Buffalo Chicken Pinwheels (Video)

It’s almost time for the Super Bowl, and that means it’s time for a fun appetizer. Filled with tender chicken, melty cheese and just enough hot sauce for a nice kick, these scrumptious buffalo chicken pinwheels are a perfect addition to your game day festivities, or anytime!! 

I came up with this as a mashup of the Air Fryer Buffalo Chicken Eggrolls recipe, and the Kielbasa and Honey Mustard Pinwheels recipe, which you can check out one or both by clicking on the links.

To make the shredded chicken, I used my Deluxe Multi Cooker, and to bake the pinwheels, I used my Rectangle Stone:

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • All-purpose flour, for dusting
  • 4-ounces (112 grams) cream cheese, room temperature 
  • 2 cups (227 grams) shredded cheddar OR mozzarella cheese  
  • 3 cups (400 grams) shredded chicken
  • 1/4 cup (60 mL) hot sauce 
  • 4 green onions, thinly sliced 

Serve with:

  • Ranch Dressing
  • Bleu Cheese
  • More sliced green onions

Instructions

Place chicken in Deluxe Multi Cooker with 1 cup water, set to , 15 minutes. Press button to start. Once timer goes off, release pressure and shred chicken.

In medium bowl, combine cream cheese, cheddar or mozzarella cheese, shredded chicken, hot sauce and green onions, mixing well.

Unroll thawed puff pastry onto cutting board dusted with flour. Roll dough to measure a 10 x 15-inch rectangle.  Spread buffalo chicken mixture over top of puff pastry all the way to the edges.

Roll the puff pastry like a jelly roll, starting from the long side.  Pinch the seam closed, then refrigerate or freeze until firm enough to slice (Refrigerate 30 minutes or freeze for 15 minutes).

Meanwhile, Preheat your oven to 400°F/205⁰C.

Once dough is chilled, slice into ½” pinwheels, and place cut side down onto baking stone. 

Bake 15-18 minutes, or until golden brown.  Cool 5 minutes.  Serve with ranch dressing mixed with blue cheese on the side, and more green onions for garnish, if desired.

Raspberry-Filled Donut Holes (Video)

These light and fluffy donut holes are filled with sweet homemade raspberry jam, then rolled in sugar to create an irresistible treat everyone will love!  This donut recipe comes from John over at Preppy Kitchen – and I absolutely LOVE his blog, recipes and videos.  You can learn more about John here, and his recipes are most definitely something you should check out. 

I wanted to do an extra recipe for you this week, since Valentine’s day is almost here, and I had just finished making homemade jam in my Deluxe Cooking Blender.  I loved the donut recipe, but I wanted to make donut holes, since our Donut Hole Pan is one of our two FREE gifts with any $100 purchase this month.

I did adapt the recipe, however, by not adding in cinnamon and nutmeg, because I wanted to let the flavor of the jam shine through.  I replaced the spices with Enrichables Pea Protein, to ensure the kids had some protein with their treats, and so I wouldn’t feel so guilty for eating so many!  To fill them with jam, I used my Easy Accent Decorator:

Ingredients

  • 2 ⅓ cup all-purpose flour
  • ½ cup granulated sugar
  • 2 ½ teaspoons baking powder
  • 1 teaspoon Enrichables Pea Protein
  • ½ teaspoon salt
  • 1 ½ cups whole buttermilk room temperature
  • 1 large egg room temperature
  • 2 tablespoons unsalted butter melted
  • 2 tablespoons vegetable oil
  • 2 teaspoons vanilla extract

Toppings

  • ⅓ cup granulated sugar
  • 2 tablespoons unsalted butter melted

Filling

  • ⅓ cup raspberry jam

Instructions

Preheat oven to 350°F/175⁰C. Brush Donut Hole Pan lightly with oil.

In a large mixing bowl, whisk together flour, sugar, baking powder, Enrichables Pea Protein and salt. 

In another mixing bowl, add buttermilk, egg, butter, vegetable oil and vanilla extract, whisk well to combine.

Add buttermilk mixture to flour, mixing until fully incorporated.

Use medium scoop to put two tablespoons batter in each well of donut hole pan.

Bake for 12 minutes, until donut holes are lightly golden and puffed up. 

Remove from pan and, while still warm, dip in melted butter, then roll in sugar until coated.

Take a small paring knife and make a small incision to the middle of each donut hole, making sure to go about two-thirds in depth.

