Whip up a delicious Strawberry Burrata Salad in minutes! Sweet strawberries, creamy burrata, peppery arugula, drizzled with balsamic honey dressing – delicious! This is a Food and Wine recipe, and it did not disappoint, also gets bonus points for begin easy to throw together for lunch or even a light dinner.  I used my Quick Slice for the strawberries, and served it up with the Whisk Tongs in my Wood Salad Bowl:

Ingredients

  • 1/3 cup extra-virgin olive oil
  • 1/3 cup balsamic vinegar
  • 1 tablespoon honey
  • 1-pound strawberries
  • ¼ cup pine nuts
  • 5 ounces baby arugula
  • ¼ cup small basil leaves
  • 8-ounce ball burrata, room temperature
  • Kosher salt to taste
  • Freshly cracked black pepper to taste
  • Crostini for serving

Instructions

Remove tops from strawberries, then slice in half.

Whisk together olive oil, balsamic vinegar, and honey in a medium bowl until emulsified. Add strawberries to bowl, toss to coat with dressing, and let marinate 15 minutes.

Toast Pine Nuts

Toast the pine nuts in a dry small skillet over medium-low heat. Stir frequently, until golden brown and fragrant, about 3-5 minutes. Remove from heat and allow to cool.

Toss arugula and basil together and place in salad bowl. Place burrata in center, and gently break open at top, to expose cream and mozzarella inside. Spoon macerated strawberries, along with dressing, over the arugula-basil. Scatter pine nuts on top, season with salt and pepper, and serve with crostini.

Easy weeknight dinner alert! 🍗 Try this Crispy Chicken Parm recipe – simple steps, big flavor! Perfect for busy evenings. This is such a great meal, and really doesn’t take as much effort as you’d think. I find using Panko breadcrumbs give this chicken a crispy outside, which still flavorful and juicy on the inside.

For The Chicken:

  • 2 boneless, skinless chicken breasts sliced in half to make four cutlets
  • Salt and pepper to taste
  • 2 large eggs
  • 1 cup Flour
  • 1 cup Panko breadcrumbs
  • 1/2 cup Italian breadcrumbs
  • 1/2 cup Parmesan cheese freshly grated
  • 1 teaspoon Garlic Parmesan Seasoning
  • 2 tablespoons olive oil for frying
  • 2 cups marinara sauce*

For The Topping:

  • 8 ounces sliced fresh mozzarella cheese
  • 1/3 cup Parmesan cheese freshly grated
  • 2 tablespoons fresh chopped basil

Instructions

Preheat oven to 400°F/200⁰C.

Slice Chicken in half with Close & Cut so that you end up with four cutlets. Season chicken on both sides with salt and black pepper.

Use the Coating Trays – one for the eggs, another for the flour, and to the last tray combine both bread crumbs, cheese, Garlic Parmesan Seasoning, and basil.

Dredge the chicken, first in the flour, then the eggs, and then the bread crumb mixture.

Heat olive oil over medium-high heat in 12″ Stainless Steel Nonstick Skillet. Fry chicken 4 minutes per side, until crispy and nicely browned.

Spoon marinara sauce* over each piece of chicken, then top with two thick slices of fresh mozzarella cheese, Grated Parmesan cheese and more freshly chopped basil.

Bake for 10 minutes, or until the cheese is bubbling. Serve immediately.

Transform chicken thighs into Mediterranean magic! Marinate in Greek yogurt, spices, and citrus for a burst of flavor in every bite! I couldn’t find a recipe for this that I liked, so I used what I had in the house and came up with this deliciousness.  I love using Greek yogurt to marinade chicken, Greek as it contains natural enzymes and acids, like lactic acid, which work as meat tenderizers. These components break down the proteins in the chicken, resulting in a tender texture. Additionally, yogurt helps to keep the chicken moist during cooking, ensuring a juicy and flavorful outcome. Yum!

