Create a tasty family favorite in 20 minutes! Our Cannellini Beans with Tomatoes and Prosciutto is simple, delicious, and perfect for busy weeknights! I saw a recipe like this on Reddit a while back, and always wanted to give it a try, with my own spin on it. I added some prosciutto, since I had it on hand, and it crisped up nicely and added a bit of saltiness to this delicious dish. I also topped it with some burrata that I had, but you could certainly substitute with ricotta, or whatever you have on hand. This is a very forgiving recipe, and I love that it can be pulled together with ingredients you already have on hand.

Let’s jump right in!

Ingredients

  • 1 large shallot finely chopped
  • 3 cloves garlic sliced
  • 2 pints of cherry tomatoes
  • 1 tablespoon olive oil
  • 2 slices prosciutto torn
  • 30 ounces cannellini beans 2 cans, drained
  • 4 ounces burrata cheese

Toppings

  • Basil or other fresh herbs of your choice
  • Pine nuts

Instructions

Prepare your vegetables – slice the garlic, chop shallots; set aside.

In 12″ Stainless Steel Nonstick Skillet over medium-high heat, heat oil, then add shallots and sauté for three minutes, until translucent and slightly caramelized. Add in garlic and prosciutto, and sauté for one minute.

Turn the heat down to medium, then add in tomatoes. Cook for 10 minutes, until tomatoes begin to burst, adding a splash of wine or water if necessary. Use immersion blender to blend tomatoes until smooth, or to desired texture.

Add cannellini beans, and simmer for 5 minutes until heated through. Remove from heat and add burrata cheese,

Top with basil and pine nuts as desired. Serve immediately with some crusty bread.
