Pillowy gnocchi and tender chicken in a deliciously creamy garlic sauce makes this dish an easy pick for dinner any night of the week! I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 ½ pounds skinless, boneless chicken breasts
  • 1 teaspoon kosher salt or to taste
  • Freshly ground black pepper to taste
  • 1 onion chopped
  • 4 cloves garlic diced
  • 1/3 cup dry white wine
  • 1 ¼ cup chicken stock 
  • 1 cup heavy cream
  • Zest and juice of 1 large lemon
  • 1 tablespoon rosemary freshly chopped
  • 1 tablespoon fresh thyme leaves
  • 1/8 teaspoon red pepper flakes or to taste
  • 1 (17-oz.) package refrigerated gnocchi 
  • 4 cups packed baby spinach
  • 2-ounces Parmesan freshly grated
  • Lemon slices, for serving (optional)

Instructions

Dice garlic and onion; chop rosemary and grate cheese, set all aside.

Slice Chicken in half with Close & Cut. Heat olive oil over medium-high heat in skillet. Season chicken on both sides with salt and black pepper and cook, turning occasionally, until golden, about 6 minutes per side. Transfer to a plate. 

Reduce heat to medium. Sauté onion, stirring occasionally, until softened, about 5 minutes. Add garlic and cook, stirring, until fragrant, about 1 minute more. Pour in wine and scrape up any browned bits from bottom of pan. Simmer, stirring occasionally, until wine is evaporated, 1 to 2 minutes. 

Add broth, cream, lemon zest, lemon juice, rosemary, thyme, and red pepper flakes, season with salt and black pepper to taste. Bring to a simmer, then stir in gnocchi and return chicken to skillet. Reduce heat to medium-low and simmer, stirring occasionally, until chicken is cooked through, 8 to 10 minutes. Remove chicken from skillet and transfer chicken to a cutting board. 

Add Parmesan and spinach to sauce and stir until spinach is wilted. Continue to simmer, stirring occasionally, until thickened, about 3 minutes.

Slice chicken and return it to the skillet. Top with lemon slices, if using, and serve immediately.

  • 2 tbsp extra virgin olive oil
  • 1 ½ lb skinless boneless chicken breast sliced in half if thick
  • 1 tsp kosher salt or to taste
  • ½ tsp Freshly Ground Black Pepper to taste
  • 1 onion diced
  • 4 cloves garlic diced
  • cup dry white wine
  • 1 ¼ cups chicken stock
  • 1 cup heavy cream
  • 1 large lemon juiced and zested
  • 1 tbsp rosemary freshly chopped or 1 tsp dried
  • 1 tbsp thyme leaves fresh or 1 tsp dried
  • tsp red pepper flakes or to taste
  • 17 oz gnocchi refrigerated
  • 5 oz baby spinach
  • 2 oz Parmesan cheese freshly grated, plus more for serving
  • 1 lemon sliced, for serving, optional

Instructions
 

  • Dice garlic and onion; chop rosemary and grate cheese, set all aside.

Chicken Gnocchi Soup – Creme De La Crumb (Video)

**This is an updated post from a while back.  Since it is definitely soup season where I live, I thought I would share again, with a newer video. **

So, I’ve heard a lot about how wonderfully delicious Olive Garden’s Chicken Gnocchi Soup tastes.  I personally had never had chicken gnocchi soup and tell I made it the other day using this wonderful recipe from Tiffany over at https://www.lecremedelacrumb.com/. You can learn more about Tiffany here.

I checked out her blog briefly, and will definitely be heading back there to try out a few more recipes. This one is definitely a keeper, it has everything I love in it: chicken, gnocchi, cream and spinach.  I changed the recipe only slightly, and that I shredded my chicken instead of cooking it and dicing it. I’m sure that way is absolutely fine, but I was lazy and making shredded chicken is so easy in our Multi Cooker!

Let’s jump right in!

Ingredients:

  • 3 boneless skinless chicken breasts
  • 1 cup water
  • 1/2 cup carrots, diced
  • 1 stalk celery
  • 1/2 white onion
  • 2 garlic cloves
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 tsp thyme
  • 16 oz. Potato gnocchi
  • 1 ½ cups heavy cream
  • ½ cup milk
  • 1 cup baby spinach

Instructions

Place chicken in Deluxe Multi Cooker with 1 cup water, set to CUSTOM, 10 minutes. Press button to start. Once timer goes off, release pressure and shred chicken.

Dice carrots, onion and celery.  Peel and chop garlic.

Heat olive oil in 4-quart sauce pan over medium heat. Add celery, onions, garlic and carrots. Sauté for 2-3 minutes.

Next, add chicken broth, salt, pepper and thyme.  

Bring to a boil, then add gnocchi.  Boil for another 3-4 minutes, then reduce heat and simmer for another 10 minutes.

Add cream and milk; stir. Add in 1 cup of fresh baby spinach. Let this cook for 1-2 minutes more. 

Add the shredded chicken, stirring to incorporate.  Serve immediately.

Sheet-Pan Burrata Caprese Gnocchi – Delish (Video)

Gnocchi and burrata – what a wonderful combination! This is one of the new recipes I received in my quarterly Delish magazine, and it is definitely a keeper. Adding in the colorful peppers made this a beautiful dish to present to the family, and roasting the gnocchi gave it a lovely crisp outer layer. Topping off with the burrata and the balsamic glaze made it perfection. Let’s jump right in!

Ingredients

  • 4 red, orange, or yellow bell peppers, roughly chopped
  • 1 (12-oz.) package fresh gnocchi
  • 3 cloves garlic
  • 3 tbsp. extra-virgin olive oil, divided
  • Kosher salt
  • Freshly ground black pepper
  • Pinch crushed red pepper flakes
  • 4 oz. burrata, torn into pieces
  • 1/2 c. fresh basil leaves, torn
  • 1 1/2 tbsp. balsamic glaze (1/4 c. balsamic vinegar simmered for about 10 minutes)

Instructions

Preheat oven to 425⁰.

Peel and chop garlic, dice peppers into chunks. 

Combine 12-ounces gnocchi, peppers, garlic, 2 tablespoons oil, salt, black pepper and red pepper to taste.

Bake for 30 minutes, turning halfway through until peppers are softened and gnocchi is beginning to brown.

Meanwhile, simmer ¼ cup balsamic vinegar until reduced to about 1 ½ tablespoons.  This should take around 10 minutes.  Remove sheet pan from oven.  Add torn burrata and basil, then drizzle with balsamic glaze.

That’s it!  What an easy and beautiful weeknight dinner.  Please let me know if you try this and what you think.  I loved it, and want to try to make something similar, with a few changes to the ingredients, switching out cherry tomatoes for the peppers.