For this recipe, I used my Food Chopper, Garlic Prep Tool and one of my favorite pans, the 12″ (30-cm) Signature Nonstick Skillet:

  • 2 pounds boneless skinless chicken thighs
  • 1 tablespoon olive oil

For the Marinade

  • 1 cup plain whole milk Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons paprika
  • ½ teaspoon cumin
  • ⅛ teaspoon cinnamon
  • 1 teaspoon red pepper flakes
  • 2 tablespoons dill freshly chopped
  • Zest from one lemon
  • 2 tablespoons lemon juice
  • 1¾ teaspoons salt
  • ½ teaspoon freshly ground black pepper
  • 5 garlic cloves, pressed
  • 1 shallot finely chopped

Instructions

Use the food Chopper to chop shallot and the Garlic Prep Tool to dice garlic.

In a medium bowl, combine all the marinade ingredients. Add in the chicken, turning to fully coat each piece. Cover and refrigerate for at least 2 – 12 hours.

I was searching for a side dish that would pair with the mediterranean chicken I wanted to make and adapted this recipe the The Delicious Plate. I wanted to have a fuller dill flavor, so I decided to mix some in with the potatoes while they were baking, and oh my goodness – they were AMAZING.

For this recipe, I used my Veggie Wedger, Adjustable Double Grater, Garlic Prep Tool and Stone Bar Pan:

  • 2 lbs. gold potatoes
  • 3 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ cup dill freshly chopped
  • 1 lemon zested

Toppings

  • Dill freshly chopped
  • Lemon zest

For the Tzatziki

  • 1 cup plain Greek yogurt
  • ⅓ cups cucumber, grated
  • ½ lemon juiced
  • 1 garlic clove chopped
  • 1 tablespoon dill freshly chopped
  • salt and pepper to taste

Toppings

  • Dill freshly chopped
  • Lemon zest

Instructions

Preheat your oven to 450°F/230⁰C.

Use the Veggie Wedger to wedge potatoes. Add the potatoes to a large bowl along with the oil, spices, lemon zest and dill. Toss together to fully coat the potatoes.

Add the potatoes to the Stone Bar Pan, and bake for 35 minutes, or until golden brown.

For the Tzatziki

Use the Adjustable Double Grater to grate the cucumber. Using a clean kitchen towel, place grated cucumber in it, fold up and squeeze out most of the liquid. Use the Garlic Prep Tool to chop the garlic.

In a small bowl, combine Greek yogurt, cucumber, lemon juice, garlic, dill, and salt and pepper to taste. Cover and refrigerate until potatoes are ready.

Remove potatoes from oven once cooked, and top with additional freshly chopped dill and lemon zest. Serve with tzatziki alongside.

  • ¼ tsp salt
  • ⅛ tsp black pepper
  • ½ cup all-purpose flour
  • 2   eggs
  • 1 tbsp (15 mL) milk
  • ¾ cup (175 mL) sweetened coconut flakes
  • ½ cup (125 mL) panko breadcrumbs
  • 2 tbsp (30 mL) butter, melted
  • 1   lime, zested
  • Oil, for spritzing the air fryer trays
  • Chili Peach Sauce for dipping

Instructions

Pat the shrimp dry using paper towels. Add the shrimp, salt, and pepper to a small bowl and toss to combine.

Add the flour to a shallow bowl. Whisk the eggs and milk together in a second shallow bowl. Combine the coconut flakes, panko, melted butter, and lime zest in a third shallow bowl.

Dip the shrimp into the flour, then the egg mixture, then coat with the coconut mixture, pressing gently to adhere.

Spray the cooking trays with oil and divide the shrimp evenly. Place the shrimp on the outer edges of the trays, leaving the center of each tray empty. Place the cooking trays on the bottom and middle racks.

Turn the wheel to select the BAKE setting; press the wheel to select. Turn the wheel to adjust the time to 8 minutes; press the wheel to start. Switch the trays halfway through cooking (you’ll hear beeps as a reminder).
