Ingredients

For the Beans

  • 8 cups water
  • 1-pound dry navy beans, rinsed and picked through
  • 1 tablespoon olive oil
  • 6 ounces salt pork, diced
  • 6 ounces bacon, cut into small pieces
  • 1 small onion, diced
  • ½ cup apple cider vinegar

For the Sauce

  • 1 cup water
  • ⅓ cup molasses
  • ¼ cup ketchup
  • ¼ cup brown sugar
  • 2 tablespoons pure maple syrup
  • 1 tablespoon yellow mustard

Instructions

Combine water and beans in the Deluxe Multi Cooker. Lock the Lid. Select BEANS for 20 minutes. Press and hold the button to start.

When the timer is up, let the pressure release naturally for 10 minutes, then press the steam button to release the rest of the pressure; hit the cancel button.

Drain and rinse beans with cold water and set aside. Rinse and wipe out the Instant Pot insert and place back into the pressure cooker.

Turn on the Deluxe Multi Cooker and select the SEAR function. Heat olive oil until shimmering, 2 to 3 minutes. Add salt pork, bacon, and onion; cook until fat begins to render, 1 to 2 minutes. Pour in 1/2 cup apple cider vinegar and scrape any browned bits off the bottom. Turn the Deluxe Multi Cooker off.

For the sauce, whisk together molasses, ketchup, brown sugar, maple syrup, mustard, and water in a small bowl.

Return cooked beans to the pot along with the molasses mixture. Gently stir to combine. Lock the lid. Select CUSTOM/HIGH PRESSURE; set timer to 25 minutes, press and hold button to start.

When the timer is up, let the pressure release naturally for 10 minutes, then press the steam button to release the rest of the pressure; hit the cancel button.

Remove lid and stir to combine. Beans will thicken as they cool. Serve hot or warm.

  • 8 cups water

  • 2 tbsp Chili Lime Rub
  • 1 cup salsa of your choice

Serving Station (optional):

  • Lettuce cups
  • Flour or corn tortillas
  • Cheddar cheese

  • Cilantro
  • Avocado

Instructions

Season the chicken breasts with the Chili Lime Rub and place them in the Deluxe Multi Cooker, then add the salsa.

Lock the lid and select the POULTRY setting. Press START.

Meanwhile, Prep optional toppings as needed.

When the timer is up, press CANCEL. Press the steam-release button to manually release the pressure. Chop the chicken with the Salad Chopper. Serve the chicken with any toppings as desired.

Ground beef Shepherd’s Pie is a hearty and comforting dish that’s a hug on a plate!  

I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership costs me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. Ingredients

For the Mashed Potatoes

  • 3 lbs. russet potatoes, peeled and cut in half
  • 1 cup water
  • 1/2 cup butter (1 stick)
  • ½ cup heavy cream
  • Salt and pepper, to taste
  • Flat parsley, for garnish

For the Filling

  • 2 lb. lean ground beef
  • Salt and pepper to taste
  • 1 medium yellow onion, chopped
  • 2 medium carrots, peeled, chopped
  • 3 cloves garlic, chopped
  • 2 teaspoons chopped fresh rosemary
  • 2 teaspoons chopped fresh thyme
  • 3 tablespoons tomato paste
  • 1/2 cup red wine
  • 1 cup beef broth
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons all-purpose flour
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 3 tablespoons grated Parmesan
  • 1 tablespoon chopped fresh parsley

Instructions

For the Mashed Potatoes

Peel potatoes, slice in half.

Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.

Cook on CUSTOM for 20 minutes, then release the pressure manually.

Place the warm potatoes into the inner pot. Add the butter, salt and pepper; mash and thoroughly combine. Stir in the cream, top with parsley and more salt and pepper to taste.

For the Filling

Preheat oven to 400°F/200⁰C.

Add beef to a large skillet over medium-high heat. Season with 2 teaspoons salt and 1/2 teaspoon pepper. Break up beef with the Mix ‘N Chop and cook until crumbly and no longer pink, 6 to 8 minutes. Transfer beef to a plate. Pour off all but 2 tablespoons beef drippings.

