Deliciously satisfying! These easy French Onion Chicken Meatballs are juicy, cheesy, and perfect for a quick weeknight dinner. I adapted this recipe from Delish, but changed how I cook the onions a bit, as I have found my method creates the richest, most flavorful onions ever!  I also decided to use my Deluxe Air Fryer for the meatballs, but you could also bake or – even better – grill them. 

For this recipe I used my favorite meatball maker, the Large Scoop, the Rapid-Prep Mandoline for the onions, and, of course, my Deluxe Air Fryer:

Ingredients

For the meatballs

  • 1 lb. ground chicken 
  • 1/2 cup shredded Gruyère
  • 1/4 cup breadcrumbs 
  • 2 tablespoons flat parsley freshly chopped
  • 1 large egg, beaten
  • 2 cloves garlic, sliced
  • 1 teaspoon kosher salt
  • Freshly ground black pepper

For the French Onion Sauce

  • 4 tablespoons butter
  • 2 large onions sliced 1/4″/6 mm thick
  • 2 teaspoons freshly chopped thyme
  • ½ teaspoon kosher salt
  • Freshly ground black pepper
  • 2 ½ cups beef broth divided
  • 2 teaspoons freshly chopped thyme, plus more for garnish 
  • Kosher salt
  • Freshly ground black pepper
  • 1 1/2 cups shredded Gruyère

Instructions

For the Meatballs

In a large bowl, combine ground chicken, Gruyère, breadcrumbs, parsley, egg, and garlic. Season with salt and pepper. Use the  Large Scoop to form into 16 meatballs (@ 3 tbsp. each), then place on racks in the Deluxe Air Fryer and set to Air Fry for 25 minutes, switching trays halfway through, until golden and cooked through.

For the French Onion Sauce

While the meatballs are cooking, make the sauce.

Use the Rapid-Prep Mandoline to slice the onions. In a large skillet over medium heat, melt butter. Add onions, thyme and salt, stir to combine.  Cover for five minutes.

Remove lid and let onions caramelize until golden brown and jammy over medium heat, stirring occasionally and adding in the ½ cup of beef broth a little at a time every 5-10 minutes, cooking for approximately 25 minutes.

Add in garlic, cooking for one minute, or until fragrant.  Add broth and season with salt and pepper. Bring to a boil, then reduce heat and let simmer until slightly thickened, 10 minutes. 

Add meatballs to skillet and sprinkle with Gruyère. Cover and cook until meatballs are warmed through, and cheese is melty, 5 minutes. Serve warm, garnished with thyme.

    Notes

    The meatballs freeze beautifully, either before or after cooking! To freeze before, make the meatballs and place in a zip-top bag. Freeze up to three months, and take out only those you want to cook.
    To freeze after cooking, place in an airtight container without any sauce and freeze up to three months,

    Elevate dinner with this simple Jalapeño Honey Glazed Ham! Just 9 ingredients for a flavor-packed masterpiece! We wanted to try something other than my usual Brown Sugar Honey Ham that I usually make. The taste was a delightful fusion of sweet and spicy flavors. The honey brought out a rich sweetness while the jalapeños added subtle heat, creating a perfectly balanced and irresistibly delicious combination. It was perfect!

    For this recipe, I used Enameled Cast Iron Pan:

    Ingredients

    For the Ham

    • 1 bone-in ham (8-10 pounds)
    • Water for the roasting pan

    For the Glaze

    • ½ cup honey
    • ¼ cup apricot jam
    • 2 tablespoons Dijon mustard
    • 1 tablespoon apple cider vinegar
    • 4 cloves garlic smashed
    • 2 jalapeños seeded and diced
    • 1 orange zested and juiced
    • Freshly ground black pepper

    Instructions

    Preheat your oven to 350°F/175⁰C.

    For the Ham:

    Place ham cut-side down into your Enameled Cast Iron Pan or roasting pan fitted with rack. Add water to the pan approximately 1/2 -inch deep. Cover loosely with foil and bake 45 minutes.

    For the Glaze:

    In a small saucepan, combine all glaze ingredients over medium heat. Bring to a simmer, stirring often, for 5 minutes, or until glaze has reduced and thickened slightly.

    Remove foil from ham after 45 minutes and baste with the pan drippings. Pour or brush the glaze over the ham. 

    Continue to bake ham for 60 minutes, basting every 15 minutes with glaze/drippings until heated through and glaze is caramelized.

    Let’s jump right in!

    Ingredients

    • 1   whole chicken 4-5 lbs.
    • 4 carrots peeled and thickly sliced into thirds
    • 1 lemon thickly sliced
    • 1 onion wedged
    • 4 cloves garlic peeled
    • 1 tbsp (15 mL) olive oil
    • 1 ½ tbsp Lemon Garlic Rub

    Directions

    Preheat the oven to 450°F/230⁰C.

    Peel and slice carrots, slice lemon; wedge onion and peel garlic, set all side.

    Place carrots, lemon, garlic and onion into the Deep Covered Baker. Season vegetables with ½ tablespoon of Lemon Garlic Rub.

    Remove and discard the giblets and neck from the chicken cavity. Rinse the chicken with cold water and pat dry with paper towels.

    Place the chicken, breast side up, on top of the vegetables in the baker. Brush the outside of the chicken with oil, then coat the chicken completely with the Lemon Garlic Rub. Tie the ends of the legs together with cotton string. Lift the wing tips up toward the neck, then tuck them under the back of the chicken.

