Air Fryer Apple Pie Bombs – I Am Baker (Video)

While I am more of a meat and potatoes girl, I do love just about every kind of apple dessert.  I am a HUGE fan of Amanda over at I Am Baker!!  You can learn more about Amanda here, and I can tell you the joy she has for baking comes through in all of here recipes.

Ingredients

For the apple pie filling

  • 5 medium Granny Smith apples, peeled, cored, sliced and diced into chunks
  • 3 tablespoons water
  • 3 tablespoons unsalted butter, brought to room temperature
  • ½ cup granulated sugar
  • 2 teaspoons cinnamon
  • 1.5 tablespoons cornstarch
  • ¼ teaspoon nutmeg

For the apple pie bombs

  • ¾ cup granulated sugar
  • 3 teaspoons apple pie spice
  • 1 8-ounce can of Pillsbury Grands Biscuits NOT flaky layers
  • 1 cup apple pie filling (above)
  • 1 teaspoon cinnamon
  • ½ cup (one stick) unsalted butter, melted

Instructions

For the apple pie filling:

Peel, core and dice apples.

In a saucepan over medium-high heat, combine apples and water, cooking for six minutes, giving a stir every so often.  Add butter, then stir to incorporate. 

Meanwhile, combine sugar, cinnamon, cornstarch and nutmeg, whisking well. Add mixture to the apples and butter, stirring constantly until sauce is thick, approximately two minutes.  Remove from heat, and set aside. 

For the apple pie bombs:

Separate each biscuit into two pieces, then use your rolling pin to roll each into a 4-inch circle.  

Combine 1 cup of the apple pie filling with 1 teaspoon of cinnamon.  Using small scoop, fill center of biscuit with one tablespoon of the filling.  Pinch to seal each biscuit and form into balls.

Use kitchen spritzer to lightly spray air fryer trays with oil, then place eight apple pie bombs onto each tray. Bake at 350°F/175⁰C for 8-9 minutes, or until golden brown.

While they are baking, combine sugar and apple pie spice, and place in one of the coating trays.  Melt butter, then place in another coating tray. 

Once they are finished baking, roll first in the melted butter, then in the sugar mixture to coat. Serve immediately.

Sweet apple filling hidden inside biscuit dough creates these amazingly easy-to-make Air Fryer Apple Pie Bombs !

Ingredients

Ingredients

  • 4 lb. whole chicken
  • 2 tbsp olive oil
  • ½ lime, juiced
  • 2 tsp sugar
  • 1.5 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp ground oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 garlic cloves, pressed

For the Peruvian Green Sauce

  • ½ bunch cilantro with stems
  • 1 jalapeno, seeds removed
  • 2 garlic cloves, pressed
  • ¼ cup grated Parmesan cheese
  • 1 tbsp white vinegar
  • ¼ tsp salt, or to taste
  • ½ cup Greek yogurt OR mayonnaise

Instructions

To make the Peruvian Green Sauce:

Add all ingredients in Manual Food Processor and pulse until combined. Chill until ready to serve.

To make the Peruvian Chicken:

Pat chicken dry with a paper towel, place on cutting board.

Add remaining ingredients in Manual Food Processor and pulse until combined. Coat chicken with the mixture. 

Tie the legs together with a 12″ (30-cm) piece of cooking twine. Tie the wings against the breasts with a 24″ (61-cm) piece of twine. Insert the Deluxe Air Fryer spit though the legs where they are tied together and through the cavity, centering the bird on the spit. Insert the forks securely into the chicken and tighten the screws.

Turn the wheel to select the ROTISSERIE setting; press the wheel to select. Turn the wheel to adjust the time to 45 minutes. Press the wheel to start.

When the timer is up, use the retrieval tool to remove the spit. Cook until the internal temperature reaches 165°F (74°C), adding more time, if needed.

Air Fryer Peach Cobbler Egg Rolls – Chenée Today (Video)

Juicy and sweet peaches cooked to perfection, then wrapped in egg rolls are the perfect handheld treat that’s so easy to make in the air fryer! This is a crowd-pleasing dessert you’ll want to have on repeat!

I found this wonderful recipe over at Chenée Today. You can learn more about Chenée here, I LOVE her blog! She has a lot of great recipes and a great section called “Beginner Friendly”. I am sure you all will enjoy it, so head on over and say hello!

I made two changes to this recipe. The first is that I added mascarpone cheese to the filling. I like to add this, because a fruit filling can be quite juicy, and the mascarpone helps to hold it together nicely. Also, it tastes delicious when coupled with the peaches! You could use cream cheese if you prefer, or skip it altogether.

The other change I made to this recipe was how I cooked it. Of course, I had to use my handy-dandy Deluxe Air Fryer! I love that I can take a dessert like this, and cook it in a way that is healthier, while still getting that “crunch” you would get by deep frying. They were seriously so delicious; I may have eaten most all of them this time around. Oh well, guess I’ll just have to make more!

