Colorful, healthy, and delicious, this Red, White & Blue Salsa is a perfect appetizer for your July 4th celebrations, or anytime! I was looking for a fun summer appetizer, when I came across this amazing recipe from Scott and Chris over at The Café Sucre Farine.  You can learn more about them here. They’re an adorable couple, and I can’t wait to try many more of their other recipes!!

What is jicama? Jicama is a root vegetable, sometimes called a “Mexican Potato”. However, it tastes very similar to an apple and can be eaten raw. Jicama can usually be found in the produce section of the grocery store, usually near plantains and other Spanish fruits and vegetables.  If you are unable to find any jicama near you, feel free to substitute 1/2 of a peeled green apple for the jicama in this recipe.

Ingredients

Salsa

  • ¾ cup jicama diced
  • ½ cup white onion finely diced
  • 1 cup fresh strawberries diced
  • 1 cup fresh blueberries
  • ½ cup cilantro chopped

Dressing

  • 3 teaspoons honey
  • 1 medium jalapeño seeds removed and finely chopped
  • 1 clove garlic, pressed
  • ¼ teaspoon salt

Instructions

Peel and dice jicama and onion. Dice strawberries and chop cilantro. Set aside one tablespoon of cilantro for garnish.

For the dressing:

Chop jalapeño and press garlic. Whisk together all dressing ingredients.

Salsa

Immediately prior to serving, combine jicama, onion, strawberries, blueberries and cilantro in a small bowl.  Pour dressing over ingredients, stirring gently to combine.  Garnish with remaining cilantro. Serve immediately with chips, or over chicken or fish.

Ingredients

This classic Cherry Clafoutis recipe combines sweet cherries in a creamy custard-like cake that is easy to make and very delicious! I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. Ingredients

  • 1.5 cups tart or sweet cherries
  • 4 large eggs
  • ½ cup granulated sugar
  • 1 cup milk
  • 1 tbsp. amaretto, or 1 tsp. almond extract
  • ¾ cup all-purpose flour
  • ½ teaspoon kosher salt
  • Powdered sugar, for serving

Instructions

Preheat oven to 350°F/175⁰C. Grease a 9″ Stone Pie Plate or round baking dish with butter.

Pit cherries and slice them in half. Spread out the cherries in an even layer in the bottom of pie plate.

In Deluxe Cooking Blender, add eggs and sugar and blend until frothy. Add milk, amaretto, flour and salt and blend until combined.

Pour batter over cherries.

Bake until golden and a toothpick inserted in middle comes out clean, about 35 minutes.

Serve warm or at room temperature dusted with powdered sugar.

Ingredients

  • 3 boneless, skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 cup all-purpose flour
  • 4 tbsp.  unsalted butter
  • 2 tbsp. extra-virgin olive oil
  • 4 cloves garlic, finely chopped
  • 1/2 cupdry white wine, such as Sauvignon Blanc
  • 1 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp. drained capers
  • 2 medium lemons, 1 zested and juiced
  • 1 medium lemon, sliced into rounds
  • 1 (17-oz.) package gnocchi
  • Chopped fresh parsley leaves, for serving

Directions

Peel and chop garlic. Zest and juice one lemon; juice second lemon, and slice third lemon into thin rounds. Set aside.

Slice chicken breasts in half; season both sides with salt and pepper. Dredge chicken in flour.

In large skillet over medium-high heat, heat butter and oil until butter is melted. Working in batches, add chicken to skillet and cook until golden brown, about 2 minutes per side. Transfer chicken to a plate.

Reduce heat to medium. Cook garlic, stirring frequently, until fragrant and light golden, about 1 minute. Add wine and simmer, stirring occasionally, until almost reduced, 2 to 4 minutes.

Add broth, scraping up any brown bits on bottom of pan, then slowly stir in cream. Stir in capers, 3 tablespoons lemon juice, and 2 teaspoons lemon zest; season with salt and pepper, if needed. Add gnocchi and toss to coat in sauce. Bring to a boil over high heat, then reduce heat to medium-high and simmer, stirring frequently, until gnocchi is tender, 8 to 10 minutes; season with salt and pepper, if desired.

