Ground beef Shepherd’s Pie is a hearty and comforting dish that’s a hug on a plate!  

I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. I have found it to be extremely useful, although I have not yet taken advantage of their hotline – yet.

Ingredients

For the Mashed Potatoes

  • 3 lbs. russet potatoes, peeled and cut in half
  • 1 cup water
  • 1/2 cup butter (1 stick)
  • ½ cup heavy cream
  • Salt and pepper, to taste
  • Flat parsley, for garnish

For the Filling

  • 2 lb. lean ground beef
  • Salt and pepper to taste
  • 1 medium yellow onion, chopped
  • 2 medium carrots, peeled, chopped
  • 3 cloves garlic, chopped
  • 2 teaspoons chopped fresh rosemary
  • 2 teaspoons chopped fresh thyme
  • 3 tablespoons tomato paste
  • 1/2 cup red wine
  • 1 cup beef broth
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons all-purpose flour
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 3 tablespoons grated Parmesan
  • 1 tablespoon chopped fresh parsley

Instructions

For the Mashed Potatoes

Peel potatoes, slice in half.

Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.

Cook on CUSTOM for 20 minutes, then release the pressure manually.

Place the warm potatoes into the inner pot. Add the butter, salt and pepper; mash and thoroughly combine. Stir in the cream, top with parsley and more salt and pepper to taste.

For the Filling

Preheat oven to 400°F/200⁰C.

Add beef to a large skillet over medium-high heat. Season with 2 teaspoons salt and 1/2 teaspoon pepper. Break up beef with the Mix ‘N Chop and cook until crumbly and no longer pink, 6 to 8 minutes. Transfer beef to a plate. Pour off all but 2 tablespoons beef drippings.

In same skillet over medium heat, cook onion and carrots, stirring, until onions begin to soften, 5 to 6 minutes. Add garlic, rosemary, and thyme and cook, stirring, until fragrant, about 2 minutes more. Return beef and accumulated juices to skillet; stir in tomato paste. Cook, stirring, until tomato paste turns dark red, 3 to 4 minutes. Add wine and cook, stirring, until almost completely evaporated, 2 to 3 minutes. Stir in broth and Worcestershire and bring to a simmer. Sprinkle with flour and cook, stirring occasionally, until sauce is thickened, about 5 minutes. Stir in corn and peas. Remove from heat.

If using the 12″ (30-cm) Signature Nonstick Skillet, leave in pan and top filling with mashed potatoes, spreading to cover filling completely. Sprinkle with Parmesan; season with a pinch of pepper. Alternatively, you can transfer filling to a 13” x 9” baking stone or pan and proceed with recipe).

Remove handle from 12″ (30-cm) Signature Nonstick Skillet and bake shepherd’s pie until beef mixture is bubbling, about 25 minutes. Remove from oven.

Place a rack in upper third of oven and turn broiler to high. Broil until top begins to brown, 1 to 2 minutes.

Sprinkle with remaining 1 tablespoon of parsley. Let cool 10 minutes before serving.

Sweet and smoky, this melt-in-your-mouth chicken is seasoned with brown sugar and applewood spice, wrapped in bacon, then baked until caramelized to perfection.  A flavorful dinner that’s easy enough to make any night of the week! We love bacon, and it always seems we have chicken for dinner, so I wanted to try this combination.  Our Smoky Applewood Rub is terrific, and I hoped it was pair nicely with the brown sugar.  Oh my goodness, it was so delicious!  The flavors melded together beautifully, and I can assure you that this meal is now part of my monthly dinner rotation.

  • 4 boneless skinless chicken breasts
  • 12 slices bacon
  • ½ cup brown sugar
  • 2 tablespoons Smoky Applewood Rub
  • ¼ teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 tablespoon flat parsley, chopped for garnish

Instructions

Preheat oven to 375°F/190⁰C.

Combine brown sugar, Smoky Applewood Rub, salt and pepper in small bowl. 

Rub half of the mixture all over the chicken breasts.

Wrap  three slices of bacon (two if using smaller pieces of chicken) around each piece of chicken.

Place chicken in Enameled Cast Iron Skillet.  Top with the remaining applewood-brown sugar mixture. Bake for 25-35 minutes, basting with pan drippings occasionally, until the bacon is nicely browned, and the internal temperature of the chicken reaches 165°F/75⁰C.

