Pressure Cooker Sweet and Sour Cabbage – My Forking Life (Video)

You can certainly make this on the stove top, but I’ve adapted this to make it in our Deluxe Multi Cooker:

Ingredients

  • 5 cups red cabbage
  • 1 cup green apples
  • 3 tablespoon sugar
  • 2 tablespoons butter
  • ¼ cup apple cider vinegar
  • 3 tablespoons water
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cloves

Instructions

Shred cabbage and use apple wedger to wedge apple into slices. 

Add all ingredients to the inner pot of the Deluxe Multi Cooker, stirring to combine ingredients.

Close the lid, then set to CUSTOM, 5 minutes (high pressure). When the timer is up, press CANCEL and press STEAM RELEASE.

Serve immediately.

German Potato Salad – Five Heart Home (Video)

Crispy AND juicy, this Chicken Schnitzel recipe is one of the best I’ve ever tasted and is incredibly easy to make! Chisel & Fork is a food and woodworking blog run by Ryan and Lauren.   Given how delicious this schnitzel was, I hope that you will head over there and check them out. I will be back there!

One thing they suggested was to take the extra time to make my own breadcrumbs.  I almost didn’t, but I had a few slices of frozen potato bread, so I toasted them in the Air Fryer, and then used the Manual Food Processor to make the breadcrumbs.  I am SO glad I did this extra step!  I really feel like doing this made all the difference in the taste, and I will be doing this from now on, because it was so easy!!

For this recipe, I used my Meat Tenderizer to get the chicken to the perfect thinness, and my Nonstick Sauté and Steam Pan.

Meat Tenderizer

Dual-Sided Meat Pounder and Tenderizer

Use the toothed side of this tool to tenderize tough cuts of meat for dishes like stews. Mallet tenderizers breaks down fibers of the meat and makes it more tender. This style of tenderizer works well with flank or round eye steaks. The flat side of the disk on the tenderizer flattens meat so that it will cook more quickly and evenly—think chicken breasts or pork chops. You can also use the flat side to crush cookies, crackers, cereal, nuts, and other foods to use in crusts and other recipes.

Using a Meat Tenderizer

To use the tenderizer, we recommend putting meat between sheets of plastic wrap to prevent sticking and then place the meat on a cutting board or other flat surface. Ingredients

  • 4 (6 oz) chicken breasts
  • salt and black pepper
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 3 slices bread for breadcrumbs or 1 cup plain breadcrumbs
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • lemons and chopped parsley for serving

Instructions

Slice lemons into wedges and chop parsley. Set aside.

Place chicken on Large Cutting Board, and cover with plastic wrap.  Use the Meat Tenderizer to pound the chicken to ¼ inch thickness. Season with salt and black pepper.

Place 3 slices of bread, cut in half, in the Manual Food Processor and pump the handle until you have breadcrumbs.

Place the flour, egg, and breadcrumbs in separate Coating Trays or 3 separate shallow bowls. Add garlic powder to breadcrumbs and mix to combine. Dredge each piece of chicken first in the flour, then coat with egg mixture and finally, the breadcrumbs.

Preheat oven to 200°F/95°C if you are cooking the chicken in batches, to keep it warm.

Heat the olive oil in the Nonstick Sauté and Steam Pan or a large skillet over medium-high heat.  When oil is shimmering, add chicken. Cook 3-4 minutes per side, or until golden & cooked through.

Garnish with parsley and lemon wedges and serve immediately.

  • 2 pounds baby red potatoes washed and cut in half
  • 1 cup water
  • 12 ounces bacon cut into 1-inch pieces
  • 1/3 cup apple cider vinegar
  • 1-3 tablespoons granulated sugar to taste
  • 1 tablespoon Dijon mustard
  • ½ teaspoon Kosher salt
  • Freshly ground pepper
  • 3 cloves garlic chopped
  • ½ cup flat leaf parsley chopped

Instructions

Wash potatoes and cut in half. Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot. Cook on CUSTOM for 20 minutes, then release the pressure manually.

Meanwhile, Chop garlic and parsley; set aside.

Cut bacon into 1-inch pieces and cook over medium-low heat until crispy.  Remove bacon from skillet, leaving the drippings.

Add vinegar, mustard, salt, and pepper to the skillet, stirring to combine with drippings and bring to a simmer.

Add garlic to mixture, stirring to incorporate, and cook until fragrant, about one minute. Remove from heat.

Add in potatoes, stirring gently to coat with dressing.  Fold in bacon and parsley.

Serve hot or warm.