In same skillet over medium heat, cook onion and carrots, stirring, until onions begin to soften, 5 to 6 minutes. Add garlic, rosemary, and thyme and cook, stirring, until fragrant, about 2 minutes more. Return beef and accumulated juices to skillet; stir in tomato paste. Cook, stirring, until tomato paste turns dark red, 3 to 4 minutes. Add wine and cook, stirring, until almost completely evaporated, 2 to 3 minutes. Stir in broth and Worcestershire and bring to a simmer. Sprinkle with flour and cook, stirring occasionally, until sauce is thickened, about 5 minutes. Stir in corn and peas. Remove from heat.

If using the 12″ (30-cm) Signature Nonstick Skillet, leave in pan and top filling with mashed potatoes, spreading to cover filling completely. Sprinkle with Parmesan; season with a pinch of pepper. Alternatively, you can transfer filling to a 13” x 9” baking stone or pan and proceed with recipe).

Remove handle from 12″ (30-cm) Signature Nonstick Skillet and bake shepherd’s pie until beef mixture is bubbling, about 25 minutes. Remove from oven.

Place a rack in upper third of oven and turn broiler to high. Broil until top begins to brown, 1 to 2 minutes.

Sprinkle with remaining 1 tablespoon of parsley. Let cool 10 minutes before serving.

For the Mashed Potatoes

  • 3 lbs. russet potatoes peeled and cut in half
  • 1 cup water
  • ½ cup butter 1 stick
  • ½ cup heavy cream
  • Salt and pepper to taste
  • Flat parsley for garnish

For the Filling

  • Freshly ground black pepper
  • 2 lb. ground beef or minced lamb
  • 1 medium yellow onion chopped
  • 2 medium carrots peeled, chopped
  • 3 cloves garlic chopped
  • 2 teaspoons rosemary chopped
  • 2 teaspoons thyme chopped
  • 3 tablespoons tomato paste
  • ½ cup red wine
  • 1 cup beef broth
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons all-purpose flour
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 3 tablespoons grated Parmesan
  • 1 tablespoon flat parsley freshly chopped

  • Preheat oven to 400°F/200⁰C.

For the Mashed Potatoes

  • Peel potatoes, slice in half.
    3 lbs. russet potatoes
  • Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.
    1 cup water
  • Cook on CUSTOM for 20 minutes, then release the pressure manually.
  • Place the warm potatoes into the inner pot. Add the butter, salt and pepper; mash and thoroughly combine. Stir in the cream, top with parsley and more salt and pepper to taste.
    1/2 cup butter, ½ cup heavy cream, Salt and pepper, Flat parsley

For the Filling

  • Add beef to a large skillet over medium-high heat. Season with 2 teaspoons salt and 1/2 teaspoon pepper. Break up beef with the Mix ‘N Chop and cook until crumbly and no longer pink, 6 to 8 minutes. Transfer beef to a plate. Pour off all but 2 tablespoons beef drippings.
    Freshly ground black pepper, 2 lb. ground beef
  • In same skillet over medium heat, cook onion and carrots, stirring, until onions begin to soften, 5 to 6 minutes. Add garlic, rosemary, and thyme and cook, stirring, until fragrant, about 2 minutes more. Return beef and accumulated juices to skillet; stir in tomato paste. Cook, stirring, until tomato paste turns dark red, 3 to 4 minutes. Add wine and cook, stirring, until almost completely evaporated, 2 to 3 minutes. Stir in broth and Worcestershire and bring to a simmer. Sprinkle with flour and cook, stirring occasionally, until sauce is thickened, about 5 minutes. Stir in corn and peas. Remove from heat.
    1 medium yellow onion, 2 medium carrots, 3 cloves garlic, 2 teaspoons rosemary, 2 teaspoons thyme, 3 tablespoons tomato paste, 1/2 cup red wine, 1 cup beef broth, 3 tablespoons Worcestershire sauce, 3 tablespoons all-purpose flour, 1 cup frozen corn, 1 cup frozen peas
  • If using the 12″ (30-cm) Signature Nonstick Skillet, leave in pan and top filling with mashed potatoes, spreading to cover filling completely. Sprinkle with Parmesan; season with a pinch of pepper. Alternatively, you can transfer filling to a 13” x 9” baking stone or pan and proceed with recipe).
    3 tablespoons grated Parmesan

Crème Brûlée is an exquisite dessert, marrying a velvety custard with a crisp caramelized sugar crust.