You may broil for an additional 2-3 minutes if you prefer crispier bacon.  Garnish with freshly chopped parsley and serve immediately.

Simplify dinner! This Easy-Peasy Meatloaf recipe takes the hassle out of cooking. Quick, simple, and delicious—perfect for busy families!

I love a good meatloaf, so when I came across this recipe from Dan over at Mantitlement, it sounded like something I would like to try. You can learn more about Dan here. This meatloaf was outstanding! I was a little hesitant with the glaze, as I have never used sweet chili sauce for a meatloaf before, but I’m so glad I followed this recipe to the letter. The glaze really made the meatloaf, which was already perfect, even more delicious.

Ingredients

For the Meatloaf

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 large onion (1 1/2 cups diced)
  • ¼ cup tomato paste
  • 2 ½ pounds meatloaf mix or ground beef
  • 2 ½ teaspoons kosher salt, to taste
  • Fresh ground black pepper, to taste
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons spicy brown mustard
  • 1 cup Panko breadcrumbs
  • 2 eggs, beaten
  • ¼ cup chopped fresh parsley
  • 1 ½ teaspoon garlic powder
  • 1 ½ teaspoons dried basil

For the Glaze:

  • 1 cup ketchup
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • 2 tablespoons brown sugar

Instructions

Preheat oven to 400°F/200⁰C.

Chop onions and parsley; set parsley aside.

Add one tablespoon EACH butter and olive oil to skillet over medium heat until butter is melted.  Add onion and cook until softened, about 5-7 minutes.

Stir in tomato paste and remove from heat.  Allow to cool.

Add all the meatloaf ingredients (including the cooled tomato-onion mixture) to the Deluxe Stand Mixer. Using the paddle attachment, select MIX and adjust the time to 45 seconds. Press Start.

For the Glaze:

Whisk together all of the glaze ingredients until combined.

Place meatloaf into Stone Loaf Pan. Brush half of the glaze on the meatloaf.

For the Meatloaf

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 large onion 1 1/2 cups diced
  • ¼ cup tomato paste
  • 2 ½ pounds meatloaf mix or ground beef
  • 2 ½ teaspoons kosher salt to taste
  • Fresh ground black pepper to taste
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons spicy brown mustard
  • 1 cup Panko breadcrumbs
  • 2 eggs beaten
  • ¼ cup chopped fresh parsley
  • 1 ½ teaspoon garlic powder
  • 1 ½ teaspoons dried basil

For the Glaze:

  • 1 cup ketchup
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • 2 tablespoons brown sugar

Instructions

  • Preheat oven to 400°F/200⁰C.
  • Chop onions and parsley; set parsley aside.
  • Add one tablespoon EACH butter and olive oil to skillet over medium heat until butter is melted. Add onion and cook until softened, about 5-7 minutes.
  • Stir in tomato paste and remove from heat. Allow to cool.
  • Add all the meatloaf ingredients (including the cooled tomato-onion mixture) to the Deluxe Stand Mixer. Using the paddle attachment, select MIX and adjust the time to 45 seconds. Press Start.
  • Place meatloaf into Stone Loaf Pan.
  • For the Glaze:
  • Whisk together all of the glaze ingredients until combined. Brush half of the glaze on the meatloaf.
  • Bake for 35 minutes; remove from oven, brush on remaining glaze.
  • Bake an additional 20-25 minutes, or until fully cooked to 160°F/71°C.

Notes

To freeze leftovers, slice into individual portions.  Wrap in aluminum foil or place in airtight container and store up to three months in the freezer.

Craving comfort? This Gołąbki Beef & Cabbage Casserole is a hug on a plate! I adapted this from the wonderful Platter Talk! This scrumptious Golumpki recipe is SO much less involved by deconstructing the cabbage roll and making it into a casserole.

For this recipe, I used my Deep Covered Baker:

Let’s jump right in!

Ingredients

  • ½ head of cabbage, medium
  • 2.5 lbs.  lean ground beef 
  • 8 slices bacon cooked and chopped into pieces
  • One white onion
  • ½ cup Italian breadcrumbs
  • ⅔ cup white rice cooked and cooled
  • 2 eggs 
  • 33-ounces condensed tomato soup
  • Salt and pepper to taste

Instructions

Cook rice according to directions. Set aside and allow it to cool.  Cook bacon, cool and chop it into pieces; set aside.

