, this Sous Vide Mahi Mahi With Avocado Cilantro Cream Sauce is an amazing meal made even easier in the Deluxe Multi Cooker! This wonderful recipe comes from Danielle over at Went Here 8 This. You can learn more about Danielle here. Here’s a quick Sous Vide refresher:

Sous Vide is a method of cooking foods in a water bath at a precisely controlled (lower) temperature for an extended period time. The results speak for themselves. You won’t ever worry about overcooking an expensive cut of meat, it will come out perfectly tender and juicy, based on the temperature YOU select, every single time. So far, I notice also that using the sous vide method leaves me time to do other things, as it’s a matter of placing your food in a reusable or zip top bag and into the water, pressing START and it does its thing.

Sous Vide and Seafood

The sous vide method of cooking is a fantastic way to preserve the texture and flavor of your seafood, without ever overcooking.  It is also one of the most nutritious methods of cooking, since we are using a lower temperature, we will be retaining more nutrients. 

To make this sous vide mahi mahi, I used my Deluxe Multi Cooker, and to make the avocado cilantro cream sauce, I used my Flex+ Multi-Prep Set:

  • 1-pound fresh mahi mahi filet
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Avocado Cilantro Cream Sauce

  • 1 whole Avocado
  • ¼ cup fresh cilantro
  • 5 ounces Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 garlic clove

Instructions

Fill the inner pot of the Deluxe Multi Cooker with water 1″ below the ½ fill line. Lock the lid and select SOUS VIDE. Set the temperature to 125° F/52° C and the timer for 1 hour*; press and hold START.

Cooking Times:

If your mahi mahi is thinner, set timer for 30 minutes.

Season mahi mahi with olive oil, salt and pepper.  Place mahi mahi in a reusable or zip top freezer bag, in one layer. 

When you hear beeps and ADD is displayed on the DMC, open the lid and submerge the bag gently in water using the water displacement method. 

Water Displacement method – seal the bag almost all the way, leaving a small corner open.  Slowly submerge the bag into the water, gently pressing to help air escape.  Seal bag when food is completely submerged (but NOT the top of the bag), seal the bag.

Lock the lid and press START. It will display the word “RUN”.

For the Avocado Cilantro Cream Sauce – Add all ingredients to the Flex+ Food processor, and pulse until combined.

When the timer is up press CANCEL. Carefully remove the bag. Use a fish spatula to gently remove mahi mahi from bag and onto plate or board.  Pat dry and let rest a few minutes.

Heat your skillet over medium-high heat, adding one tablespoon butter.  When butter is foaming, add mahi mahi to skillet and sear about 30 seconds until lightly browned. Remove from pan and serve immediately.

Quick and delicious, this Sous Vide Mahi Mahi With Avocado Cilantro Cream Sauce is an amazing meal made even easier in the Deluxe Multi Cooker!

Ingredients
  

  • 1 lb mahi mahi filets
  • 1 tbsp olive oil
  • kosher salt and pepper, to taste

For the Avocado Cilantro Cream Sauce

  • 1 avocado
  • ¼ cup fresh cilantro
  • 5 oz Greek yogurt
  • 1 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • 1 garlic clove

Instructions
 

  • Fill the inner pot of the Deluxe Multi Cooker with water 1" below the ½ fill line. Lock the lid and select SOUS VIDE. Set the temperature to 125° F/52° C and the timer for 1 hour*; press and hold START.
    NOTE CookingTimes:

The avocado sauce is very thick, so if you prefer it thinner, you can add 1-2 tablespoons of water to the food processor, and pulse until combined.

Tender chicken loaded with veggies and surrounded by a creamy sauce, this Double-Crust Chicken Pot Pie is the perfect comfort food! This recipe comes from Melissa’s Southern Style Kitchen, and it’s my absolute favorite pot pie recipe!!  You can learn more about Melissa here.  I always make two of them and, once cooled, I slice the second and freeze the slices individually.  This way, we always have a quick hot lunch or even dinner on days when we’ve been at vendor events!!

For this recipe, I use my Deluxe Multi Cooker for the shredded chicken, Lemon Pepper Rub for the seasoning, and my  10” Cast Iron Skillet to bake the pot pie:

Deluxe Multi Cooker

Let’s jump right in!

Ingredients

  • Two boneless chicken breasts or 3 cups shredded rotisserie chicken
  • One cup water for chicken breasts
  • 5 tablespoons butter
  • 1 rib celery diced
  • 3 green onions chopped
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • ¼ cup light cream or half and half
  • 1 ½ teaspoons poultry seasoning
  • 1 ½ teaspoons garlic salt
  • 1 teaspoon dried tarragon
  • ½ teaspoon lemon pepper
  • 2 cups frozen mixed vegetables thawed
  • 14 oz box of refrigerated pie crusts or 2 homemade
  • 1 large egg
  • 1 teaspoon water

Instructions

Place chicken in Deluxe Multi Cooker with 1 cup water, set to CUSTOM, 10 minutes. Press button to start. Once timer goes off, release pressure and shred chicken. Set aside.

