Let’s jump right in!

Ingredients

  • 1   whole chicken 4-5 lbs.
  • 4 carrots peeled and thickly sliced into thirds
  • 1 lemon thickly sliced
  • 1 onion wedged
  • 4 cloves garlic peeled
  • 1 tbsp (15 mL) olive oil
  • 1 ½ tbsp Lemon Garlic Rub

Directions

Preheat the oven to 450°F/230⁰C.

Peel and slice carrots, slice lemon; wedge onion and peel garlic, set all side.

Place carrots, lemon, garlic and onion into the Deep Covered Baker. Season vegetables with ½ tablespoon of Lemon Garlic Rub.

Remove and discard the giblets and neck from the chicken cavity. Rinse the chicken with cold water and pat dry with paper towels.

Place the chicken, breast side up, on top of the vegetables in the baker. Brush the outside of the chicken with oil, then coat the chicken completely with the Lemon Garlic Rub. Tie the ends of the legs together with cotton string. Lift the wing tips up toward the neck, then tuck them under the back of the chicken.

Cover and roast, for 50 minutes. Remove cover, and roast for an additional 10 minutes, or until meat thermometer registers 180°F/82°C in the thickest part of thigh and juices run clear. Remove the baker from the oven and let the chicken stand for 10 minutes before carving.

Simplify dinner! This Easy-Peasy Meatloaf recipe takes the hassle out of cooking. Quick, simple, and delicious—perfect for busy families!

I love a good meatloaf, so when I came across this recipe from Dan over at Mantitlement, it sounded like something I would like to try. You can learn more about Dan here. This meatloaf was outstanding! I was a little hesitant with the glaze, as I have never used sweet chili sauce for a meatloaf before, but I’m so glad I followed this recipe to the letter. The glaze really made the meatloaf, which was already perfect, even more delicious.

For this recipe, I used my Deluxe Stand Mixer and Stone Loaf Pan:

Ingredients

For the Meatloaf

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 large onion (1 1/2 cups diced)
  • ¼ cup tomato paste
  • 2 ½ pounds meatloaf mix or ground beef
  • 2 ½ teaspoons kosher salt, to taste
  • Fresh ground black pepper, to taste
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons spicy brown mustard
  • 1 cup Panko breadcrumbs
  • 2 eggs, beaten
  • ¼ cup chopped fresh parsley
  • 1 ½ teaspoon garlic powder
  • 1 ½ teaspoons dried basil

For the Glaze:

  • 1 cup ketchup
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • 2 tablespoons brown sugar

Instructions

Preheat oven to 400°F/200⁰C.

Chop onions and parsley; set parsley aside.

Add one tablespoon EACH butter and olive oil to skillet over medium heat until butter is melted.  Add onion and cook until softened, about 5-7 minutes.

Stir in tomato paste and remove from heat.  Allow to cool.

Add all the meatloaf ingredients (including the cooled tomato-onion mixture) to the Deluxe Stand Mixer. Using the paddle attachment, select MIX and adjust the time to 45 seconds. Press Start.

For the Glaze:

Whisk together all of the glaze ingredients until combined.

Place meatloaf into Stone Loaf Pan. Brush half of the glaze on the meatloaf.

Bake for 35 minutes; remove from oven, brush on remaining glaze. Bake an additional 20-25 minutes, or until fully cooked to 160°F/71°C.

Indulge in savory pulled pork, bathed in an irresistibly delicious Jack Daniel’s sauce. Savor the flavor and elevate your slider game! This is not only a fabulous recipe for the Superbowl, but also a great meal prep recipe.  You can make the pork, and freeze some of it without any sauce for a different use (tacos, quesadillas, etc.).

The pork is very hands off since it’s baked in the oven.  I did not cover the Jack Daniel’s Sauce recipe in this video (but it is listed below), but I did over here. For this recipe, I used my Deep Covered Baker and Smoky Applewood Rub:

No need to use wood chips on the grill to get this delicious sweet and smoky flavor of natural applewood, garlic and chili peppers. Perfect for seasoning ribs, pork chops, tenderloin and burgers. 2.5 oz. Gluten-free.

