Air Fryer Peach Cobbler Egg Rolls – Chenée Today (Video)

Juicy and sweet peaches cooked to perfection, then wrapped in egg rolls are the perfect handheld treat that’s so easy to make in the air fryer! This is a crowd-pleasing dessert you’ll want to have on repeat!

I found this wonderful recipe over at Chenée Today. You can learn more about Chenée here, I LOVE her blog! She has a lot of great recipes and a great section called “Beginner Friendly”. I am sure you all will enjoy it, so head on over and say hello!

I made two changes to this recipe. The first is that I added mascarpone cheese to the filling. I like to add this, because a fruit filling can be quite juicy, and the mascarpone helps to hold it together nicely. Also, it tastes delicious when coupled with the peaches! You could use cream cheese if you prefer, or skip it altogether.

The other change I made to this recipe was how I cooked it. Of course, I had to use my handy-dandy Deluxe Air Fryer! I love that I can take a dessert like this, and cook it in a way that is healthier, while still getting that “crunch” you would get by deep frying. They were seriously so delicious; I may have eaten most all of them this time around. Oh well, guess I’ll just have to make more!

Enough said, let’s jump right in!!

Ingredients

  • 2 cups chopped peaches
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons butter
  • ½ cup brown sugar
  • 4 tsp cornstarch
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • 12 egg roll wrappers
  • 2/3 cup mascarpone cheese OR cream cheese, softened
  • water to brush around edges of wrappers
  • 3 tablespoons MELTED butter (for brushing wrappers)
  • powdered sugar for sprinkling

Vanilla Dipping Sauce

  • ¾ cup powdered sugar
  • ½ teaspoon vanilla bean paste or vanilla extract
  • 2-3 tablespoons milk
  • Pinch of salt

Instructions

Peel and chop peaches. Press lemon for one tablespoon lemon juice.  Freeze the rest of the juice for future use.

Combine first six ingredients in skillet or saucepan over medium heat, stirring often.  Bring to a boil, then turn down heat and simmer for 8-10 minutes, until sauce has thickened slightly.  Remove from heat, add vanilla, stirring to incorporate, and let cool.

Once cooled, begin to make egg rolls.  Add one tablespoon of the mascarpone cheese to the egg roll, spreading to cover the middle. Top the cheese with two tablespoons of the peach mixture.  Brush edges of wrapper with water, then fold opposite corners to the middle, fold top side over, then roll.  (See photos and my video). 

Once all are rolled, brush egg rolls all over with melted butter, and place on air fryer racks.

Air Fry at 390⁰ F/200⁰ C for 14 minutes, switching trays at the halfway mark. 

Meanwhile make the vanilla dipping sauce:

Combine powdered sugar, vanilla milk and pinch of salt, whisking well. 

Once egg rolls are cooked, remove from Air Fryer. Sprinkle with powdered sugar.  Serve with dipping sauce on the side.

Tomato Gnocchi Kebabs – Delish (Video)

Cooked to perfection in the air fryer, this recipe brings together gnocchi, tomatoes and red onions to create a delicious appetizer to level up your next get together! You can accompany it with the delicious Salsa Verde below, or simply add some basil to it. Either way, I know you will love this easy appetizer from Delish. I’ve shared this before about my Delish subscription, but it’s worth sharing again.

I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. You can learn more about their membership here; this is a code I found online, as I believe the normal cost is $35/year, but this code looks like you can still get it for $20/year, which is great! Ingredients

For The Salsa Verde

  • 1/4 c. fresh parsley
  • 1/4 c. fresh basil
  • 1/4 c. extra-virgin olive oil
  • 2 tsp. capers
  • 1 tbsp. fresh lemon juice
  • 2 anchovy fillets
  • 1 clove garlic
  • Kosher salt

For The Kebabs

  • 1 (12-oz.) package fresh gnocchi
  • 2 pt. cherry tomatoes
  • 2 small red onions, cut into 2″ pieces
  • 2 tbsp. extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper

Instructions

Combine Gnocchi, tomatoes, red onion, olive oil, salt and pepper in large bowl, stirring until well coated. 

