What is Garlic Confit and what do I do with it?

Confit is a French method of cooking food (like garlic or tomatoes) in fat over low heat for a longer period.  Garlic confit boasts a mellow, sweet, and creamy flavor that is a far cry from the sharpness of raw garlic. Slowly cooked in aromatic oil, the garlic cloves become tender, almost caramelized, imparting a rich and nuanced taste. The result is a versatile and indulgent ingredient that adds depth and sophistication to a variety of dishes, ranging from pasta and roasted vegetables to spreads and dressings. I’ve used it to make compound butters as well – delicious!

For this recipe, I used my Mini Deep Covered Baker:

Ingredients

  • 6 bulbs of garlic
  • 2 cups Extra-Virgin Olive Oil
  • Fresh thyme
  • Peppercorns

Instructions

Preheat oven to 325°F/165⁰C.

Peel garlic and place in Mini Deep Covered Baker. Cover garlic with olive oil, add in the thyme and peppercorns.

Cover and bake for 45-60 minutes, or until garlic is soft and tan in color.

Transfer garlic with the oil to a heat-proof container. Refrigerate immediately once cooled.

Ingredients

  • 6 russet potatoes
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 3 tablespoons olive oil divided
  • 6 tablespoons butter
  • 1 ½ cups chicken stock
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 4 garlic cloves

Instructions

Preheat oven to 400°F/200⁰C.

Peel potatoes, then slice the ends off so the potato is flat. Cut into 1-inch slices, place in large bowl.

Combine potatoes with one tablespoon of olive oil, kosher salt and pepper to taste.

Heat 12″ (30-cm) Signature Nonstick Skillet or other heavy skillet over medium-high heat; add remaining two tablespoons olive oil and 3 tablespoons butter.

Once butter is foamy, add in potatoes, being careful not to overcrowd the pan.  Sear 6-8 minutes on one side, or until nicely browned.

Flip potatoes over, and add in chicken stock, remaining butter, garlic cloves, rosemary, and thyme.

Remove handle from skillet, and transfer to oven.  Roast potatoes for 30 minutes.

Top with flaky sea salt, more fresh herbs if desired and spoon pan juices over the top.

Sweet Potato Casserole (Video)

Creamy sweet potatoes covered in a delicious, crunchy butter-pecan-sugar topping, this delectable side dish will become a family favorite in your household for years to come! I’ve been making this recipe for 28+ years, and we love it because we prefer our sweet potato casserole to be only lightly sweetened. Many recipes I’ve come across use too much maple syrup for our liking, so when a co-worker came in to our potluck with this dish, I asked if I could write down her recipe. I believe she said it came from her grandmother and, well, who am I to argue with Grandma?

Since we have about 17+ people coming for Thanksgiving, I like to use our Stone Rectangular Baker With Tray, this way I can cover it with the tray whilst baking, and then use the warmed tray to serve my buttermilk biscuits afterwards!

Ingredients

  • 2 pounds Sweet Potatoes
  • 2 tablespoons granulated sugar
  • 1/3 cup unsalted butter
  • ½ cup milk
  • 2 eggs, beaten

Topping

  • 1/3 cup brown sugar, packed
  • 1/3 cup pecans, chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour

Instructions

Preheat oven to 325⁰F/ 165⁰C.

Add a pinch of salt to a large pot of water; bring to a rolling boil.

Peel and cube sweet potatoes, add to boiling water, and cook until tender, approximately 20 minutes. 

Meanwhile, chop pecans and melt butter. Combine brown sugar, pecans, flour and melted butter in a small bowl until combined. 

Drain sweet potatoes, place back into pot. Mash sweet potatoes, then add sugar, butter, milk and beaten eggs, mixing to combine.

Pour into Stone Rectangular Baker, then add topping, sprinkling to cover sweet potatoes.  Cover with Stone Tray or foil.

Bake for 45 minutes, remove cover and bake for an addition 15 minutes, or until topping is nicely browned. 

Serve immediately.