Ingredients

For the Pork

  • 4 lb. Pork shoulder
  • ½ cup brown sugar
  • 2 tablespoons Smoky Applewood Rub
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

For the Jack Daniel’s Sauce

  • 1 bulb garlic
  • 1 tablespoon olive oil
  • 1 1/3 cup dark brown sugar
  • 1 cup pineapple juice
  • 2/3 cup water
  • ¼ cup teriyaki sauce
  • 1 tablespoon soy sauce
  • 3 tablespoons lemon juice
  • 3 tablespoons minced white onion
  • 1 tablespoon bourbon whiskey
  • 1 tablespoon crushed pineapple
  • ¼ teaspoon cayenne pepper

For the Sliders

28-32 slider rolls

Instructions

For the Pulled Pork

Preheat oven to 325⁰ F/165 ⁰ C.

Combine brown sugar, Smoky Applewood Rub, salt, and pepper in small bowl. 

Rinse and pat dry the pork shoulder. Score the fat cap on the pork. Rub the Smoky Applewood mixture all over the pork shoulder. Place in Deep Covered Baker and cover with lid. Bake for three hours, or until thermometer inserted into the thickest portion registers between 200⁰ F/205 ⁰F (93⁰CF/96⁰C).

Remove from oven and allow to rest for 30 minutes, then shred.

For the Jack Daniel’s Sauce (to see Video, click here)

Preheat oven to 325⁰ F/165 ⁰ C.

Cut off the very top of the garlic bulb, so that you can see some of the garlic.  Place bulb in small cast iron pan or baking dish, trimming root if needed for bulb to sit flat.  Drizzle with olive oil, cover with aluminum foil. Bake for one hour, until cloves are soft and fragrant. 

Remove from oven, set aside until slightly cooled.  Squeeze bulb to remove cloves.  Set aside two teaspoons for this recipe; you can freeze remaining garlic for another recipe.

In saucepan, combine brown sugar, pineapple juice, water, teriyaki sauce and soy sauce, bring to a boil. 

Add in garlic, lemon juice, onion, bourbon whiskey, pineapple, and cayenne pepper, mixing to incorporate.  Simmer for 40 minutes, or until the liquid reduces by half.  The sauce should be thick; simmer up to 10 minutes longer if necessary.

For the Sliders

Shred pork with hands or Quick Shred. Mix pulled pork with Jack Daniels Sauce until combined. Warm slider rolls in 350°F/175⁰C oven for 5 minutes.

Scoop a nice portion of pulled pork onto the bottom of each slider roll. Serve immediately.

    For the Pulled Pork

    • Preheat oven to 325⁰ F/165 ⁰ C.
    • Combine brown sugar, Smoky Applewood Rub, salt, and pepper in small bowl.
      ½ cup brown sugar, 2 tablespoons Smoky Applewood Rub, 1 teaspoon kosher salt, ½ teaspoon pepper
    • Rinse and pat dry the pork shoulder. Score the fat cap on the pork. Rub the Smoky Applewood mixture all over the pork shoulder.
      4 lb. Pork shoulder
    • Place in Deep Covered Baker and cover with lid. Bake for three hours, or until thermometer inserted into the thickest portion registers between 200⁰ F/205 ⁰F (93⁰CF/96⁰C).
    • Remove from oven and allow to rest for 30 minutes, then shred.