Ingredients

  • 2 cups chopped peaches
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons butter
  • ½ cup brown sugar
  • 4 tsp cornstarch
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • 12 egg roll wrappers
  • 2/3 cup mascarpone cheese OR cream cheese, softened
  • water to brush around edges of wrappers
  • 3 tablespoons MELTED butter (for brushing wrappers)
  • powdered sugar for sprinkling

Vanilla Dipping Sauce

  • ¾ cup powdered sugar
  • ½ teaspoon vanilla bean paste or vanilla extract
  • 2-3 tablespoons milk
  • Pinch of salt

Instructions

Peel and chop peaches. Press lemon for one tablespoon lemon juice.  Freeze the rest of the juice for future use.

Combine first six ingredients in skillet or saucepan over medium heat, stirring often.  Bring to a boil, then turn down heat and simmer for 8-10 minutes, until sauce has thickened slightly.  Remove from heat, add vanilla, stirring to incorporate, and let cool.

Once cooled, begin to make egg rolls.  Add one tablespoon of the mascarpone cheese to the egg roll, spreading to cover the middle. Top the cheese with two tablespoons of the peach mixture.  Brush edges of wrapper with water, then fold opposite corners to the middle, fold top side over, then roll.  (See photos and my video). 

Once all are rolled, brush egg rolls all over with melted butter, and place on air fryer racks.

Air Fry at 390⁰ F/200⁰ C for 14 minutes, switching trays at the halfway mark. 

Meanwhile make the vanilla dipping sauce:

Combine powdered sugar, vanilla milk and pinch of salt, whisking well. 

Once egg rolls are cooked, remove from Air Fryer. Sprinkle with powdered sugar.  Serve with dipping sauce on the side.

Tomato Gnocchi Kebabs – Delish (Video)

Cooked to perfection in the air fryer, this recipe brings together gnocchi, tomatoes and red onions to create a delicious appetizer to level up your next get together! You can accompany it with the delicious Salsa Verde below, or simply add some basil to it. Either way, I know you will love this easy appetizer from Delish. I’ve shared this before about my Delish subscription, but it’s worth sharing again.

I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. Ingredients

For The Salsa Verde

  • 1/4 c. fresh parsley
  • 1/4 c. fresh basil
  • 1/4 c. extra-virgin olive oil
  • 2 tsp. capers
  • 1 tbsp. fresh lemon juice
  • 2 anchovy fillets
  • 1 clove garlic
  • Kosher salt

For The Kebabs

  • 1 (12-oz.) package fresh gnocchi
  • 2 pt. cherry tomatoes
  • 2 small red onions, cut into 2″ pieces
  • 2 tbsp. extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper

Instructions

Combine Gnocchi, tomatoes, red onion, olive oil, salt and pepper in large bowl, stirring until well coated. 

Thread pieces onto skewers, then snap into place on skewer rotisserie; secure in Air Fryer. Set to ROTISSERIE for 12 minutes.

Make the Salsa Verde: In a food processor, combine parsley, basil, oil, capers, lemon juice, anchovies, and garlic. Blend until smooth, season to taste with salt, and chill until ready to serve.

Transfer the kebabs to a platter, drizzle with Salsa Verde and serve.

For the Kebabs

  • 1 (12-oz.)package fresh gnocchi

  • 1 garlic clove
  • kosher salt and pepper, to taste

Instructions
 

  • Combine Gnocchi, tomatoes, red onion, olive oil, salt and pepper in large bowl,stirring until well coated.  Thread pieces onto skewers, then snap into place on skewer rotisserie; secure in Air Fryer.  Set to ROTISSERIE for 12 minutes.
  • Make the Salsa Verde: In a food processor, combine parsley, basil, oil, capers, lemon juice, anchovies, and garlic. Blend until smooth, season to taste with salt, and chill until ready to serve.
  • Transfer the kebabs to a platter, drizzle with Salsa Verde and serve.

Air Fryer Sweet & Crispy Tortilla Chips (Video)

Crispy and sweet, these air fryer tortilla chips are the perfect snack, and they go especially well with chocolate chip cannoli dip recipe, check out that video I just released here.

The original directions called for you to bake them, which is fine. Except, it’s 90 degrees, and I really didn’t want to turn my oven on, so I decided to give this a try using the air fryer. They were so much better tasting this way, I will NEVER go back to making them in the oven ever again.

I used the Pampered Chef Air Fryer to make the tortilla chips, and they were SO crunchy! I am definitely going to try this again with the tortillas, except I will use our Chili Lime seasoning to make them savory. Here’s some info on what is one of my all-time FAVORITE products:

These chips are so easy to make, I’m sure you will love them, and hopefully try to make them in a variety of flavors. If you do, please let me know. Okay, let’s jump right in!

Ingredients

1 package (16-oz) large flour tortillas

1 stick butter, melted

1/2 cup granulated sugar

2 tablespoons cinnamon

Instructions

Melt butter in the large Silicone Prep Bowl. Mix the sugar and cinnamon together, whisking well to combine.

Use Pizza Cutter to slice tortillas into triangles. Brush butter onto both sides of the tortillas, or do it the easier way by placing them in the Silicone Prep Bowl you melted the butter in, replace the lid, and shake until they are fully coated with butter. Remove lid, sprinkle with some of the cinnamon sugar, replace lid and shake again.

Place tortillas and air fryer trays, sprinkling with leftover sugar any that may have been missed (or if you just want more!). Air fry 4-6 minutes, switching trays halfway through. Serve with Chocolate Chip Cannoli Dip.
