Let’s jump right in!

Ingredients

  • 4 boneless center-cut pork chops (1/2 inch thick; 5 ounces each)
  • Kosher salt
  • 3 tablespoons olive oil, divided
  • 1/2 cup all-purpose flour
  • 1 large shallot, finely chopped
  • 8 fresh sage leaves
  • 1/2 cup dry white wine
  • 1 1/4 cups low-sodium chicken broth, divided
  • 3 ounces prosciutto about 5 thin slices, with 1 slice chopped
  • 2 ounces fontina cheese (grated, about 1 cup)
  • 1/4 cup grated Parmesan cheese
  • 10 ounces frozen peas

Instructions

Preheat oven to 400°F/200⁰C. Use the Food Chopper to chop shallots.

Season the pork with salt. Heat 2 tablespoons of olive oil 12″ (30-cm) Signature Nonstick Skillet over medium-high heat.

Use the Coating Trays to dredge the pork in the flour and add to the skillet; reserve the flour.

Sear pork until browned, 1 minute per side. Transfer to a plate.

Reduce the heat to medium; add the shallot to the skillet and cook, stirring, until soft, 3 minutes.

Increase the heat to medium high. Add the sage and 2 teaspoons of the reserved flour. Cook until sizzling, 30 seconds.

Add the wine; bring to a boil. Cook until reduced by half, 2 minutes.

Add 1 cup broth; return to a boil and cook until thickened, 2 minutes. Add the pork; return to a simmer. Top each chop with a prosciutto slice, then the fontina and Parmesan. Remove the handle from the skillet, and bake until cheese is melting, 1 to 2 minutes.

For the Peas

Heat the remaining 1 tablespoon olive oil in a small saucepan over medium heat. Add the chopped prosciutto; cook until crisp, 1 to 2 minutes.

Add the peas, the remaining 1/4 cup broth and 1/4 teaspoon salt. Cover and cook until the peas are tender, 5 minutes.

Uncover; increase the heat to medium high. Cook until the liquid is reduced, 1 minute. Serve with the pork.

Create a tasty family favorite in 20 minutes! Our Cannellini Beans with Tomatoes and Prosciutto is simple, delicious, and perfect for busy weeknights! I saw a recipe like this on Reddit a while back, and always wanted to give it a try, with my own spin on it. I added some prosciutto, since I had it on hand, and it crisped up nicely and added a bit of saltiness to this delicious dish. I also topped it with some burrata that I had, but you could certainly substitute with ricotta, or whatever you have on hand. This is a very forgiving recipe, and I love that it can be pulled together with ingredients you already have on hand.

For this recipe, I’m using the following Pampered Chef products:

Garlic Prep Tool:

Prep Garlic Your Way

Sliced and diced garlic, and everything in between can change the final flavor and intensity in your meals. Get the perfect prep every time with this versatile garlic prep tool. Roll your garlic clove in the helpful peeler to get rid of its skin, then slice, dice, or paste all with the same tool. Clean the blades easily with the included brush and cleaning plates perfect for removing leftover garlic bits—and the whole tool is dishwasher-safe!

Sliced: When you slice garlic, you’ll get a mild flavor in a dish. Great for sautés and stir fries. You’ll get some bites of fresh garlic and will see it throughout the dish.

Diced: Fairly strong flavor. Great for chili, pasta sauce, or soup when they are simmered for a while.

Pressed: Pressed garlic provides a bold, intense garlic taste to a dish. Great for salad dressings, soups, sauces, marinades, and dips. It distributes easily into dishes.

Paste: Garlic paste is the strongest form of garlic flavor since the entire clove has been broken down. Soups and cooked sauces.

Ingredients

Ingredients

  • 1 large shallot finely chopped
  • 3 cloves garlic sliced
  • 2 pints cherry tomatoes
  • 1 tablespoon olive oil
  • 2 slices prosciutto torn
  • 30 ounces cannellini beans 2 cans, drained
  • 4 ounces burrata cheese

Toppings

  • Basil or other fresh herbs of your choice
  • Pine nuts

Instructions

Instructions

  • Prepare your vegetables – slice the garlic, chop shallots; set aside.
  • In 12" Stainless Steel Nonstick Skillet over medium-high heat, heat oil, then add shallots and sauté for three minutes, until translucent and slightly caramelized. Add in garlic and prosciutto, and sauté for one minute.
  • Turn the heat down to medium, then add in tomatoes. Cook for 10 minutes, until tomatoes begin to burst, adding a splash of wine or water if necessary. Use immersion blender to blend tomatoes until smooth, or to desired texture.
  • Add cannellini beans, and simmer for 5 minutes until heated through. Remove from heat and add burrata cheese,
  • Top with basil and pine nuts as desired. Serve immediately with some crusty bread.
  • I used a combination of orange poppers and cherry tomatoes I found at the grocery store for this recipe, and I’ve also used only cherry tomatoes; either way works fine.

Notes

I used a combination of orange poppers and cherry tomatoes I found at the grocery store for this recipe, and I’ve also used only cherry tomatoes; either way works fine.
You can skip the prosciutto to make the vegetarian.
This recipe is very forgiving, and you can try other cheese, whatever you have on hand.

Whip up a flavor-packed skillet chicken with juicy tomatoes, crispy pancetta, and gooey mozzarella in a snap! I adapted this recipe from NYT Cooking, and we’ve made it at least three times already.  It’s easy and delicious!  For the sides, I like to make some broccolini with garlic, and you can add some pasta, or even potatoes if you like. For this recipe, I used my 12″ Stainless Steel Nonstick Skillet, the Garlic Prep Tool and the Mix ‘N Chop:

Mix ‘N Chop

A Fan-Favorite Chopper

The unique, beveled pinwheel blades of our Mix ‘N Chop™ make it easy to chop and crumble food. It’s a customer favorite for finely crumbling and browning ground beef, turkey, and sausage. It can quickly mash up avocadoes and eggs, and you can even crush tomatoes for a chunky tomato sauce.

Let’s jump right in!

Ingredients

  • 3½ pounds bone-in chicken thighs
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 5 ounces pancetta, diced
  • 3 garlic cloves, thinly sliced
  • 2 anchovy fillets
  • ½ teaspoon red pepper flakes
  • ¼ cup dry white wine
  • 28 ounces whole plum tomatoes
  • 1 large basil sprig, plus more chopped basil for serving
  • 8 ounces ciliegine mozzarella balls

Instructions

Preheat oven to 400°F/200⁰C. Use the Garlic Prep Tool to slice garlic. Pat chicken dry and season with salt and pepper.

In 12″ Stainless Steel Nonstick Skillet over medium-high heat, warm oil over medium-high heat. Add pancetta and cook, stirring frequently, until browned. Use a slotted spoon to transfer pancetta to a paper-towel-lined plate.

Turn heat to medium, then add chicken to skillet, skin side down. Cook for 5-7 minutes, until nicely browned, then flip chicken and cook for another 5 minutes. Remove the chicken from the pan onto a large plate. Leave only one tablespoon of oil in the skillet, discard the rest.

Add garlic, anchovy fillets, and red pepper flakes to skillet; fry for one minute, or until fragrant. Pour wine into pan to deglaze. Stir in tomatoes and basil. Cook, breaking up tomatoes with the Mix ‘N Chop or a spatula, until sauce thickens slightly, about 10 minutes.

Return chicken to skillet. Transfer skillet to oven and cook, uncovered, until chicken is no longer pink, about 30 minutes.

Scatter ciliegine mozzarella balls over skillet, and place back into the oven until they are beginning to melt, about 5 minutes.

Top with pancetta and chopped basil before serving.