Return chicken to skillet, turning to coat in sauce. Cook until chicken is warmed through, about 2 minutes more. Top with lemon rounds and parsley. Serve immediately.

Tender and easy to throw together, you can make this succulent Asian Style Shredded Beef that’s incredibly delicious and cooked in one hour!! This is simply a recipe that I threw together with ingredients that I had on hand.  My family loved it, and I will definitely make this again, since it is one of those easy dinners to make and tastes even better the next day!

For this recipe, I used our Deluxe Multi Cooker:

Pressure Cooker, Sous Vide Cooker, Slow Cooker, Yogurt Maker, and Sterilizer

Let’s jump right in!

Ingredients

  • 3-4 pounds chuck roast
  • 3 carrots diced
  • 1 red pepper diced
  • 3 green onions diced
  • ½ cup brown sugar
  • 1 teaspoon ginger freshly minced or chopped
  • 4 garlic cloves crushed
  • ½ cup soy sauce
  • 1 cup beef broth
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

Dice carrots, red pepper and green onions.  Peel garlic and crush with the back of your knife.  Peel and mince or chop garlic.

Add chuck roast and all other ingredients EXCEPT cornstarch and water to inner pot of Deluxe Multi Cooker. Set to BEEF/PORK for 60 minutes.

When the timer is up, press CANCEL. Press STEAM-RELEASE. Carefully remove chuck roast from the inner pot.

Set Deluxe Multi Cooker to SEAR. Mix together cornstarch and water to make a slurry. Add slurry to broth, mixing to incorporate.  Cook for 3 minutes, or until thickened.

Shred beef, then add back into sauce.  Serve over rice or lettuce leaves, if desired.

Bright and buttery, this Orange Pound Cake is so easy to make and a perfect dessert for Father’s Day, or anytime!

I was searching for a Father’s Day dessert for my husband, but he does not like chocolate.  I came across this goodness from Jamie over at Drive Me Hungry, and I have made this twice already, it’s that delicious! I’m looking forward to checking out more of the desserts.

For this recipe, I used my Deluxe Stand Mixer and Stone Loaf Pan:

Let’s jump right in!

Ingredients

  • 1 2/3 cups all-purpose flour
  • 1 ¼ teaspoon baking powder
  • 1 ¼ teaspoon milk powder
  • 12 tablespoons unsalted butter softened
  • ¾ cup sugar
  • 3 large eggs
  • 1 large orange zested and segmented
  • 3-4 slices orange to place on top while baking (optional)

Glaze

  • ½ cup powdered sugar
  • 2 teaspoons orange juice

Instructions

Preheat oven to 375°F/190°C.

Zest, peel and segment one orange, dicing the segments into pieces. Thinly slice half of another orange, set all aside.

Sift flour, baking powder and milk powder together, and set aside.

Combine butter and sugar in the Deluxe Stand Mixer set to CREAM setting.

Add eggs, one at a time, mixing until each egg is completely incorporated, and mixture is pale yellow and fluffy.

Fold flour mixture into the batter, then fold in zest and orange pieces.

Pour batter into Stone Loaf Pan, and use a scraper to make well/push batter up the sides (see photo).  Add orange slices to the to of the batter.

Bake at Preheat oven to 375°F/190°C for 10 minutes, then turn heat down to Preheat oven to 338°F/170°C for an additional 40-45 minutes, or until cake tester inserted into the middle of the cake comes out dry with just a few crumbs.

Cool on rack for 10-15 minutes, then flip stone over to take cake out of pan.  Cool completely before glazing.

Glaze

Whisk together powdered sugar and orange juice until a glaze is formed.  Use the Stainless Steel Mini Whisk to drizzle over cooled pound cake.

If you have any leftover, it freezes beautifully! You can freeze it as a whole or in slices in a freezer safe container up to three months.  You can also store, covered, in the refrigerator for 3-4 days