Dice celery and green onions.

Melt butter over medium heat in large skillet.  Add celery and onions, cook until softened, about 3-5 minutes. 

Add flour to skillet, stirring constantly for one minute, until fully incorporated.

Add in broth and cream, whisking to combine.  Turn heat to medium-high and bring to a boil, then lower heat to a simmer.  Add all of the spices, and simmer for 5 minutes. 

Add in the chicken and vegetables and remove from heat.

Preheat oven to 350°F/175⁰C. Brush 10” Cast Iron Skillet with oil.

Roll out one pie crust, and place into the bottom and sides of the cast iron skillet. Add filling to the crust, spreading evenly to cover the bottom crust. 

Place the second crust over the filling, and press the edges of the crust together to seal.

Add one teaspoon of water to egg and beat to combine.  Brush egg wash over top of pie crust. Cut slits into middle of pot pie to allow for venting.

Bake 40-45 minutes until the crust is golden.  Remove from oven, let rest for 10 minutes prior to serving.

Creamy pasta enveloped in cheese and bacon, this carbonara recipe is quick and delicious!  I was craving a pasta dish and saw this recipe online from The New York Times.  It was love at first sight, especially because I had all of the ingredients that I needed to make this dish!

I used my 8-Qt. Brilliance Nonstick Stock Pot and my 5-Qt. Non-Stick Sauté Pan to make this recipe:

Ingredients

  • 2 large eggs and 2 large yolks, room temperature
  • 1-ounce grated pecorino Romano plus more for serving
  • 1-ounce grated Parmesan
  • Freshly ground black pepper
  • 1 tablespoon olive oil
  • 3.5-ounces thick bacon cut into 1/3-inch squares (or guanciale or pancetta)
  • 12-ounces spaghetti

Instructions

Grate pecorino Romano and Parmesan cheeses.

In a small mixing bowl, whisk together eggs, yolks, pecorino Romano, Parmesan, pinch of salt and freshly ground pepper.

Bring a large pot of lightly salted water to boil.

Meanwhile, heat olive oil to a large skillet over medium heat.  Add bacon and cook until golden brown, but not overly crisp.  Remove from heat, set aside.

(Reheat bacon if necessary, prior to adding cooked pasta.)

Add spaghetti to boiling water and cook one minute less than al dente.

 Reserve 1 cup pasta water, drain pasta then add to skillet over low heat, stirring one minute to combine with bacon. Remove from heat, stir in cheese mixture, add in a bit of reserved pasta water for extra creaminess.  Serve immediately with freshly grated pecorino Romano and pepper.

Sweet and juicy strawberries top a creamy mascarpone filling with a buttery crust that you will want to make throughout spring – and summer! I started with a recipe from Delish, however, I changed out the cream cheese for mascarpone (of course) and ended up with this amazing dessert!

Ingredients

For the crust

  • 1 1/3 c. all-purpose flour
  • 1/4 c. granulated sugar
  • 1/2 tsp. kosher salt
  • 10 tbsp. butter, melted 

For the filling

  • 16 ounces mascarpone cheese
  • 1/2 c. granulated sugar
  • Juice and zest of 1 lemon
  • 1 tsp. pure vanilla extract
  • 1/2 c. heavy cream

For the topping

  • 1 1/2 lb. strawberries, hulled and sliced
  • 3 tbsp. strawberry or raspberry preserves

Instructions

Preheat oven to 350°F/175⁰C.

In a large bowl, whisk together flour, sugar, and salt. Add melted butter and stir until dough forms.

Press mixture into a tart pan with a removable bottom, pressing until dough is smooth. Prick all over with a fork and bake until golden, 25 to 30 minutes. Let cool completely.

Slice Strawberries with the cup slicer; set aside.

In a large bowl, beat together mascarpone cheese and sugar until smooth. Add lemon juice and zest, and vanilla. Beat until combined.

In another large bowl using a hand mixer, beat heavy cream until stiff peaks form.

Fold in whipped cream, then spoon into cooled crust and smooth top.

Starting on the outside, arrange strawberries on top of tart in a circle until entire tart is covered.

In a small microwave-safe bowl, heat together raspberry jam and 2 teaspoons water until warmed, 30 seconds. Brush over tart and refrigerate until well chilled, 2 hours.