Thread pieces onto skewers, then snap into place on skewer rotisserie; secure in Air Fryer. Set to ROTISSERIE for 12 minutes.

Make the Salsa Verde: In a food processor, combine parsley, basil, oil, capers, lemon juice, anchovies, and garlic. Blend until smooth, season to taste with salt, and chill until ready to serve.

Transfer the kebabs to a platter, drizzle with Salsa Verde and serve.

Air Fryer Sweet & Crispy Tortilla Chips (Video)

Crispy and sweet, these air fryer tortilla chips are the perfect snack, and they go especially well with chocolate chip cannoli dip recipe, check out that video I just released here.

The original directions called for you to bake them, which is fine. Except, it’s 90 degrees, and I really didn’t want to turn my oven on, so I decided to give this a try using the air fryer. They were so much better tasting this way, I will NEVER go back to making them in the oven ever again.

I used the Pampered Chef Air Fryer to make the tortilla chips, and they were SO crunchy! I am definitely going to try this again with the tortillas, except I will use our Chili Lime seasoning to make them savory. Here’s some info on what is one of my all-time FAVORITE products:

Ingredients

1 package (16-oz) large flour tortillas

1 stick butter, melted

1/2 cup granulated sugar

2 tablespoons cinnamon

Instructions

Melt butter in the large Silicone Prep Bowl. Mix the sugar and cinnamon together, whisking well to combine.

Use Pizza Cutter to slice tortillas into triangles. Brush butter onto both sides of the tortillas, or do it the easier way by placing them in the Silicone Prep Bowl you melted the butter in, replace the lid, and shake until they are fully coated with butter. Remove lid, sprinkle with some of the cinnamon sugar, replace lid and shake again.

Place tortillas and air fryer trays, sprinkling with leftover sugar any that may have been missed (or if you just want more!). Air fry 4-6 minutes, switching trays halfway through. Serve with Chocolate Chip Cannoli Dip.

Air Fryer Chicken Kebabs – Middle Eastern Style – Once Upon a Chef (Video)

Searching for chicken kebab recipes, I found this one from Jenn over at Once Upon a Chef.  You can learn more about Jenn here, and I would encourage you to visit her blog, especially as she is a classically-trained chef who appears to have some really delicious recipes. 

I decided to give this a try skewers in the Deluxe Air Fryer, and it was a big hit!!  I love my Air Fryer for so many things, including desserts (check out my air fryer beignets here) but I do enjoy using the rotisserie basket, the spit (I made Peruvian chicken) and especially our air fryer skewers!  Here is some info on our Air Fryer:

Back to our kebabs – the flavors were really terrific!  This was my first time marinating any kind of meat in yogurt, and I found the chicken to be perfectly tender and juicy.  I found an article from Bon Appetit, which explains what a yogurt marinade does for meats.  Here is an excerpt: 

Yogurt tenderizes meat much more gently and effectively than regular marinades. While acidic vinegar- or citrus-based marinades can toughen proteins like chicken breast to a rubbery consistency, yogurt slowly tenderizes them, resulting in meat that can practically be pulled apart by hand. Yogurt marinades are highly effective when left on proteins for an elongated period of time (in the 12 hour ball park), but they work well in short-term scenarios too.

We found it to be crispy on the outside, while still tender and juicy on the inside, and the flavors were delectable, without being over-the-top spicy, even with a full teaspoon of red pepper.  Even my picky eaters loved it, so it’s a keeper for our family to be sure.  Enough said, let’s jump right in!

Ingredients

  • 1 cup plain whole milk Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons paprika
  • ½ teaspoon cumin
  • ⅛ teaspoon cinnamon
  • 1 teaspoon red pepper flakes
  • Zest from one lemon
  • 2 tablespoons lemon juice
  • 1¾ teaspoons salt
  • ½ teaspoon freshly ground black pepper
  • 5 garlic cloves, pressed
  • 2½ to 3 pounds boneless skinless chicken thighs, cut into 1½-inch pieces
  • 1 large red onion, cut into 1-inch chunks

Instructions

Zest and juice one lemon, Press garlic and chop onion.