Ingredients
  

  • 2 lb Sweet Potatoes, peeled and cubed
  • 2 tbsp granulated sugar
  • cup unsalted butter
  • ½ cup milk
  • 2 eggs, beaten

Topping

  • cup brown sugar, packed
  • cup pecans, chopped
  • 2 tbsp butter
  • 2 tbsp all-purpose flour

Instructions
 

  • Preheat oven to 325⁰F/ 165⁰C.
    Add a pinch of salt to a large pot of water; bring to a rolling boil.
  • Peel and cube sweet potatoes, add to boiling water, and cook until tender, approximately 20 minutes.

Make Ahead –
This recipe can be prepared one day ahead, make the casserole up to the point where you add the topping.  Refrigerate casserole until ready to bake, then add the topping and bake according to directions.  If using the Stone baker, remove from refrigerator 30 minutes prior to baking.

Creamy and buttery, these pressure cooker mashed potatoes are an easy-to-make side dish to serve at your Thanksgiving dinner, or anytime! For this recipe, I used my Deluxe Multi Cooker to cook the potatoes, and our Insulated Serving Bowl Set to keep them (and other sides) warm afterwards.  Here is the information on these two wonderful products:

Let’s jump right in!!

Ingredients

  • 3 lbs. gold or russet potatoes, peeled and cut in half
  • 1 cup water
  • 1/2 cup butter (1 stick)
  • ½ cup heavy cream
  • Salt and pepper, to taste
  • Flat parsley, for garnish

Instructions

Peel potatoes, slice in half.

Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.

Cook on CUSTOM for 20 minutes, then release the pressure manually.

Stir in the cream, top with parsley and more salt and pepper to taste. Serve immediately, or keep warm up to two hours in Insulated Serving Bowl Set.

Pressure Cooker Mashed Potatoes

Rich with butter and cream, these pressure cooker mashed potatoes are an easy-to-make side dish to serve at your Thanksgiving dinner, or anytime!

Ingredients
 
 

  • 3 lbs gold or russet potatoes, peeled and cut in half

  • kosher salt and pepper, to taste

Instructions
 

  • Peel potatoes, slice in half.

  • Place the water in the inner pot of the Deluxe Multi Cooker.Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.

  • Place the warm potatoes into the inner pot. Add the butter,salt and pepper; mash and thoroughly combine. Stir in the cream, top with parsley and more salt and pepper to taste. Serve immediately, or keep warm up to two hours in Insulated Serving Bowl Set.

Notes

To prep ahead, peel and cut potatoes, store in container or zip-top bag with cold water enough to cover potatoes.  You can do this one day ahead, then proceed with the rest of the recipe when ready.

Crispy homemade French Fries are easy to make, and even easier to eat!! The key to crispy fries is to soak the potatoes in cold water prior to cooking, to remove some of the starch. 

I’ve tried a few different ways and temps, and this is what works best for me.  If you have a different method, please let me know!

Cutting the fries is no problem at all with the Rapid-Prep Mandoline:

Ingredients

  • 4 russet potatoes peeled, if you prefer
  • Water to cover potatoes
  • Canola oil for frying can sub vegetable or peanut oil
  • Sea salt to taste
  • Black pepper to taste

Instructions

Peel potatoes and use the Rapid-Prep Mandoline to cut into sticks, or cut the potatoes into four pieces, then slice into sticks.

Cover with cold water and refrigerate for 10 minutes – 4 hours to help remove the starch.

Drain potatoes and lay them on a clean kitchen towel to dry the potatoes, covering them with another kitchen towel to pat dry. 

Meanwhile, heat oil in Dutch oven to 300°F/150⁰C.

First Fry

When potatoes are dry and the temperature is reached, add them in batches and cook for 10-12 minutes until softened.  Remove to rack or paper towels and continue this process until all potatoes have been softened. Bring the temperature of the oil to 375°F/190°C.

Second Fry

Add the fries back to the Dutch oven, again in batches, and cook 2-3 minutes, or until golden brown and crispy. Remove to wire rack to drain and immediately sprinkle with sea salt and pepper, if desired.

  • canola oil for frying
  • sea salt to taste
  • black pepper to taste

Instructions
