Sweet and juicy strawberries top a creamy mascarpone filling with a buttery crust that you will want to make throughout spring – and summer! I started with a recipe from Delish, however, I changed out the cream cheese for mascarpone (of course) and ended up with this amazing dessert!

Let’s jump right in!

Ingredients

For the crust

  • 1 1/3 c. all-purpose flour
  • 1/4 c. granulated sugar
  • 1/2 tsp. kosher salt
  • 10 tbsp. butter, melted 

For the filling

  • 16 ounces mascarpone cheese
  • 1/2 c. granulated sugar
  • Juice and zest of 1 lemon
  • 1 tsp. pure vanilla extract
  • 1/2 c. heavy cream

For the topping

  • 1 1/2 lb. strawberries, hulled and sliced
  • 3 tbsp. strawberry or raspberry preserves

Instructions

Preheat oven to 350°F/175⁰C.

In a large bowl, whisk together flour, sugar, and salt. Add melted butter and stir until dough forms.

Press mixture into a tart pan with a removable bottom, pressing until dough is smooth. Prick all over with a fork and bake until golden, 25 to 30 minutes. Let cool completely.

Slice Strawberries with the cup slicer; set aside.

In a large bowl, beat together mascarpone cheese and sugar until smooth. Add lemon juice and zest, and vanilla. Beat until combined.

In another large bowl using a hand mixer, beat heavy cream until stiff peaks form.

Fold in whipped cream, then spoon into cooled crust and smooth top.

Starting on the outside, arrange strawberries on top of tart in a circle until entire tart is covered.

In a small microwave-safe bowl, heat together raspberry jam and 2 teaspoons water until warmed, 30 seconds. Brush over tart and refrigerate until well chilled, 2 hours.

Ingredients
  

  • 1 ⅓ cup all-purpose flour
  • ¼ cup granulated sugar
  • ½ tsp kosher salt
  • 10 tbsp butter melted

For the Filling

This keto recipe uses a tomato for the bun, filled with delicious tuna salad and loads of melty cheese! Another fabulous recipe from Delish, I made this with one of my keto friends in mind, and it did not disappoint! I love that it was super easy to put together, and very filling.  Of course, I substituted Greek yogurt for the mayonnaise, and it was delicious.

Better Sheet Pan Meals

When it comes to sheet pan dinners, three pans are better than one. If you ever put everything on one pan only to find the chicken cooked to perfection but the green beans are burnt, or moisture from veggies has made your crispy fish soggy, it’s time for modular pans. With these pans, not everything has to hang out in the oven for the same amount of time; you can add foods at different stages and season them separately, so everything turns out perfect.

You get three high-quality sheet pans—one that’s 8¾” x 12¾” (22.5 cm x 32 cm) pan and two that are 8¾” x 6¼” (22.5 cm x 16 cm), so you’ll have a variety of cooking options. The smaller pans also fit in our Deluxe Air Fryer. These pans are made from the same heavy-gauge steel as our other popular sheet pans, so they won’t warp in the broiler and will cook food evenly. Ingredients

  • 12-ounces of canned tuna, drained
  • ¼ red onion, finely chopped
  • 1 tablespoon flat parsley chopped
  • ¼ cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 lemon, juiced
  • Kosher salt
  • Freshly ground black pepper
  • 4 large tomatoes
  • 2 cups shredded cheddar cheese

Instructions

Heat broiler.

Drain tuna, chop onion and parsley.  Shred cheese, set aside. In a large bowl, combine tuna, onion, parsley, Greek yogurt, mustard, lemon juice and salt and pepper.

Slice tomatoes into thirds (save the middle slices for later). Place tops and bottoms onto baking sheet, season to taste with salt and pepper. 

Use Extra-Large Scoop to add tuna to bottom half of tomatoes.  Top tuna with shredded cheese.

Broil 4-5 minutes, until cheese is melted and golden. Garnish tuna with parsley and cover with top half of tomato, and serve immediately.

Tender chicken smothered in a velvety French onion sauce, topped off with loads of melty cheese, makes this recipe a keeper! I was inspired by a recipe from Delish; however, making it their way, with oil used for the onions and the general cooking time, did not work out for me.  The next time, I switched out the oil for butter, steamed the onions for 5 minutes, then slow cooked them for about 45 minutes, stirring frequently, until they were nicely browned.  I know it takes a bit longer, but it was time well spent for the depth of flavor in the end.

Ingredients

  • 3 tablespoons butter
  • 1 large onion thinly sliced
  • 2 teaspoons freshly chopped thyme
  • ½ teaspoon kosher salt
  • Freshly ground black pepper
  • 2 cloves garlic chopped
  • 1 ¼ lb. boneless skinless chicken breasts cut into 1” pieces
  • 2 tablespoons all-purpose flour
  • ½ teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 ½ cups beef broth
  • 1 cup Gruyere Cheese shredded
  • Flat parsley freshly chopped for garnish

Instructions

Slice onion to about ¼”/6 mm thickness.  Chop garlic, set aside. Shred Gruyere cheese, set aside.

Heat butter over medium heat in cast iron skillet.  Add onions, thyme and salt, stir to combine.  Cover for five minutes.

Remove lid and let onions caramelize until golden brown and jammy over medium heat, stirring occasionally, for 45-60 minutes.

Add in garlic, cooking for one minute, or until fragrant.  Remove onion mixture from the skillet to a bowl and wipe the skillet clean.

Cut chicken into 1-inch pieces, and combine with flour and oregano. 

Heat oil in the same skillet over medium-high heat, then add in the chicken.  Cook for 8 minutes, until golden brown and nearly cooked.

Add onion mixture and broth to skillet, stirring to combine.  Bring to a boil, then reduce heat to medium-low.  Simmer 10 minutes, until chicken is cooked and broth is slightly reduced.

Add Gruyere cheese to skillet, cover and cook an additional two minutes, or until cheese is melted.

Remove from heat, top with parsley and serve immediately.

  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • 1 tbsp olive oil
  • 1.5 cups beef broth
  • 1 cup Gruyere cheese shredded
  • flat parsley freshly chopped, for garnish
