I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. You can learn more about their membership here; this is a code I found online, as I believe the normal cost is $35/year, but this code looks like you can still get it for $20/year, which is great! I have found it to be extremely useful, although I have not yet taken advantage of their hotline – yet.

One ingredient I used that they didn’t was mascarpone cheese, which is like cream cheese, except that it tastes a bit sweeter and buttery.  Yummy!

For this recipe, I used my Stone Bar Pan, Deluxe Stand Mixer, and Slice ‘N Serve:

Ingredients

For the Pumpkin Roll

  • 3 large eggs
  • 1 cup granulated sugar
  • ¾ cup all-purpose flour
  • 2/3 cup pumpkin puree
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ teaspoon pumpkin pie spice
  • Powdered sugar, for dusting

For the Filling

  • 12-ounces mascarpone cheese can substitute cream cheese
  • 1 ¼ cup powdered sugar plus more for dusting
  • 1 tablespoon butter melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt

Instructions

Preheat oven to 350°F/175⁰C.

Line Stone Bar Pan or jelly roll pan with parchment paper.  Add all ingredients for pumpkin roll in large bowl, whisking until combined. Pour into parchment-lined pan, spreading to fill completely. Bake 15 minutes, or until cake tested inserted into the middle of the cake comes out clean.

Layout a large kitchen towel on the counter; dust with powdered sugar.  Lift pumpkin cake from stone, and immediately flip onto towel. Gently remove parchment paper and dust with more powdered sugar (optional). Starting at the short end, with the towel wrapped around it, tightly (but GENTLY) roll cake into a log. Allow to cool for approximately 45 minutes – 1 hour.

To Make the Filling

Add all filling ingredients to stand mixer (or bowl with handheld mixer) and beat on medium-high until smooth.

Put Together

Gently unroll pumpkin cake – it’s fine if it is still slightly curled.

Spread filling all over the cake, then re-roll and dust with more powdered sugar.

Slice and Serve.

Crispy Leaf Potatoes – Rasa Malaysia (Video)

I love it when I come across a recipe during my research that is not only incredibly simple, but also delicious and will dress up any table, no matter what the occasion.  These crispy leaf potatoes from Bee over at Rasa Malaysia are just such a recipe! You can learn more about Bee and her blog here. I’m only surprised that I had not heard of her before, she appears to be pretty famous! 

I cut the recipe down for our family by two thirds, and I used my 2- Qt. Enameled Cast Iron Baker AND, of course, the Rapid-Prep Mandoline:

Ingredients

  • 3 lbs. Yukon gold potatoes
  • ½ cup (1 stick) unsalted butter
  • 1 teaspoon Kosher salt
  • ¼ teaspoon pepper, or to taste
  • 1.5 teaspoons fresh rosemary or oregano

Instructions

Preheat your oven to 400°F/205⁰C.

Chop fresh rosemary or oregano.

Peel potatoes, then slice using the Rapid-Prep Mandoline at the Full Slice setting at 1 mm. Dry the potato slices with a paper towel, and place in large bowl.

Toss with butter, salt, pepper and rosemary until fully coated.

Place potato slices upright in 2- Qt. Enameled Cast Iron Baker or other casserole dish.  Bake for one hour, or until potatoes are crispy and golden brown. 

Garnish with more fresh rosemary and oregano as desired.

This Homemade turkey stock from Kitchn is SO easy to make and full of flavor, you’ll be amazed at the taste difference! I used this delicious stock for my Leftover Turkey Soup, and there is NO way I will ever use store bought again.  Of course, for this recipe I used my trusty 8-qt. (7.6-L) Nonstick Stock Pot, here’s some info about it below:

Ingredients

  • 1 cooked Turkey Carcass, cut into pieces
  • 4 carrots cut into thirds
  • 4 celery stalks
  • 2 onions, quartered
  • 1 teaspoon whole peppercorns
  • 2 bay leaves
  • Handful of fresh parsley
  • Water – enough to cover carcass and vegetables

Instructions

Cut carrots, celery and onions.  Cut turkey carcass into pieces, removing most of the meat (bits left on are fine).

Add all ingredients to stock pot, cover with water.  Bring to a boil, then turn down heat and simmer for approximately 3 hours.  Set a mesh strainer over large bowl. Remove large pieces of carcass with tongs, then strain the stock through the mesh strainer, pressing on back of solids. 

