Perfectly seasoned, juicy and tender, these Pressure Cooker Chicken Thighs are one of the easiest weeknight recipes to pull together! I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. You can learn more about their membership here; this is a code I found online, as I believe the normal cost is $35/year, but this code looks like you can still get it for $20/year, which is great! I have found it to be extremely useful, although I have not yet taken advantage of their hotline – yet.

For this recipe, I used my Deluxe Multi Cooker:

Ingredients

  • 6 bone-in skin-on chicken thighs
  • 2 teaspoons freshly chopped thyme
  • 1 teaspoon smoked paprika
  • Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, sliced
  • 1 cup chicken broth
  • 2 sprigs fresh thyme
  • 2 tablespoons all-purpose flour

Instructions

Slice garlic and set aside.

Season chicken all over with chopped thyme, paprika, salt, and pepper.

Set Deluxe Multi Cooker to SEAR/HIGH, 15 minutes. Add oil to pot, then add in chicken thighs skin-side down. Sear 4 minutes per side until golden, then sear the other side for three minutes.  Sear chicken in batches as needed.  Remove chicken from pot.

Add the sliced garlic to the inner pot and cook until fragrant, 1 minute. Add chicken broth to inner pot, scraping any browned bits (fond) from the bottom of the pot; add in thyme sprigs.

Place the Deluxe Multi Cooker Steamer Basket inside the inner pot, then place the chicken inside the basket. Lock the lid, set to POULTRY, 12 minutes. Press button to start. Once timer goes off, allow pressure to release naturally.

Carefully remove chicken and basket. Remove thyme sprigs. Place back on SEAR.

Remove three tablespoons of the hot broth from the pot and add to the flour, whisking until smooth. Pour mixture into the pot, whisking constantly while mixture comes back to a simmer.  Cook until gravy is slightly thickened, approximately 5-6 minutes. Season to taste with salt and pepper. 

Pour some of the gravy over the chicken, and serve the rest on the side.

Creamy and buttery, these pressure cooker mashed potatoes are an easy-to-make side dish to serve at your Thanksgiving dinner, or anytime! For this recipe, I used my Deluxe Multi Cooker to cook the potatoes, and our Insulated Serving Bowl Set to keep them (and other sides) warm afterwards.  Here is the information on these two wonderful products:

Ingredients

  • 3 lbs. gold or russet potatoes, peeled and cut in half
  • 1 cup water
  • 1/2 cup butter (1 stick)
  • ½ cup heavy cream
  • Salt and pepper, to taste
  • Flat parsley, for garnish

Instructions

Peel potatoes, slice in half.

Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.

Cook on CUSTOM for 20 minutes, then release the pressure manually.

Stir in the cream, top with parsley and more salt and pepper to taste. Serve immediately, or keep warm up to two hours in Insulated Serving Bowl Set.

To prep ahead, peel and cut potatoes, store in container or zip-top bag with cold water enough to cover potatoes.  You can do this one day ahead, then proceed with the rest of the recipe when ready.

Tender, melt-in-your-mouth beef and veggies in a delicious gravy, this easy one-pot recipe is sure to be a family favorite!  I’ve seen many recipes for pot roast with wine, but I wanted to use the Guinness Stout I had leftover from a gathering, as I had used it in a beef stew and that had such a wonderful flavor. You can make this using a pressure cooker as well, which is great when you want a delicious dinner, but don’t want to wait eight hours.

Let’s jump right in!

Ingredients

  • 3-4 pounds chuck roast
  • 1 ½ teaspoons kosher salt or to taste
  • 1 teaspoon black pepper or to taste
  • 2 tablespoons olive oil
  • 1 teaspoon rosemary freshly chopped
  • 1 teaspoon thyme freshly chopped
  • 1 teaspoon Italian seasoning
  • 3 shallots finely chopped
  • 1 onion wedged
  • 3 cups carrots cut into thick chunks
  • 4 whole garlic cloves
  • 5 garlic cloves diced
  • ¼ cup tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 16 ounces Guinness Stout
  • 2 sprigs Rosemary
  • 1 Bay leaf
  • 3 tablespoons butter softened (for gravy)
  • 3 tablespoons all-purpose flour (for gravy)

Instructions

Peel garlic and dice 5 of the cloves. Wedge onion, finely chop shallots, peel and cut carrots; set aside.

Season Roast with salt and pepper on both sides. Add oil to the Rockcrok® Dutch Oven over high heat. Once oil is shimmering, add roast and sear for 3 minutes per side, or until nicely browned. Remove roast from Dutch oven and set aside.