With the Sous Vide method, making this luxurious treat has never been easier!

Is Sous Vide Crème Brûlée a thing?

According to Anova Culinary, it most certainly is!

“Creme brûlée is the perfect dessert for sous vide cooking. The temperature is always precise and there is no wrangling a full water bath in and out of the oven. You simply CANNOT overcook it! You can make as many portions as you can fit screw-top mason jars in your cooking vessel with water still circulating around them. You can make it five days in advance and literally stack your jars in the fridge, not having to worry about entire trays of ramekins being perfectly covered and taking up entire shelves.”

Here’s a quick Sous Vide refresher:

Sous Vide is a method of cooking foods in a water bath at a precisely controlled (lower) temperature for an extended period time. The results speak for themselves. You won’t ever worry about overcooking an expensive cut of meat, it will come out perfectly tender and juicy, based on the temperature YOU select, every single time. So far, I notice also that using the sous vide method leaves me time to do other things, as it’s a matter of placing your food in a reusable or zip top bag and into    the water, pressing START and it does its thing.

Is Sous Vide Crème Brûlée a thing?

Believe me, this is the EASIEST way I’ve ever made this recipe, and once you try it, you won’t go back to the traditional method.

For this recipe, I used my Deluxe Multi Cooker:

Ingredients

Custard

  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1 vanilla bean, split lengthwise, or 1 teaspoon vanilla extract
  • 2 cups heavy cream

Topping

  • 1/4 cup granulated sugar

Instructions

Fill the inner pot of the Deluxe Multi Cooker with water 1″ below the ½ fill line. Lock the lid and select SOUS VIDE. Set the temperature to 179° F and the timer for 1 hour; press and hold START.

Separate 5 egg yolks. Combine yolks with sugar, whisk well.

Split vanilla bean lengthwise with the tip of a paring knife. Using the edge of the knife, scrape out all the seeds on both splits of the bean, and add to egg mixture. Whisk to incorporate.

Whisk in heavy cream, then strain the mixture. Pour into jars with lids.

When you hear beeps and ADD is displayed on the DMC, open the lid and submerge the jars. Lock the lid and press START.

When the timer is up, press CANCEL. Carefully remove the jars. Allow them to cool, then remove the lids.  Remove condensation from inside the lids, then use the lids to cover the jars once again. Chill for 4 hours-overnight.

Topping Add 1.5 teaspoons of sugar to each jar. Use a kitchen torch to brown sugar, or broil for 1-3 minutes.

Chill vibes meet creamy delight! Learn to craft Pressure Cooker Cold Start Vanilla Yogurt – your go-to for a refreshing taste of homemade goodness. I wanted to make vanilla yogurt but wasn’t sure if I could do it using the cold-start method. I decided to give it a try, and it worked beautifully!

For this type of yogurt, you’ll need to use Ultra-filtered milk. Our family loves Fairlife, especially because being ultra-filtered, it is lactose free for those in our family who like milk but are lactose intolerant. You will also need to use a yogurt that has active bacteria cultures, as we are not cooking this at all (that’s why it is called cold start).

Why bother making yogurt?

Is it worth it? Absolutely, yes! I figured out the cost in my area, and I can get TWICE the amount of yogurt for the price of one large container. That right there makes it worth it for our family. Plus, it is so easy and fresh, you can also freeze it in small quantities for smoothies, just be sure to save two tablespoons for your next batch, and then you will save even more money!

  • One 52-ounce container Fairlife or other ultra-filtered milk
  • 7-ounces condensed milk (about ½ can)
  • 2 tablespoons vanilla extract

Instructions

Add 2 cups of milk to the inner pot.  Add the yogurt, whisk very well until incorporated.  Pour in the rest of the milk, condensed milk, and vanilla extract. Whisk again until combined.

Lock the lid and select YOGURT – MEDIUM (Temperature). Set time to 8 hours (or up to 12 hours for tangier yogurt) and press START.

Once the timer goes off, press CANCEL. Remove inner pot, cover with foil, and refrigerate for at least 4 hours. 

Remove to separate containers; you can also freeze in small batches and be sure to save some of this yogurt so that you have the starter to make your next batch. 

Serve plain or with fresh fruit, if desired.