Preheat oven to 375°F/190°C.

Shred cabbage and set aside.

Combine beef, bacon, onion, breadcrumbs, rice, and eggs in a large bowl, mixing with hands until fully incorporated.

Place half of the cabbage on the bottom of the Deep Covered Baker. Top with the beef mixture, then the rest of the cabbage.

Pour the tomato soup on top and spread all over the casserole. Cover with lid and bake 90 minutes.  Remove lid and bake an addition 15 minutes. Serve immediately.

Indulge in savory pulled pork, bathed in an irresistibly delicious Jack Daniel’s sauce. Savor the flavor and elevate your slider game! This is not only a fabulous recipe for the Superbowl, but also a great meal prep recipe.  You can make the pork, and freeze some of it without any sauce for a different use (tacos, quesadillas, etc.).

The pork is very hands off since it’s baked in the oven.  I did not cover the Jack Daniel’s Sauce recipe in this video (but it is listed below), but I did over here. For this recipe, I used my Deep Covered Baker and Smoky Applewood Rub:

No need to use wood chips on the grill to get this delicious sweet and smoky flavor of natural applewood, garlic and chili peppers. Perfect for seasoning ribs, pork chops, tenderloin and burgers. 2.5 oz. Gluten-free.

For the Pork

  • 4 lb. Pork shoulder
  • ½ cup brown sugar
  • 2 tablespoons Smoky Applewood Rub
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

For the Jack Daniel’s Sauce

  • 1 bulb garlic
  • 1 tablespoon olive oil
  • 1 1/3 cup dark brown sugar
  • 1 cup pineapple juice
  • 2/3 cup water
  • ¼ cup teriyaki sauce
  • 1 tablespoon soy sauce
  • 3 tablespoons lemon juice
  • 3 tablespoons minced white onion
  • 1 tablespoon bourbon whiskey
  • 1 tablespoon crushed pineapple
  • ¼ teaspoon cayenne pepper

For the Sliders

28-32 slider rolls

Instructions

For the Pulled Pork

Preheat oven to 325⁰ F/165 ⁰ C.

Combine brown sugar, Smoky Applewood Rub, salt, and pepper in small bowl. 

Rinse and pat dry the pork shoulder. Score the fat cap on the pork. Rub the Smoky Applewood mixture all over the pork shoulder. Place in Deep Covered Baker and cover with lid. Bake for three hours, or until thermometer inserted into the thickest portion registers between 200⁰ F/205 ⁰F (93⁰CF/96⁰C).

Remove from oven and allow to rest for 30 minutes, then shred.

For the Jack Daniel’s Sauce (to see Video, click here)

Preheat oven to 325⁰ F/165 ⁰ C.

Cut off the very top of the garlic bulb, so that you can see some of the garlic.  Place bulb in small cast iron pan or baking dish, trimming root if needed for bulb to sit flat.  Drizzle with olive oil, cover with aluminum foil. Bake for one hour, until cloves are soft and fragrant. 

Remove from oven, set aside until slightly cooled.  Squeeze bulb to remove cloves.  Set aside two teaspoons for this recipe; you can freeze remaining garlic for another recipe.

In saucepan, combine brown sugar, pineapple juice, water, teriyaki sauce and soy sauce, bring to a boil. 

Add in garlic, lemon juice, onion, bourbon whiskey, pineapple, and cayenne pepper, mixing to incorporate.  Simmer for 40 minutes, or until the liquid reduces by half.  The sauce should be thick; simmer up to 10 minutes longer if necessary.

For the Sliders

Shred pork with hands or Quick Shred. Mix pulled pork with Jack Daniels Sauce until combined. Warm slider rolls in 350°F/175⁰C oven for 5 minutes.

Scoop a nice portion of pulled pork onto the bottom of each slider roll. Serve immediately.

    The average amount of pulled pork per slider roll claims to be approximately 2 ½ heaping tablespoons. I do find that it depends on the type of slider roll used. You be the judge for yours, just remember if you make very generous potions, you may not have enough left for the remaining slider rolls.