    For the Jack Daniel’s Sauce

    • Preheat oven to 325⁰ F/165 ⁰ C.
    • Cut off the very top of the garlic bulb, so that you can see some of the garlic. Place bulb in small cast iron pan or baking dish, trimming root if needed for bulb to sit flat. Drizzle with olive oil, cover with aluminum foil. Bake for one hour, until cloves are soft and fragrant.
      1 bulb garlic, 1 tablespoon olive oil
    • Remove from oven, set aside until slightly cooled. Squeeze bulb to remove cloves. Set aside two teaspoons for this recipe; you can freeze remaining garlic for another recipe.
    • In saucepan, combine brown sugar, pineapple juice, water, teriyaki sauce and soy sauce, bring to a boil.
      1 1/3 cup dark brown sugar, 1 cup pineapple juice, 2/3 cup water, ¼ cup teriyaki sauce, 1 tablespoon soy sauce
    • Add in garlic, lemon juice, onion, bourbon whiskey, pineapple, and cayenne pepper, mixing to incorporate. Simmer for 40 minutes, or until the liquid reduces by half. The sauce should be thick; simmer up to 10 minutes longer if necessary.
      3 tablespoons lemon juice, 3 tablespoons minced white onion, 1 tablespoon bourbon whiskey, 1 tablespoon crushed pineapple, ¼ teaspoon cayenne pepper, 1 bulb garlic

    For the Sliders

    • Mix pulled pork with Jack Daniels Sauce until combined.
    • Warm slider rolls in 350°F/175⁰C oven for 5 minutes.
      28-32 slider rolls
    • Scoop a nice portion of pulled pork onto the bottom of each slider roll. Serve immediately.

    Notes

    The average amount of pulled pork per slider roll claims to be approximately 2 ½ heaping tablespoons. I do find that it depends on the type of slider roll used. You be the judge for yours, just remember if you make very generous potions, you may not have enough left for the remaining slider rolls.

    In case you can’t tell, I’ve been on a pressure cooker and sous vide kick lately!  This recipe fits the bill, it’s easy and a great appetizer OR dinner. 

    Of course, I used my Deluxe Multi Cooker , Pressure Cooker Steamer Baskets, I used my Deluxe Stand Mixer to shred the chicken and the 10″ Cast Iron Skillet to finish the nachos:

    For the Rub:

    • 1 tablespoon chili powder
    • 1 teaspoon cumin
    • 1 teaspoon paprika
    • 1 teaspoon dried oregano
    • 1 teaspoon kosher salt, or to taste
    • 1/4 teaspoon red pepper flakes

    For the Chicken

    • 1.5 lb boneless chicken breast
    • 1 onion diced
    • 2 cloves garlic, sliced
    • 2 tablespoons tomato paste
    • Zest and juice of one orange
    • juice of one lime
    • 1 cup chicken broth

    For the Nachos:

    • Tortilla Chips
    • 2 ½ cups shredded Monterey Jack Cheese
    • 1 cup cherry tomatoes, sliced in half
    • 1 red onion, sliced
    • Jalapenos sliced (optional)
    • Cilantro (optional)

    Instructions

    Dice onion, slice garlic, zest and juice one orange; set aside.

    Mix all the spices together to create the rub, and use half on the chicken, being sure to rub in the mixture on both sides.

    Add the chopped onion, chopped garlic, tomato paste, lime juice, and the remaining rub to the Deluxe Multi Cooker, and stir to combine. Place the Steamer Basket inside the inner pot.

    Place chicken in steamer basket over broth mixture. Lock the lid and select CUSTOM- 10 MINUTES and press START. It will display the word “RUN“.

    Once timer goes off, release the pressure manually. Carefully open the lid and remove chicken.

    Preheat oven to 400°F/200⁰C .

    Place chicken in Deluxe Stand Mixer, with paddle attachment. Set to CUSTOM 1 press START to shred the chicken approximately 30-60 seconds. Add chicken back into the sauce, mixing to combine.

    Grab a cast iron skillet, and layer the nachos as follows:

    • Tortilla chips
    • Shredded chicken
    • Red onion
    • Tomatoes
    • Cheese
    • Jalapeno (optional)
    • Cilantro (optional)

    Create one more layer of the same, then bake for 5-8 minutes, or until cheese is bubbling. 

    Serve immediately with sour cream, guacamole and more cilantro, if desired.

    Sous Vide Salmon (Video)

    Buttery, flaky, and irresistibly moist, this Sous Vide Salmon is created with this easy hands-off method of cooking that delivers a flavor-filled dinner every time!