Fill Easy Accent Decorator with raspberry jam, and use the Bismarck Tip to fill each donut hole.  Serve immediately.

Deluxe Cooking Blender

Let’s jump right in!

Ingredients

  • ½ cup lemon juice
  • Zest from 3 lemons
  • 1 ½ cups granulated sugar
  • 4 eggs
  • ¼ cup unsalted butter
  • 1/8 teaspoon salt
  • 1 tsp cornstarch

Instructions

Zest and Juice lemons.

Add all ingredients, in the order listed, to the Deluxe Cooking Blender. Replace and lock the lid. Turn the wheel to select the SAUCE setting; press the wheel to start.

When prompted to “ADD”, press cancel.  Carefully remove the lid, and transfer to a heat safe container. 

Depending on your container, you may want to cover the curd with plastic wrap to prevent a skin from forming.  Cool completely prior to using to fill tartlets, cakes, etc.

Taco Ring – Pampered Chef (Video)

A classic recipe from Pampered Chef, this deliciously easy Taco Ring is PERFECT for your Superbowl parties, or anytime!!  Many of my in-home party hosts ask me to make this recipe, because it feeds a LOT of people and, of course, it is so tasty!

I used my Large Round Stone, along with our Everything Taco Seasoning for this recipe:

Ingredients

  • 1½ lb (700 g) lean (90%) ground beef
  • 1 pkg (1–1.25 oz/30–35 g) taco seasoning mix
  • 1¾ cups (7 oz/200 g) shredded cheddar cheese, divided
  • 2 tbsp (45 mL) water
  • 2 pkg (8 oz /250 g each) refrigerated crescent rolls
  • 1   egg white, lightly beaten

 Optional toppings:

  • salsa, shredded lettuce, chopped onion and tomato, sliced olives, and sour cream

Instructions

Preheat the oven to 375°F/190°C.

Cook the ground beef in a skillet over medium heat for 10–12 minutes or until it’s no longer pink, breaking beef into crumbles, then drain. Stir in the Everything Taco Seasoning, 1 ½ cups of the cheese, and water.

Unroll the crescent dough and separate it into 16 triangles. Arrange the triangles, slightly overlapping, in a circle on a Large Round Stone with the wide ends of the triangles overlapping in the center and points toward the outside. There should be a 5″ (13-cm)-diameter opening in the center of the stone. The narrow triangle points of dough will extend off the edge of the baking stone.

Using a Large Scoop, scoop the filling evenly over the dough in a continuous circle. Bring the points of triangles up over the filling and tuck them under the dough at center to form a ring. (Filling will show.) Brush the top with the egg white. Sprinkle with the remaining cheese. Bake for 25–30 minutes or until it is golden brown. Serve with toppings.

Taco Ring – Pampered Chef

A classic recipe from Pampered Chef, this deliciously easy Taco Ring is PERFECT for your Superbowl parties, or anytime!!

Ingredients
  

  • 1.5 lbs lean ground beef
  • 2 tbsp Everything Taco Seasoning
  • 1 ¾ cups shredded cheddar cheese divided
  • 2 tbsp water
  • 2 pkg refrigerated crescent rolls 8 oz/250 g each
  • 1 egg white, lightly beaten

Instructions
 

  • Preheat the oven to 375°F/190°C.
  • Cook the ground beef in a skillet over medium heat for 10–12minutes or until it’s no longer pink, breaking beef into crumbles, then drain. Stir in the Everything Taco Seasoning, 1 ½ cups of the cheese, and water.
  • Unroll the crescent dough and separate it into 16 triangles.Arrange the triangles, slightly overlapping, in a circle on a Large Round Stone with the wide ends of the triangles overlapping in the center and points toward the outside. There should be a 5" (13-cm)-diameter opening in the center of the stone. The narrow triangle points of dough will extend off the edge of the baking stone.
  • Using a Large Scoop, scoop the filling evenly over the dough in a continuous circle.Bring the points of triangles up over the filling and tuck them under the dough at center to form a ring. (Filling will show.) Brush the top with the egg white. Sprinkle with the remaining cheese. Bake for 25–30 minutes or until it is golden brown. Serve with toppings.

Notes

To freeze any leftovers:
Slice into individualized sections, then place in a zip top bag or freezer safe container up to three months. 
To reheat, bake 5-6 minutes in oven or Air Fryer at 350°F/175⁰C until heated through.