Turn heat down to medium, and add in shallots, garlic, rosemary, thyme, and Italian seasoning. Sauté for 2 minutes. 

Add the tomato paste, stirring to incorporate.  Pour in the broth and Guinness, mixing to combine. 

Add all the other ingredients and roast to the Dutch Oven, EXCEPT the softened butter and flour.  Give a stir to combine. Cover Rockcrok with lid.

Set slow cooker to LOW for 8 hours, or HIGH for 4 hours.

Once cooking is complete, carefully remove chuck roast from the pot, and shred meat. Combine the butter and flour to make a paste, and stir into the stew if the gravy is not thick enough.  You may remove the Rockcrok® Dutch Oven from the Rockcrok®Digital Slow Cooker Stand to finish gravy on the stove top, if you prefer.

Remove the bay leaf and rosemary sprigs; serve over mashed potatoes.

Notes: 

To cook in the Deluxe Multi Cooker (Pressure Cooker), follow the same directions above, except you’ll be cooking using the inner pot of the Deluxe Multi Cooker. Set to BEEF/PORK for 60 minutes.

When the timer is up, press CANCEL. Press STEAM-RELEASE. Carefully remove chuck roast from the inner pot, and shred meat.  Continue with directions above.

  • 1 tsp Italian seasoning
  • 3 shallots finely chopped
  • 1 onion wedged
  • 3 cups carrots cut into thick chunks
  • 4 cloves garlic whole
  • 5 cloves garlic diced
  • ¼ cup tomato paste
  • 1 cup beef broth
  • 1 tbsp Worcestershire Sauce
  • 16 oz Guinness Stout
  • 2 sprigs rosemary
  • 1 bay leaf
  • 3 tbsp butter softened
  • 3 tbsp all-purpose flour

Instructions
 

  • Peel garlic and dice 5 of the cloves. Wedge onion, finely chop shallots, peel and cut carrots; set aside.
    3 shallots, 1 onion, 3 cups carrots, 4 cloves garlic, 5 cloves garlic
  • Season Roast with salt and pepper on both sides. Add oil to the Rockcrok®Dutch Oven over high heat. Once oil is shimmering, add roast and sear for 3 minutes per side, or until nicely browned. Remove roast from Dutch oven and set aside.
    3-4 lb chuck roast, 1 ½ tsp kosher salt, 1 tsp black pepper, 2 tbsp olive oil
  • Turn heat down to medium, and add in shallots, diced garlic, rosemary, thyme, and Italian seasoning. Sauté for 2 minutes. 
    1 tsp rosemary, 1 tsp thyme, 1 tsp Italian seasoning, 3 shallots, 5 cloves garlic
  • Add the tomato paste, stirring to incorporate.  Pour in the broth and Guinness, mixing to combine. 
    1/4 cup tomato paste, 1 cup beef broth, 1 tbsp Worcestershire Sauce, 16 oz Guinness Stout
  • Add all the other ingredients and roast to the Dutch Oven, EXCEPT the softened butter and flour.  Give astir to combine. Cover Rockcrok with lid.
    2 sprigs rosemary, 1 bay leaf
  • Set slow cooker to LOW for 8 hours, or HIGH for 4 hours.
  • Once cooking is complete, carefully remove chuck roast from the pot, and shred meat. Combine the butter and flour to make a paste, and stir into the broth/Guinness mixture, if the gravy is not thick enough.  You may remove the Rockcrok®Dutch Oven from the Rockcrok®Digital Slow Cooker Stand to finish gravy on the stove top, if you prefer.
    3 tbsp butter, 3 tbsp all-purpose flour
  • Remove the bay leaf and rosemary sprigs; serve over mashed potatoes.

Notes

To cook in the Deluxe Multi Cooker (Pressure Cooker), follow the same directions above, except you’ll be cooking using the inner pot of the Deluxe Multi Cooker. Set to BEEF/PORK for 60 minutes.
When the timer is up, press CANCEL. Press STEAM-RELEASE. Carefully remove chuck roast from the inner pot, and shred meat.  Continue with directions above.

You can certainly make this on the stove top, but I’ve adapted this to make it in our Deluxe Multi Cooker:

Ingredients

  • 5 cups red cabbage
  • 1 cup green apples
  • 3 tablespoon sugar
  • 2 tablespoons butter
  • ¼ cup apple cider vinegar
  • 3 tablespoons water
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cloves

Instructions

Shred cabbage and use apple wedger to wedge apple into slices. 

Add all ingredients to the inner pot of the Deluxe Multi Cooker, stirring to combine ingredients.