    Here’s a quick Sous Vide refresher:

    Sous Vide is a method of cooking foods in a water bath at a precisely controlled (lower) temperature for an extended period time. The results speak for themselves. You won’t ever worry about overcooking an expensive cut of meat, it will come out perfectly tender and juicy, based on the temperature YOU select, every single time. So far, I notice also that using the sous vide method leaves me time to do other things, as it’s a matter of placing your food in a reusable or zip top bag and into    the water, pressing START and it does its thing.

    To Brine or Not to Brine?

    Drying brining salmon with salt before sous vide cooking serves several important purposes:

    1. Flavor Enhancement: The salt in the dry brine enhances the natural flavors of the salmon. It not only adds a savory taste but also helps accentuate the inherent richness of the fish.
    2. Texture Improvement: Dry brining aids in modifying the texture of the salmon. It works to firm up the flesh slightly, giving it a more appealing texture when cooked sous vide. This ensures that the salmon maintains its structure while still achieving the desired level of tenderness.
    3. Moisture Retention: While it may seem counterintuitive, dry brining helps the salmon retain moisture during the sous vide process. The salt draws out excess moisture initially, but then it gets reabsorbed, along with the seasoned flavors, resulting in a juicier and more succulent final product.
    4. Consistent Seasoning: Dry brining provides a more even distribution of salt across the salmon. This ensures that each bite is consistently seasoned, preventing pockets of blandness or excessive saltiness in different parts of the fish.
    5. Improved Sous Vide Precision: Removing excess moisture from the surface of the salmon through dry brining contributes to more effective sous vide cooking. With less surface moisture, the sous vide process can more efficiently transfer heat to the salmon, promoting a precise and uniform cooking experience.
    6. Enhanced Sous Vide Bag Seal: The surface dryness achieved through dry brining facilitates a better seal when placing the salmon in the sous vide bag. This is crucial for an airtight seal, preventing water from entering the bag and compromising the sous vide cooking process.

    Ingredients

    • 12-ounces Salmon cut into two pieces
    • Kosher Salt
    • 1 tablespoon olive oil
    • Black pepper
    • 2 Lemon slices
    • 2 Thyme sprigs

    Garnish

    • Parsley
    • Lemon wedges

    Instructions

    Fill the inner pot of the Deluxe Multi Cooker with water 1″ below the ½ fill line. Lock the lid and select SOUS VIDE. Set the temperature to 120° F/48.9° C and the timer for 1 hour. Lock the lid and press START. It will display the word “RUN“.

    Slice half of the lemon into slices, and the remaining half into wedges.

    BRINE – Salt the salmon and let rest for 15 minutes, up to one hour. Pat dry.

    Brush salmon with olive oil. Season salmon with salt and pepper to taste.    

    Place a lemon slice on each piece of salmon. in Large Reusable Storage Bag or zip top freezer bag, then add salmon in one layer. Add sprigs of thyme to each piece of salmon.

    When you hear beeps and ADD is displayed on the Deluxe Multi Cooker, open the lid and submerge the bag gently in water using the water displacement method*.

    *Water Displacement method: seal the bag almost all the way, leaving a small corner open.  Slowly submerge the bag into the water, gently pressing to help air escape.  Seal bag when food is completely submerged (but NOT the top of the bag), seal the bag.

    Lock the lid and press START. It will display the time that you set it for.

    Cooking times:

    • If your filets are 1’ thick, cook between 30-45 minutes
    • If your filets are 1.5” thick, cook between 45-60 minutes

    When the timer is up (or when you are finished cooking based on thickness), press CANCEL.

    • Fill the inner pot of the Deluxe Multi Cooker with water 1" below the ½ fill line. Lock the lid and select SOUS VIDE. Set the temperature to 120° F/48.9° C and the timer for 1 hour. Lock the lid and press START. It will display the word "RUN".
    • Slice half of the lemon into slices, and the remaining half into wedges.

    • BRINE – Salt the salmon and let rest for 15 minutes, up to one hour. Pat dry.

      Cooking times:
      If your fillets are 1’ thick, cook between 30-45 minutes
      If your fillets are 1.5” thick, cook between 45-60 minutes
    • When the timer is up (or when you are finished cooking based on thickness), press CANCEL.
