Juicy sweet peaches topped with a sweet biscuit topping, this Peach Cobbler recipe from Allrecipes is the perfect way to end any meal!

For this recipe, I used our  Stone-Fruit Wedger and 2- Qt. Enameled Cast Iron Baker:

Stone-Fruit Wedger

Pitting Peaches Just Got a Whole Lot Easier

With one easy motion, the Stone-Fruit Wedger turns pitted fruit into 12 uniform slices. Place your fruit on the base and push the top down. That’s it! The stainless-steel blades easily glide through the fruit while the serrated center blade separates the pit. The soft-grip handles let you cut large amounts comfortably, and the nonslip base keeps the wedger secure when slicing. You’ll love how easily it slices through peaches, nectarines, plums, apricots, and pluots for meal prep, fruit salads, and after-school snacks.

2- Qt. Enameled Cast Iron Baker

Enameled cast iron is the kind of cookware that will become a fixture at every special meal you bake—and that includes weeknight meals. This baker is beautiful so it’s ready to go directly from your stove (including induction) or oven to your table. You’ll reach for it again and again because it’s low maintenance and versatile. This baker has a light-colored enameled interior which means you can start using it right away—no seasoning required—and it lets you easily see food browning so you can avoid scorching it.

Cast iron’s excellent heat retention means that food stays hot and delicious even if not everyone makes it to the table as soon as dinner’s ready.  Heat-safe up to 500°F (260°C), this pan is perfect for baking sides like vegetable casseroles, corn pudding, and stuffing. Its wide, shallow design makes lots of surface area for bubbly, cheesy browning in the oven. And, its shape lets you easily scrape food down the sides of the pan or flip food with a spatula. Say hello to perfect Scalloped Potatoes!

With the cooking traditions and durability of cast iron comes a certain weightiness. But not to worry—our bakers have two sturdy handles to help you lift and carry dishes from the oven right to your dinner table.

Product Details

  • Dishwasher safe for easy clean-up. Because the rim around the edge of the cast iron isn’t enameled, we recommend hand drying the baker when the cycle is finished to prevent rusting.

Juicy, sweet peaches cooked to perfection, then wrapped in egg rolls are the perfect handheld treat that’s so easy to make in the air fryer! This is a crowd-pleasing dessert you’ll want to have on repeat!

I found this wonderful recipe over at Chenée Today. You can learn more about Chenée here, I LOVE her blog! She has a lot of great recipes and a great section called “Beginner Friendly”. I am sure you’ll enjoy it, so head on over and say hello!

I made two changes to this recipe. The first is that I added mascarpone cheese to the filling. I like to add this, because a fruit filling can be quite juicy, and the mascarpone helps to hold it together nicely. Also, it tastes delicious when coupled with the peaches! You could use cream cheese if you prefer, or skip it altogether.

The other change I made to this recipe was how I cooked it. Of course, I had to use my handy-dandy Deluxe Air Fryer! I love that I can take a dessert like this, and cook it in a way that is healthier, while still getting that “crunch” you would get by deep frying. They were seriously so delicious; I may have eaten most all of them this time around. Oh well, guess I’ll just have to make more!

Here’s some info on what is one of my all-time FAVORITE products:

Best Air Fryer for a Family

Enjoy fried foods at home without all the mess, hassle, and oil of deep frying but with all the flavor and texture you love. Ours is family-sized to quickly cook up to six servings, a whole chicken or roast, or appetizers for a crowd. Like a convection oven, super-heated air circulates giving food a crispy texture. No preheating is necessary, saving you precious time. Conveniently fits under kitchen cabinets.

Air Fryer, Rotisserie, & Dehydrator All-in-One

Ours does more than just better-for-you air frying. It makes perfectly-cooked rotisserie chicken, crispy outside and tender inside, so you can skip the hit-or-miss ones at the grocery store. And it dehydrates fruits, veggies, and herbs so you can enjoy their fresh flavors well beyond the season.

Ingredients

  • 2 cups chopped peaches
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons butter
  • ½ cup brown sugar
  • 4 tsp cornstarch
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • 12 egg roll wrappers
  • 2/3 cup mascarpone cheese OR cream cheese, softened
  • water to brush around edges of wrappers
  • 3 tablespoons MELTED butter (for brushing wrappers)
  • powdered sugar for sprinkling

Vanilla Dipping Sauce

  • ¾ cup powdered sugar
  • ½ teaspoon vanilla bean paste or vanilla extract
  • 2-3 tablespoons milk
  • Pinch of salt

Instructions

Peel and chop peaches. Press lemon for one tablespoon lemon juice.  Freeze the rest of the juice for future use.

Combine first six ingredients in skillet or saucepan over medium heat, stirring often.  Bring to a boil, then turn down heat and simmer for 8-10 minutes, until sauce has thickened slightly.  Remove from heat, add vanilla, stirring to incorporate, and let cool.

Once cooled, begin to make egg rolls.  Add one tablespoon of the mascarpone cheese to the egg roll, spreading to cover the middle. Top the cheese with two tablespoons of the peach mixture.  Brush edges of wrapper with water, then fold opposite corners to the middle, fold top side over, then roll.  (See photos and my video).

Once all are rolled, brush egg rolls all over with melted butter, and place on air fryer racks.

Air Fry at 390⁰ F/200⁰ C for 14 minutes, switching trays at the halfway mark.

Meanwhile make the vanilla dipping sauce:

Combine powdered sugar, vanilla milk and pinch of salt, whisking well.

Once egg rolls are cooked, remove from Air Fryer. Sprinkle with powdered sugar.  Serve with dipping sauce on the side.
