Air Fryer Cherry Puff Pastry Pies – Delish (Video)

Easy to make and oh-so-delicious, this Cherry Puff Pastry Hand Pies recipe is simply puff pastry filled with homemade cherry pie filling, and you can make them even faster in the Air Fryer!

I found this recipe on Delish. I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership beginning over a year or so ago, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. You can learn more about their membership here; this is a code I found online, as I believe the normal cost is $35/year, but this code looks like you can still get it for $20/year, which is great! I have found it to be extremely useful, although I have not yet taken advantage of their hotline – yet.

One thing about this recipe is that it seems the amount used for fresh cherries may be off – they have listed to substitute ¼ cup fresh cherries for 12 ounces frozen – that did not seem right at all.  I used the same number of fresh cherries as frozen, and it was perfect!

Ingredients

  • 12 oz. bag frozen cherries (or fresh cherries, pitted and stemmed)
  • 1/2 c. granulated sugar
  • 1 tsp. fresh lemon juice
  • 1/8 tsp. salt
  • 1 1/2 tbsp. cornstarch
  • 1 1/2 tbsp. room temperature water
  • 1 tsp. vanilla extract
  • 1 box (2 sheets) frozen puff pastry, thawed
  • 1 large egg, beaten
  • 2 tsp. milk
  • coarse sugar, for garnish

Instructions

Remove stem and pit cherries.

In a medium saucepan, combine cherries, sugar, lemon juice, and salt. Stirring occasionally with a rubber spatula or wooden spoon, cook over medium heat until cherries begin to release their juices, 4 to 6 minutes.

Meanwhile, mix cornstarch and water together in a small bowl until combined and milky and set aside. Stir in cornstarch mixture, then bring to a boil, stirring often.

Once boiling, remove from heat and stir in vanilla extract. Let cool completely.

In a small bowl, mix together the beaten egg and milk. Using a pastry brush, brush edges of the bottom rectangles with the egg wash.

Cut puff pastry sheet into 6 rectangles Spoon 3 tablespoons of cooled cherry mixture onto each of the 3 bottom rectangles.

Place the top rectangles over cherry filling, lining up the edges as best you can. Crimp the edges with a fork to seal shut. Repeat this entire step with 2nd pastry sheet so you have a total of 6 pastry pies. Brush tops of pastry pies with egg wash, then sprinkle with coarse sugar. Chill pies in the refrigerator for at least 25 minutes.

Air Fry at 360⁰ F/180⁰ C for 10-12 minutes, switching trays at the halfway mark. Let cool on rack until ready to serve.

Ingredients
  

  • 12 oz Fresh Cherries stemmed, pitted, or 12-ounces frozen
  • ½ cup granulated sugar
  • 1 tsp Fresh lemon juice
  • tsp salt
  • 1 ½ tbsp cornstarch
  • 1 ½ tbsp water
  • 1 tsp Vanilla Extract
  • 17.3 oz box Puff Pastry two sheets, thawed
  • 1 large egg
  • 2 tsp milk

Instructions

Air Fryer Buffalo Chicken Egg Rolls – Delish (Video)

As soon as I see a recipe for egg rolls, I’m in!  Not sure why, but I love them, and I really love finding new recipes for my Deluxe Air Fryer.  In case you missed it, I recently did a recipe for Peach Cobbler egg rolls, which you can find here. This recipe from Delish really hit the spot.  We actually had them for dinner instead of an appetizer, and that was okay by everyone!

Deluxe Air Fryer

Let’s jump right in!

Ingredients

4-ounces (112 grams) cream cheese, room temperature 

2 cups (227 grams) shredded mozzarella cheese  

3 cups (400 grams) shredded chicken

1/4 cup (60 mL) hot sauce 

4 green onions, thinly sliced 

14 egg roll wrappers  

Serve with

  • Ranch Dressing
  • Blue Cheese
  • More sliced green onions

Instructions

Place chicken in Deluxe Multi Cooker with 1 cup water, set to CUSTOM, 10 minutes. Press button to start. Once timer goes off, release pressure and shred chicken.

In medium bowl, combine cream cheese, mozzarella cheese, chicken, hot sauce and green onions, mixing well.

Add @ three tablespoons of the buffalo chicken mixture to the egg roll.  Brush edges of wrapper with water, then fold opposite corners to the middle, fold top side over, then roll.  (See photos and my video). 

Once all are rolled, brush egg rolls all over with melted butter, and place on air fryer racks. Air Fry at 390⁰ F/200⁰ C for 15 minutes, switching trays at the halfway mark. 

Alternatively, you can deep fry egg rolls in heated oil for approximately one minute per side.

Serve with ranch dressing mixed with blue cheese on the side, and more green onions for garnish.

The BEST Meatballs – Food Network (Video)

When I first started making meatballs, I used to make them with only ground beef. While they were edible, I always found them to be a bit dry. I learned that using a combination of ground beef, ground pork and ground veal would create an overall higher quality meatball that was juicier and full of flavor. 

I found this recipe that uses the above combination from Food Network, although they state the recipe is courtesy of Rao’s, which also happens to be my favorite jar sauce.

These meatballs are DELICIOUS.  You can double this recipe if you need more, or would like to freeze some.  Did you know that you can freeze the meatballs raw, and when you are craving a few (or six!) take out only what you need to cook for that night.  I’ve tried baking them, and they came out fine, but I would recommend cooking them in olive oil on the stove-top or, the BEST way really is to cook them in the air fryer.  I cannot recommend this method of cooking enough, as you do not need any oil (except for spritzing the trays a tiny bit), you do NOT have to stand by the stove to keep an eye on them, and they taste FANTASTIC! The only changes I’ve made to the recipe are to the number of garlic cloves used and the breadcrumbs.  I use store-bought breadcrumbs; the recipe calls for you to make your own.  The recipe calls for ½ small garlic clove, I use, um, well, much more than that.  You can certainly adjust the garlic to your personal preference.  Okay, enough said, let’s jump right in!!