Close the lid, then set to CUSTOM, 5 minutes (high pressure). When the timer is up, press CANCEL and press STEAM RELEASE.

Serve immediately.

Copycat TGI Friday’s Jack Daniel’s Sauce with Baby Back Ribs – Pressure Cooker (Video)

Years ago, our family went to TGI Friday’s for a birthday event.  I had their baby back ribs with the delicious Jack Daniel’s Sauce and thought I had died and went to heaven.  It was that good to me!!  I had never made ribs before, because it honestly seemed like too much work.  I’ve finally got up my courage to give it a try, and figured out that I could make them in my Deluxe Multi Cooker, which is similar to an Instant Pot, except ours does quite a bit more than pressure cook, more about that below.  Once I found out that making ribs this way was a piece of cake, I decided to try and find a copycat recipe for that amazing sauce, and the one that I came across is an absolute GEM.  I mean, it is so similar that I really cannot tell the difference! I can make this at home, knowing exactly what ingredients I am putting into the recipe, plus saving money – what’s not to love?? 

This recipe comes from Michael DeLong over at Allrecipes.  As I understand it, folks can contribute their recipes there, and it looks like this may be his contribution.  I am SO glad he figured this out!!! 

Back to the Deluxe Multi Cooker that I used for the ribs, here’s some info on that:

Enough said, let’s jump right in!!

Ingredients

Jack Daniel’s Sauce

  • 1 bulb garlic
  • 1 tablespoon/15 mL olive oil
  • 1 1/3 cup/286 grams dark brown sugar
  • 1 cup/250 mL pineapple juice
  • 2/3 cup/150 mL water
  • ¼ cup/60 mL teriyaki sauce
  • 1 tablespoon/15 mL soy sauce
  • 3 tablespoons/45 mL lemon juice
  • 3 tablespoons/45 mL minced white onion
  • 1 tablespoon/15 mL bourbon whiskey
  • 1 tablespoon/15 mL crushed pineapple
  • ¼ teaspoon/1.25 mL cayenne pepper

Baby Back Ribs

  • 2-pounds/907 g baby back ribs
  • 1 tablespoon/15 mL olive oil
  • 3 tablespoons/45 mL Smoky Applewood Rub
  • 1 cup/250 mL water
  • ¼ cup/60 mL Apple Cider Vinegar

Instructions

For the Jack Daniel’s Sauce

Preheat oven to 325⁰ F/165 ⁰ C. Cut off the very top of the garlic bulb, so that you can see some of the garlic.  Place bulb in small cast iron pan or baking dish, trimming root if needed for bulb to sit flat.  Drizzle with olive oil, cover with aluminum foil. Bake for one hour, until cloves are soft and fragrant.  Remove from oven, set aside until slightly cooled.  Squeeze bulb to remove cloves.  Set aside two teaspoons for this recipe; you can freeze remaining garlic for another recipe.

In saucepan, combine brown sugar, pineapple juice, water, teriyaki sauce and soy sauce, bring to a boil. 

Add in garlic, lemon juice, onion, bourbon whiskey, pineapple and cayenne pepper, mixing to incorporate.  Simmer 40 minutes, or until the liquid reduces by half.  The sauce should be thick; simmer up to 10 minutes longer if necessary.

For the Baby Back Ribs

Remove the membrane from the back of the ribs if needed; this is the shiny piece that is sometimes there, you can easily remove it by cutting with a sharp knife, then pulling it off.

Pour oil all over the ribs, then add the Smoky Applewood, rubbing it into the ribs very well. 

Place rack into the bottom of the Deluxe Multi Cooker, then add the water and apple cider vinegar.  Place ribs around the rack in a circle, with the meaty portion facing outward, and cover.  Set to CUSTOM for 25 minutes.

When the timer is up, let the steam release naturally for around 5 minutes, then press STEAM-Release.  Carefully remove ribs from the inner pot. 

Set your oven to BROIL.  Place ribs on wire rack above sheet pan, then glaze ribs with some of the Jack Daniel’s sauce.

Broil for 2-4 minutes, be sure to watch carefully, until glaze begins to caramelize to your liking.

Remove ribs from oven, and serve with more sauce on the side.

That’s it!  These were melt-in-your-mouth perfection, the glaze was simply AMAZING.  I will definitely make this time an again, as the sauce can be used not only on ribs, but on chicken, salmon, and even veggies!  Please give this a try, and let me know how it turns out.  BE sure to also let Michael DeLong over at Allrecipes know how it came out, and tell him I said hello!
