Transform your leftover corned beef & cabbage into delicious egg rolls – an easy recipe for a tasty twist! Whether you’ve made Slower Cooker Corned Beef and Cabbage, or Sous Vide Corned Beef, you just might have some leftovers.  Maybe you’ll turn them into Irish Nachos.

I love egg roll recipes, as you can tell here, here and here, and I thought, why not turn corned beef and cabbage into a fun appetizer?  It’s delicious, and a great way to use up any leftover corned beef.  In addition, these freeze beautifully, so that you can pull one or two out at a time for a quick lunch or healthy snack.

Ingredients

  • 2 carrots julienned or diced
  • 2 cloves garlic diced
  • 1 onion diced
  • ½ head small cabbage shredded
  • 1 tablespoon butter
  • ½ teaspoon kosher salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 16-20 ounces leftover corned beef
  • 14 egg roll wrappers  
  • Water to brush wrappers

Instructions

Prepare your vegetables.

Heat butter in skillet over medium-high heat until shimmering.  Add onions, carrots, and cabbage.  Cook 4-5 minutes, until onion is translucent. Add garlic, cooking until fragrant, about one minute. Remove from heat, then stir in corned beef.

Make Egg Rolls:

Take one egg roll wrapper and place in diamond shape.  Brush edges of wrapper with water. Place 2-3 tablespoons of corned beef mixture onto the bottom of the wrapper, being sure to leave approximately 1.5 inches of space at the bottom of the wrapper.

Fold the bottom portion of the wrapper over the mixture, then roll once. Press down both sides close to corned beef, then fold the sides in like an envelope.  Roll to the top, set aside. Continue to do this until all egg rolls are prepared. 

Spray egg rolls lightly with oil, then place on air fryer trays.  Air Fry 14-16 minutes, until wrappers are crispy, switching trays halfway through.

Serve with spicy mustard on the side.

You can freeze egg rolls after cooking, then pull out as many as needed and reheat 5 minutes on the REheat setting.

Ground beef Shepherd’s Pie is a hearty and comforting dish that’s a hug on a plate!  

I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. Ingredients

For the Mashed Potatoes

  • 3 lbs. russet potatoes, peeled and cut in half
  • 1 cup water
  • 1/2 cup butter (1 stick)
  • ½ cup heavy cream
  • Salt and pepper, to taste
  • Flat parsley, for garnish

For the Filling

  • 2 lb. lean ground beef
  • Salt and pepper to taste
  • 1 medium yellow onion, chopped
  • 2 medium carrots, peeled, chopped
  • 3 cloves garlic, chopped
  • 2 teaspoons chopped fresh rosemary
  • 2 teaspoons chopped fresh thyme
  • 3 tablespoons tomato paste
  • 1/2 cup red wine
  • 1 cup beef broth
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons all-purpose flour
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 3 tablespoons grated Parmesan
  • 1 tablespoon chopped fresh parsley

Instructions

For the Mashed Potatoes

Peel potatoes, slice in half.

Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.

Cook on CUSTOM for 20 minutes, then release the pressure manually.

Place the warm potatoes into the inner pot. Add the butter, salt and pepper; mash and thoroughly combine. Stir in the cream, top with parsley and more salt and pepper to taste.

For the Filling

Preheat oven to 400°F/200⁰C.

Add beef to a large skillet over medium-high heat. Season with 2 teaspoons salt and 1/2 teaspoon pepper. Break up beef with the Mix ‘N Chop and cook until crumbly and no longer pink, 6 to 8 minutes. Transfer beef to a plate. Pour off all but 2 tablespoons beef drippings.

In same skillet over medium heat, cook onion and carrots, stirring, until onions begin to soften, 5 to 6 minutes. Add garlic, rosemary, and thyme and cook, stirring, until fragrant, about 2 minutes more. Return beef and accumulated juices to skillet; stir in tomato paste. Cook, stirring, until tomato paste turns dark red, 3 to 4 minutes. Add wine and cook, stirring, until almost completely evaporated, 2 to 3 minutes. Stir in broth and Worcestershire and bring to a simmer. Sprinkle with flour and cook, stirring occasionally, until sauce is thickened, about 5 minutes. Stir in corn and peas. Remove from heat.

If using the 12″ (30-cm) Signature Nonstick Skillet, leave in pan and top filling with mashed potatoes, spreading to cover filling completely. Sprinkle with Parmesan; season with a pinch of pepper. Alternatively, you can transfer filling to a 13” x 9” baking stone or pan and proceed with recipe).

Remove handle from 12″ (30-cm) Signature Nonstick Skillet and bake shepherd’s pie until beef mixture is bubbling, about 25 minutes. Remove from oven.

Place a rack in upper third of oven and turn broiler to high. Broil until top begins to brown, 1 to 2 minutes.

Sprinkle with remaining 1 tablespoon of parsley. Let cool 10 minutes before serving.

Creamy mashed potatoes with sautéed cabbage, kale and green onions make this traditional Irish Colcannon recipe from Krissy over at Self Proclaimed Foodie a perfect dish for St. Patrick’s Day! You can learn more about Krissy here. This was our first try at this dish, but it won’t be our last!  They were perfect, and made everyday mashed potatoes even more flavorful.

Ingredients

  • 3 pounds russet potatoes peeled and cut in half
  • 1 cup water for pressure cooker
  • 8 tablespoons salted butter
  • 1 cup buttermilk
  • 2 cups kale chopped, packed thick stems discarded
  • 2 cups green cabbage chopped

Instructions

Peel potatoes, slice in half.

Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot. Cook on CUSTOM for 20 minutes, press button to start.

Chop kale, green onions and cabbage. Melt butter in sauté pan over medium-high heat. Add in cabbage and kale, stir to coat in butter.  Let cook undisturbed for 5-10 minutes. Add in green onions, cook for 2-3 minutes more. 

When the potatoes are done, release pressure manually. Remove the water from the inner pot, and then place the warm potatoes into the inner pot.

Mash potatoes, add butter and buttermilk. Stir in sautéed vegetables.  Add salt and pepper, to taste. Serve immediately.

Irish Colcannon (Mashed Potatoes) – Self Proclaimed Foodie (Video)

Creamy mashed potatoes with sautéed cabbage,kale and green onions make this traditional Irish Colcannon recipe a perfect dish for St. Patrick’s Day!

Ingredients
  

  • 3 lb russet potatoes peeled and cut in half
  • 1 cup water for pressure cooker
  • 8 tbsp salted butter
  • 1 cup buttermilk
  • 2 cups kale packed thick stems discarded
  • 2 cups cabbage chopped
  • 6 oz green onions sliced
  • salt and pepper to taste

Instructions
 

  • Peel potatoes, slice in half.
  • Place the water in the inner pot of the Deluxe Multi Cooker.Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.
  • Cook on CUSTOM for 20 minutes, press button to start.
  • Chop kale, green onions and cabbage.
    Melt butter in sauté pan over medium-high heat. Add in cabbage and kale, stir to coat in butter. Let cook undisturbed for 5-10 minutes. Add in green onions, cook for 2-3 minutes more. 
  • When the potatoes are done, release pressure manually. Remove the water from the inner pot, and then place the warm potatoes into the inner pot.
  • Mash potatoes, add butter and buttermilk. Stir in sautéed vegetables.

Notes

You can peel your potatoes ahead of time, up to 24 hours prior, and store them in cold water in your refrigerator.  This will prevent browning, and also remove some of the starch.
This recipe freezes well.  You can store any leftovers in a sealed container up to three days or freeze in a freezer safe container up to three months.