    Cover and roast, for 50 minutes. Remove cover, and roast for an additional 10 minutes, or until meat thermometer registers 180°F/82°C in the thickest part of thigh and juices run clear. Remove the baker from the oven and let the chicken stand for 10 minutes before carving.

    • Place the chicken, breast side up, on top of the vegetables in the baker. Brush the outside of the chicken with oil, then coat the chicken completely with the Lemon Garlic Rub. Tie the ends of the legs together with cotton string. Lift the wing tips up toward the neck, then tuck them under the back of the chicken.
      1 4- 5 lb whole chicken, 1 tbsp olive oil, 1 ½ tbsp Lemon Garlic Rub
    • Cover and roast, for 50 minutes. Remove cover, and roast for an additional 10 minutes, or until meat thermometer registers 180°F/82°C in the thickest part of thigh and juices run clear. Remove the baker from the oven and let the chicken stand for 10 minutes before carving.

    A 4-pound/1.8kg chicken will yield about 3 cups/750 mL of cooked meat.

    Simplify dinner! This Easy-Peasy Meatloaf recipe takes the hassle out of cooking. Quick, simple, and delicious—perfect for busy families!

    I love a good meatloaf, so when I came across this recipe from Dan over at Mantitlement, it sounded like something I would like to try. You can learn more about Dan here. This meatloaf was outstanding! I was a little hesitant with the glaze, as I have never used sweet chili sauce for a meatloaf before, but I’m so glad I followed this recipe to the letter. The glaze really made the meatloaf, which was already perfect, even more delicious.

    For this recipe, I used my Deluxe Stand Mixer and Stone Loaf Pan:

    Ingredients

    For the Meatloaf

    • 1 tablespoon butter
    • 1 tablespoon olive oil
    • 1 large onion (1 1/2 cups diced)
    • ¼ cup tomato paste
    • 2 ½ pounds meatloaf mix or ground beef
    • 2 ½ teaspoons kosher salt, to taste
    • Fresh ground black pepper, to taste
    • 2 tablespoons Worcestershire sauce
    • 2 tablespoons spicy brown mustard
    • 1 cup Panko breadcrumbs
    • 2 eggs, beaten
    • ¼ cup chopped fresh parsley
    • 1 ½ teaspoon garlic powder
    • 1 ½ teaspoons dried basil

    For the Glaze:

    • 1 cup ketchup
    • 2 tablespoons sweet chili sauce
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon dry mustard
    • 2 tablespoons brown sugar

    Instructions

    Preheat oven to 400°F/200⁰C.

    Chop onions and parsley; set parsley aside.

    Add one tablespoon EACH butter and olive oil to skillet over medium heat until butter is melted.  Add onion and cook until softened, about 5-7 minutes.

    Stir in tomato paste and remove from heat.  Allow to cool.

    Add all the meatloaf ingredients (including the cooled tomato-onion mixture) to the Deluxe Stand Mixer. Using the paddle attachment, select MIX and adjust the time to 45 seconds. Press Start.

    For the Glaze:

    Whisk together all of the glaze ingredients until combined.

    Place meatloaf into Stone Loaf Pan. Brush half of the glaze on the meatloaf.

    Bake for 35 minutes; remove from oven, brush on remaining glaze. Bake an additional 20-25 minutes, or until fully cooked to 160°F/71°C.

    Craving comfort? This Gołąbki Beef & Cabbage Casserole is a hug on a plate! I adapted this from the wonderful Platter Talk! This scrumptious Golumpki recipe is SO much less involved by deconstructing the cabbage roll and making it into a casserole.

    For this recipe, I used my Deep Covered Baker:

    Make Dinner in the Oven or Microwave

    From roasted chicken to stuffed peppers, you can cook almost anything in the Deep Covered Baker. It delivers tender, juicy results whenever you broil fish, braise beef, or roast turkey breasts with it in the oven or microwave! Plus, no preheating is necessary—just put your food on the stone, cook it, and serve it without dirtying another dish. And when it comes time to cleanup, just place the pieces in the dishwasher.

    Ingredients

    • ½ head of cabbage, medium
    • 2.5 lbs.  lean ground beef 
    • 8 slices bacon cooked and chopped into pieces
    • One white onion
    • ½ cup Italian breadcrumbs
    • ⅔ cup white rice cooked and cooled
    • 2 eggs 
    • 33-ounces condensed tomato soup
    • Salt and pepper to taste

    Instructions

    Cook rice according to directions. Set aside and allow it to cool.  Cook bacon, cool and chop it into pieces; set aside.

    Preheat oven to 375°F/190°C.

    Shred cabbage and set aside.

    Combine beef, bacon, onion, breadcrumbs, rice, and eggs in a large bowl, mixing with hands until fully incorporated.

    Place half of the cabbage on the bottom of the Deep Covered Baker. Top with the beef mixture, then the rest of the cabbage.

    Pour the tomato soup on top and spread all over the casserole. Cover with lid and bake 90 minutes.  Remove lid and bake an addition 15 minutes. Serve immediately.

    • Salt and pepper to taste

    Store any leftovers in the refrigerator for up to two days. This recipe also freezes beautifully! To freeze, place any leftovers in an airtight container and freeze up to three months.
