Whip up a creamy chicken Marsala that’s as easy as it is delicious! Perfect for busy weeknights and guaranteed to please the whole family! I’ve adapted this recipe from Delish. I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today!

I gave their unlimited membership a try a few years ago, so I am speaking from my own experience read: they are not paying me for this review). Let’s jump right in!

Ingredients

  • 3 boneless, skinless chicken breasts @ 1.5 pounds total
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 2 teaspoons kosher salt, divided
  • ½ cup all-purpose flour
  • 3 tablespoons extra-virgin olive oil, divided
  • 3 tablespoons unsalted butter, divided
  • 8 ounces baby bella mushrooms sliced
  • 1 shallot finely chopped
  • 3 cloves garlic sliced
  • 1 tablespoon thyme freshly chopped or 1 teaspoon dried
  • ¾ cups Marsala wine
  • 1 ¼ cups low-sodium chicken broth
  • ¾ cups heavy cream
  • 1 tablespoon flat parsley freshly chopped

Instructions

Prepare your vegetables – slice the mushrooms and garlic, chop shallots and parsley; set all aside.

Pat chicken dry and remove tenderloin from breasts. Use the Close & Cut to butterfly each breast to create 4-6 thin pieces.

Dredge each piece of chicken in flour seasoned with 1 ½ teaspoons of the salt, pepper, and Italian seasoning.

In 12″ Stainless Steel Nonstick Skillet over medium-high heat, heat 1 tablespoon oil, then melt 1 tablespoon butter. Add chicken and cook, turning occasionally, until golden brown, 2 to 3 minutes per side. Transfer to a plate.

In same skillet over medium heat, heat 1 tablespoon oil. Add mushrooms and cook, stirring occasionally, until softened, about 5 minutes. Add shallot, thyme, and remaining ½ teaspoon salt and cook, stirring frequently for 2 minutes.

Add garlic and cook until fragrant, about one minute.

Add Marsala wine and cook, stirring occasionally and scraping browned bits from bottom of pan, until reduced by half, 4 to 5 minutes. Add broth and heavy cream and bring to a simmer. Cook, stirring occasionally, until sauce starts to thicken, about 15 minutes.

Stir in remaining 2 tablespoons butter until melted. Return chicken to skillet spoon sauce over chicken until heated through, 2 to 3 minutes. Top with parsley. Serve immediately.

Whip up a delightful twist on classic tiramisu with this easy Strawberry Tiramisu recipe! I wanted to try this recipe from Food & Wine, because I simply wanted a recipe that reminds me of springtime. We love tiramisu, and I thought that this twist would be a nice change from the usual. It was delicious, and I will definitely make this again!

For this recipe, I used my Cup Slicer, Stone Square Baker With Tray,   Deluxe Stand Mixer, and Deluxe Cooking Blender:

Cup Slicer

For the Strawberries

  • 3 cups strawberries freshly hulled and sliced
  • 2 tablespoons orange liqueur I used Patron
  • 2 teaspoons balsamic vinegar
  • ⅛ teaspoon kosher salt
  • 3 tablespoons granulated sugar
  • ¼ cup strawberry jam

For the Filling

  • 4 large egg yolks
  • ½ cup granulated sugar
  • 1 ¼ cups heavy cream
  • 8-ounces mascarpone cheese
  • 1 teaspoon grated orange zest from 1 small orange
  • 7-ounce package ladyfingers

For the Topping

  • 1 cup strawberries freshly hulled and sliced

Directions

For the Strawberries

Use the Cup Slicer to slice strawberries.

Stir together liqueur, vinegar, salt, 3 cups of sliced strawberries, and 3 tablespoons of sugar in a medium bowl. Let stand, stirring occasionally, until berries release some juices, about 15 minutes.

Transfer half of the mixture to a blender; add strawberry jam, and process until smooth, about 1 minute. Stir pureed mixture back into remaining strawberry mixture in bowl; set aside.

For the Filling

Using the Deluxe Stand Mixer or an electric mixer, beat egg yolks and remaining 1/2 cup sugar in a large bowl on high speed until pale yellow and tripled in volume, about 4 minutes. Transfer mixture to a large bowl.

In another large bowl using the Deluxe Stand Mixer or the electric mixer, beat the cream on medium-high speed until soft peaks form, about 1 minute. Add mascarpone and orange zest; beat on medium speed until soft and billowy, about 20 seconds. Fold mascarpone mixture into egg yolk mixture.

Make the Tiramisu

Spread about 2/3 cup strawberry mixture evenly in bottom of the Stone Square Baker With Tray. Top with a single layer of ladyfingers*, gently turning ladyfingers in the strawberry mixture until completely coated.

Spread ladyfingers with 1 heaping cup mascarpone mixture. Repeat layers of strawberry mixture, ladyfingers, and mascarpone mixture 2 times, ending with mascarpone mixture.