Ingredients

  • 1 pound ground lean beef
  • ½ pound ground veal
  • ½ pound ground pork
  • 2 large eggs
  • 1 cup freshly grated Pecorino Romano cheese
  • 1 ½ tablespoons chopped flat-leaf parsley
  • ½ small garlic clove, peeled and minced, optional
  • Salt and pepper, to taste
  • 2 cups bread crumbs, method follows
  • 4 cups lukewarm water
  • 1 cup extra virgin olive oil

Instructions

Grate cheese, chop parsley, peel and chop garlic cloves.

Combine beef, veal, and pork, eggs, cheese, parsley, garlic and salt and pepper to taste and bread crumbs. Slowly add water in to mixture, mixing well after each addition. It will be very moist, but that is what you want.

Use medium or large scoop to shape into balls. 

FREEZING:  To freeze the meatballs raw, place them in a freezer safe zip top bag and lay flat in freezer, so they do not stick together.  You can then take out what you need for cooking later. 

STOVE-TOP:  Heat oil in a large sauté pan. When oil is very hot but not smoking, cook meatballs in batches, do not overcrowd the pan. Sauté 2-3 minutes per side, then reduce heat and cook 10-15 minutes more, flipping occasionally, until cooked through.  Alternatively, you can put them in a pot of sauce after they are nicely browned for 15 minutes on low heat until cooked through.

OVEN: Preheat oven to 400⁰ F; place meatballs on stone or sheet pan, and bake 20-25 minutes, until cooked through.

AIR FRYER (BEST and EASIEST Method)

Place meatballs on air fryer trays spritzed with olive oil. Set to AIR FRY, 18 minutes, press START.  Switch trays at the halfway time.  If you like them crisper, adjust the time accordingly.

IF YOU ARE AIR FRYING FROZEN MEATBALLS:  Adjust the time to 25 minutes.

That’s it!  These are a staple in our home, and I hope that you will give them a try.

Air Fryer Rotisserie Pork Tenderloin – Jennifer Banz (Video)

Pork tenderloin is so easy to make, especially in the air fryer. Tender, juicy, and also keto friendly! I found this recipe from Jennifer over at https://jenniferbanz.com.  You can learn more about Jennifer here. From what I’ve read, she has followed a low carb diet for @ 10 years, and has lost @ 70 pounds!! Her recipes look healthy and delicious, and since she seems to love her Air Fryer as much as I love mine, I am sure I will find some more amazing recipes!!  I hope that you will check her out, and please tell her hello from me as well.

Let’s jump right in!!

What you’ll need:

  • 1-pound whole pork tenderloin
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon dried thyme
  • 2 cloves garlic, pressed
  • 1 Tablespoon oil (I used olive oil, Jennifer uses Avocado)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

First, press your garlic. 

Next, in a prep bowl, combine the garlic powder, cumin, oregano, thyme, pressed garlic, oil, salt and pepper, mixing well. This is the rub for the pork.  Yum!!

Placing your tenderloin on a cutting board, spread the rub all over the meat, being sure to coat all sides.

Put the meat on the spit, and lock into place. 

Place spit into Air Fryer. Set to ROTISSERIE for 20-22 minutes, or until internal temperature reaches 145⁰F.

Be sure to use an Instant Thermometer to check the temperature!

Remove spit from Air Fryer with removal tool, and let meat rest 8-10 minutes.  Remove spit from tenderloin, slice and serve.

That’s it!  It was DELICIOUS.  Also, now that I know it’s also keto friendly, I can make this for some time (in the future) when I invite my friends over, knowing that this will be a healthy (and delicious!) addition to the menu.

    Place spit into Air Fryer. Set to ROTISSERIE for 20-22 minutes,or until internal temperature reaches 145⁰F.
  • Remove spit from Air Fryer with removal tool, and let meat rest @ 8-10 minutes.  Remove spit from tenderloin, slice and serve.

Air Fryer Chicken – Keto Friendly/Gluten Free (Video)

We eat a lot of chicken in this house, and since this month I’m going to be focusing on mainly low-carb recipes, I figured I would start with our favorite. This is a simple recipe that I have used for our family without realizing it was low-carb. It’s really simple using the air fryer and even with five bone in pieces in the rotisserie basket, it takes only 45 minutes. The seasonings I use from Pampered Chef are gluten free and keto friendly. Let’s jump right in!

What you’ll need:

  • 4-5 pieces bone-in chicken of your choice (I used breast, thighs and legs)
  • Olive oil
  • Rotisserie seasoning
  • Three Onion Rub

Instructions

Spritz chicken pieces with oil. I used a Garlic-Infused canola oil, delicious! You could use olive oil, or another alternative of your preference.


Season chicken with 1 tbsp. EACH Rotisserie Seasoning and Three Onion Rub.


Spritz again with a little more oil.


Place pieces in rotisserie basket and click to lock. Place rotisserie basket in air fryer, and set to ROTISSERIE, 45 minutes. Press wheel to start. The basket will rotate, cooking your chicken evenly.

When it’s done, remove basket with retrieval tool. Unlock your basket and remove your chicken. That’s it! This is a super easy recipe that is delicious, gluten-free and keto friendly!