Let stock cool in order for fat to rise to the top of the stock.  Remove fat with ladle.  You can use immediately for soup, or cool completely and store in a covered container in the refrigerator for up to one week, or freeze up to 3 months.

Ingredients

  • 3 cups fresh or frozen cranberries
  • 2 medium apples, peeled, cored and sliced
  • ½ cup brown sugar, packed
  • ½ tablespoon ground cinnamon
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract

Biscuit Topping

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ cup cold butter, cubed
  • ¾ cup heavy cream OR whole milk

Instructions

Preheat oven to 350°F/180⁰C.

Prepare your 9″-10” cast iron pan by brushing with melted butter (I completely FORGOT this step, but it came out fine anyway). Set aside.

Peel, core and slice apples.  Combine cranberries, apples, brown sugar, flour and vanilla in mixing bowl, stirring until well combined.  Transfer to cast iron pan.

For the biscuit topping:

Add flour, sugar, baking powder and salt to food processor, pulse to combine.  Add in butter, pulsing until butter is lima bean size and mixture is crumbly.  Add cream and pulse just until mixture comes together. 

Use Large Scoop to measure 2 tablespoons per biscuit, press to flatten each biscuit; place over cranberry-apple mixture.

Bake 1 hour, or until cobbler is cooked through and bubbling, and biscuits are golden brown.

The cobbler can be served immediately, or you can cool and serve at room temperature.

Cranberry-Apple Cobbler With Biscuits – Ahead of Thyme (Video)

Ingredients
  

  • 3 cups fresh or frozen cranberries
  • 2 medium apples, peeled, cored and sliced
  • ½ cup brown sugar, packed
  • ½ tbsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 tsp Vanilla Extract

Biscuit Topping

  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • ½ cup cold butter, cubed
  • ¾ cup heavy cream OR whole milk

Instructions
 

  • Preheat oven to 350°F/180⁰C.
  • Prepare your 10” cast iron pan by brushing with melted butter (I completely FORGOT this step, but it came out fine anyway). Set aside.
  • Peel, core and slice apples.  Combine cranberries, apples, brown sugar,flour and vanilla in mixing bowl, stirring until well combined.  Transfer to cast iron pan.

For the Biscuit Topping

  • Add flour, sugar, baking powder and salt to food processor, pulse to combine.  Add in butter, pulsing until butter is lima bean size and mixture is crumbly.  Add cream and pulse just until mixture comes together. 
  • Use Large Scoop to measure 2tablespoons per biscuit, press to flatten each biscuit; place over cranberry-apple mixture.
  • Bake 1 hour, or until cobbler is cooked through and bubbling, and biscuits are golden brown.

Notes

You can prepare the biscuit topping up to on day ahead, store them in a zip-top container in the refrigerator flat without touching each other, then top your cranberry-apple mixture when ready to bake.

Easy Turkey Gravy (Video)

As it’s only about one week before Thanksgiving in the U.S., I am sharing a few extra recipes this month.  I really like to prep as much as I can before Thanksgiving, as you can see here and here.  This year is no exception, so here is an easy recipe for turkey gravy that, if you desire, cane be made up to 4 days ahead. 

For this recipe, I used my 2-qt. (1.9-L) Nonstick Sauce Pan.

This 2-qt. (2-L) sauce pan will be your go-to for sauces, melting butter, and reheating soup. Ingredients

  • Drippings from Roast turkey (or legs, wings, etc.)
  • 4 tablespoons butter, softened
  • 4 tablespoons flour
  • Turkey broth enough to make 3 cups when added to drippings

Instructions

Roast several turkey legs (instructions here).  Alternatively, you could use wings, or whatever turkey parts you have on hand, or wish to use.

Mix softened butter with flour until a paste-like mixture is made.  Set aside.

Strain the drippings, discarding any solids.  Combine with turkey broth to make 3 cups.  Bring to a boil over medium heat in a 2-qt. (1.9 L) saucepan. Add in flour mixture, whisking constantly until combined.  Turn heat to medium-low, and simmer for another 2-3 minutes, until thickened. 

That’s it!  This is a really simple and easy recipe that anyone can make.  Of course, you can add other seasonings to this, but I wanted to share this as an easy go-to recipe, in case anyone reading this is hosting their first Thanksgiving on their own.