Cover and refrigerate until firm, at least 8 hours or up to 12 hours.

For the Topping

Decorate top of tiramisu with remaining 1 cup sliced strawberries in alternating shingled rows. Serve immediately.

    Indulge in effortless elegance with this velvety Tomato-Garlic Confit Pasta Sauce. Simple ingredients, sensational flavor! A few weeks ago, I made tomato-garlic confit and ended up with some left over. I didn’t feel like cooking the other night, so I tried making a sauce with the leftovers, and oh – my- goodness!  The result was amazing. It had this incredible velvety texture, with the perfect balance between the tomatoes and garlic. It was one of the easiest sauces I’ve ever made and tasted like something from a fancy restaurant – without the hefty price!

    My plan going forward will be to make the confit once a month or so.  This way, I will have it not only as an appetizer, but for this sauce and any other recipes I might think of to try with it.  Delicious!!

    What else can I use the confit for?

    Tomato-Garlic Confit is a versatile condiment that can enhance various dishes. Here are some ideas:

    • Bruschetta Topping: Spread it on toasted bread slices and top with fresh basil for a delicious bruschetta.
    • Pizza Topping: Use it as a pizza sauce alternative for a burst of flavor on your homemade pizzas.

    Ingredients

    For the Tomato-Garlic Confit

    • 1-quart cherry tomatoes
    • 2 bulbs of garlic peeled
    • 1 ½ cups Extra-Virgin Olive Oil enough to cover tomatoes at least halfway
    • ½ teaspoon red pepper flakes or to taste
    • Fresh thyme can also use basil or rosemary if you like

    For the Sauce

    • 1/3 cup heavy cream
    • ¼ cup grated Parmesan cheese
    • 16-ounces penne pasta or pasta of choice cooked according to package
    • ½ cup pasta water as needed

    Toppings

    • Flat parsley chopped
    • Additional Parmesan cheese

    Instructions

    For the Tomato-Garlic Confit

    Preheat oven to 325°F/165⁰C.

    Place tomatoes and garlic in Mini Deep Covered Baker. Cover at least halfway with olive oil, add in the red pepper flakes and thyme.

    Bake for 45-60 minutes, or until most tomatoes have burst, and garlic is soft and tan in color. Transfer the confit with the oil to a heat-proof container. Refrigerate immediately once cooled if not using right away. This can be prepared and stored for up to two weeks in the refrigerator.

    For the Sauce

    Strain the confit to separate the oil (save the oil to use later in salad dressing and for cooking).

    Begin to boil pasta in salted water according to package directions, cooking just to al dente. Drain cooked pasta, and reserve ½ cup of the pasta water.

    Heat one tablespoon of the reserved confit oil over medium heat in 12″ Stainless Steel Nonstick Skillet. Add in the confit, cooking for 5 minutes, stirring, and smashing tomatoes and garlic with the back of a spoon.

    Pour the cream into the pan and use an immersion blender to create a smoother sauce.

    Add in the pasta, and half of the reserved pasta water. Stir gently until pasta is evenly coated with the sauce. Add in the grated Parmesan cheese, gently stirring until combined.

    Top with freshly chopped flat parsley. Serve immediately, with extra grated Parmesan cheese alongside.

      Turn yesterday’s ham into today’s cozy comfort! Whip up our simple leftover ham & split pea soup for a deliciously easy dinner tonight! I wanted to make a soup with some of our leftover ham from yesterday, and always find that this is an easy recipe to follow.  You can certainly throw all of the ingredients in at once and then bring to a boil, but I like taking the extra few minutes to sauté the vegetables to bring out a bit of extra flavor.

      Ingredients

      • 3 tablespoons unsalted butter
      • 2 onions peeled and diced
      • 2 carrots peeled and diced
      • 2 stalks celery diced
      • 3 cloves garlic, sliced
      • 16-ounce package dried split peas
      • 6 cups chicken broth
      • 2 cups water
      • 2 potatoes peeled and cubed
      • 1 teaspoon dried thyme
      • 1 teaspoon dried marjoram
      • 1 teaspoon onion powder
      • 1 teaspoon dried sage
      • 12 teaspoon dried basil
      • 1 meaty ham bone
      • 1 bay leaf
      • 2 cups diced ham total includes meat from ham bone

      To Garnish

      • Garlic Butter Croutons

      Instructions

      Melt butter over medium heat, then add in the onions, carrots, and celery. Season with pepper, and sauté for 3-5 minutes, or until slightly softened. Add in garlic, stir, and sauté for an additional minute, until fragrant.

      Add in split peas, broth, water, spices, ham bone and bay leaf. Bring to a boil, then simmer, uncovered, for 60-90 minutes, until soup has thickened.

      Remove ham bone from soup, and transfer to cutting board. Remove meat from the bone, and the meat back to the soup, adding additional diced ham to make two cups.

      Serve immediately, topped with croutons if desired.