Ingredients

Jack Daniel’s Sauce

  • 1 bulb garlic
  • 1 tablespoon olive oil
  • 1 1/3 cup dark brown sugar
  • 1 cup pineapple juice
  • 2/3 cup water
  • ¼ cup teriyaki sauce
  • 1 tablespoon soy sauce
  • 3 tablespoons lemon juice
  • 3 tablespoons minced white onion
  • 1 tablespoon bourbon whiskey
  • 1 tablespoon crushed pineapple
  • ¼ teaspoon cayenne pepper

Salmon

  • 1-pound Salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

For the Jack Daniel’s Sauce

Preheat oven to 325⁰ F/165 ⁰ C. Cut off the very top of the garlic bulb, so that you can see some of the garlic.  Place bulb in small oven safe pan or baking dish, trimming root if needed for bulb to sit flat.  Drizzle with olive oil, cover with aluminum foil. Bake for one hour, until cloves are soft and fragrant. 

Remove from oven, set aside until slightly cooled.  Squeeze bulb to remove cloves.  Set aside two teaspoons for this recipe; you can freeze the remaining garlic for another recipe.

In saucepan, combine brown sugar, pineapple juice, water, teriyaki sauce and soy sauce, bring to a boil. 

Add in garlic, lemon juice, onion, bourbon whiskey, pineapple and cayenne pepper, mixing to incorporate.  Simmer for 40 minutes, or until the liquid reduces by half.  The sauce should be thick; simmer up to 10 minutes longer if necessary.

For the Salmon

Pat the salmon fillets dry with paper towels. Heat oil in skillet over medium heat. When oil is hot, but not smoking, add salmon to pan, skin side down.  Season with salt and pepper and cook for 6 minutes per side.

Pour 1/3 cup of the Jack Daniel’s sauce over the salmon and cook an additional 2 minutes.

Serve with more sauce on the side.

Cut off the very top of the garlic bulb, so that you can see some of the garlic.  Place bulb in small oven safe pan or baking dish, trimming root if needed for bulb to sit flat.  Drizzle with olive oil, cover with aluminum foil. Bake for one hour, until cloves are soft and fragrant. 
  • Remove from oven,set aside until slightly cooled.  Squeeze bulb to remove cloves.  Set aside two teaspoons for this recipe; you can freeze the remaining garlic for another recipe.
  • In saucepan,combine brown sugar, pineapple juice, water, teriyaki sauce and soy sauce, bring to a boil. 
  • Add in garlic, lemon juice, onion, bourbon whiskey, pineapple and cayenne pepper, mixing to incorporate.  Simmer for 40 minutes, or until the liquid reduces by half.  The sauce should be thick; simmer up to 10 minutes longer if necessary.
  • For the Salmon
    Pat the salmon fillets dry with paper towels. Heat oil in skillet over medium heat. When oil is hot, but not smoking, add salmon to pan, skin side down.  Season with salt and pepper and cook for 6 minutes per side.
  • Pour 1/3 cup of the Jack Daniel’s sauce over the salmon and cook an additional 2 minutes.
  • Serve with more sauce on the side.

Notes

I have been making the sauce one day ahead, so that I can serve this on a weeknight. 
Another option is to roast several bulbs of garlic at once, and split them into the amounts need for the next time you make this sauce.

Mango Confetti Salsa (Video)

Juicy mango combined with crispy veggies makes a delicious salsa that can be served with tortilla chips, seafood or tacos!! I have made this Pampered Chef recipe for years and wanted to share it with you ahead of Memorial Day, as it’s so delicious and a wonderful, healthy salsa to serve alongside our other grilling favorites.

What is jicama? Jicama is a root vegetable, sometimes called a “Mexican Potato”. However, it tastes very similar to an apple and can be eaten raw. Jicama can usually be found in the produce section of the grocery store, usually near plantains and other Spanish fruits and vegetables.  If you are unable to find any jicama near you, feel free to substitute 1/2 of a peeled green apple for the jicama in this recipe.

Ingredients

  • 1 large mango
  • 1/2 small jicama
  • 1/3   orange bell pepper
  • 1/3   red bell pepper
  • 1   jalapeño pepper
  • 1/3 small red onion
  • 1 tbsp fresh lime juice
  • 1/4 tsp salt
  • 1/2 tsp Chili Lime Rub
  • Tortilla chips – optional

Dice mango, jicama and bell peppers into 1-in. pieces.

Cut jalapeño in half and remove stem and seeds. Peel red onion and use Veggie Wedger to wedge onion. Use two of the six wedges for this recipe (save the rest for another use).

Combine mango, jicama, bell peppers, jalapeño and onion in Manual Food Processor; cover and pump handle until coarsely chopped. Add lime juice and salt; pump handle to chop to desired consistency, removing lid and scraping down sides of bowl as necessary. Pour salsa into serving bowl.

Sprinkle with Chili Lime Rub. Serve with tortilla chips, if desired.