In a small bowl, combine the yogurt, olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic. Mix well. 

Thread the chicken onto air fryer skewers, alternating with the red onions. Brush the marinade all over the meat, coating well. Place in reusable bag and refrigerate at least eight hours or overnight.

Remove from bag and snap into place on skewer rotisserie.  Set to ROTISSERIE for 20 minutes, press button to Start.

When timer is up, remove from Air Fryer with rotisserie tool.  Serve immediately.

  • In a small bowl, combine the yogurt,olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic. Mix well. 
  • Thread the chicken onto air fryer skewers,alternating with the red onions. Brush the marinade all over the meat, coating well. Place in reusable bag and refrigerate at least eight hours or overnight.
  • Remove from bag and snap into place on skewer rotisserie.  Set to ROTISSERIE for 20 minutes, press button to Start.
  • When timer is up, remove from Air Fryer with rotisserie tool.  Serve immediately.

Lazy Man Golumpki, aka Cabbage and Beef Casserole – Platter Talk

I first fell in love with golumpki (or galumpki OR golabki), when I was about eight and a half months pregnant with my daughter. Why, yes, it’s the same daughter who forced me when I was pregnant to go out in a blizzard for cheesecake

My best friend Debbie’s mom, Evelyn, made cabbage rolls for my baby shower. I was in absolute heaven! They were so delicious, and I really wanted to learn how to make them. However, when I heard how long it took to actually make them, I never even tried. I would just wait for special occasions for my friend’s mom to make them, and if I could have hidden some away to bring home, I definitely would have done that.

However, as the years went by, I thought about it and really hoped there might be an easier way to do this. I have been cooking for a long time now so I thought I would at least look up some recipes and try to figure this out.

My research is how I discovered the wonderful Food and Recipe blog Platter Talk! This scrumptious Golumpki recipe is SO much less involved by deconstructing the cabbage roll, and making it into a casserole. Platter Talk was created by Dan and Scott, but I think this particular recipe is from Scott, as it says that he is heavily influenced by his Polish heritage. This recipe was so easy to make, and I am definitely looking forward to going back to their site to find even more tasty recipes.

Let’s jump right in!

What you’ll need:

  • One head of cabbage, medium
  • 2 1/2 lbs lean ground beef 
  • 1/2 lb bacon
  • One white onion
  • 1/2 cup Italian breadcrumbs
  • 1/2-3/4 cup cooked white rice
  • 1-2 eggs 
  • One family size can and one 10 ounce can of tomato soup
  • Salt and pepper to taste

First, preheat your oven to 375 degrees. Cook the rice, and allow it to cool. I used my Rice Cooker so I didn’t have to think about it. Super easy!

I used the Rapid-Prep Mandoline to shred the cabbage. Doing it this way made prepping this recipe even easier!

Next, cook 1/2 pound of bacon. For this, I used the Air Fryer. It was done in 11 minutes. 

Once it cooled, I used my Shears to chop it.

I also used the Rapid-Prep Mandoline to dice the onion.

Combine the beef, bread crumbs, onion, bacon, rice, eggs, salt and pepper in a large bowl. You can use one egg to start, but I’ve made this a few times and I always end up using both eggs.

Now let’s put it together! I used a 9×13 Rectangular Baker, and placed a layer of the shredded cabbage to completely cover the bottom of the Baker.

Next add the meat mixture on top of the shredded cabbage.

Add another layer of cabbage to completely cover the meat.

Finally, add the one family size can of tomato soup, spreading with a scraper to cover the cabbage. You can use the smaller can halfway through the baking to add more soup if you feel you need to.

Cover with foil, and bake for 1 hour 45 minutes, up to two hours.

That’s it! I love how Platter Talk set up this recipe and help me to be able to throw this together and finally enjoy my very own golumpki, even if they aren’t rolled up! Please let me know if you make this, and what you think about this recipe.  I hope that you love this as much as my family did!
