Elevate game day with this quick and cheesy Pressure Cooker Chicken Nachos!

In case you can’t tell, I’ve been on a pressure cooker and sous vide kick lately!  This recipe fits the bill, it’s easy and a great appetizer OR dinner. 

Of course, I used my Deluxe Multi Cooker , Pressure Cooker Steamer Baskets, I used my Deluxe Stand Mixer to shred the chicken and the 10″ Cast Iron Skillet to finish the nachos:

Let’s jump right in!

Ingredients

For the Rub:

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt, or to taste
  • 1/4 teaspoon red pepper flakes

For the Chicken

  • 1.5 lb boneless chicken breast
  • 1 onion diced
  • 2 cloves garlic, sliced
  • 2 tablespoons tomato paste
  • Zest and juice of one orange
  • juice of one lime
  • 1 cup chicken broth

For the Nachos:

  • Tortilla Chips
  • 2 ½ cups shredded Monterey Jack Cheese
  • 1 cup cherry tomatoes, sliced in half
  • 1 red onion, sliced
  • Jalapenos sliced (optional)
  • Cilantro (optional)

Instructions

Dice onion, slice garlic, zest and juice one orange; set aside.

Mix all the spices together to create the rub, and use half on the chicken, being sure to rub in the mixture on both sides.

Add the chopped onion, chopped garlic, tomato paste, lime juice, and the remaining rub to the Deluxe Multi Cooker, and stir to combine. Place the Steamer Basket inside the inner pot.

Place chicken in steamer basket over broth mixture. Lock the lid and select CUSTOM- 10 MINUTES and press START. It will display the word “RUN“.

Once timer goes off, release the pressure manually. Carefully open the lid and remove chicken.

Preheat oven to 400°F/200⁰C .

Place chicken in Deluxe Stand Mixer, with paddle attachment. Set to CUSTOM 1 press START to shred the chicken approximately 30-60 seconds. Add chicken back into the sauce, mixing to combine.

Grab a cast iron skillet, and layer the nachos as follows:

  • Tortilla chips
  • Shredded chicken
  • Red onion
  • Tomatoes
  • Cheese
  • Jalapeno (optional)
  • Cilantro (optional)

Create one more layer of the same, then bake for 5-8 minutes, or until cheese is bubbling. 

Serve immediately with sour cream, guacamole and more cilantro, if desired.

  • Add the chopped onion, chopped garlic, tomato paste, lime juice, orange juice and zest, broth, and the remaining rub to the Deluxe Multi Cooker, and stir to combine. Place the Steamer Basket inside the inner pot.

Indulge in sous vide perfection: Butter-Basted Halibut. Elevate your dining experience with this melt-in-your-mouth delight that is so easy to make!

Here’s a quick Sous Vide refresher:

Sous Vide is a method of cooking foods in a water bath at a precisely controlled (lower) temperature for an extended period time. The results speak for themselves. You won’t ever worry about overcooking an expensive cut of meat, it will come out perfectly tender and juicy, based on the temperature YOU select, every single time. So far, I notice also that using the sous vide method leaves me time to do other things, as it’s a matter of placing your food in a reusable or zip top bag and into the water, pressing START and it does its thing.

To Brine or Not to Brine?

Drying brining salmon with salt before sous vide cooking serves several important purposes:

  1. Flavor Enhancement: The salt in the dry brine enhances the natural flavors of the salmon. It not only adds a savory taste but also helps accentuate the inherent richness of the fish.
  2. Texture Improvement: Dry brining aids in modifying the texture of the salmon. It works to firm up the flesh slightly, giving it a more appealing texture when cooked sous vide. This ensures that the salmon maintains its structure while still achieving the desired level of tenderness.
  3. Moisture Retention: While it may seem counterintuitive, dry brining helps the salmon retain moisture during the sous vide process. The salt draws out excess moisture initially, but then it gets reabsorbed, along with the seasoned flavors, resulting in a juicier and more succulent final product.
  4. Consistent Seasoning: Dry brining provides a more even distribution of salt across the salmon. This ensures that each bite is consistently seasoned, preventing pockets of blandness or excessive saltiness in different parts of the fish.
  5. Improved Sous Vide Precision: Removing excess moisture from the surface of the salmon through dry brining contributes to more effective sous vide cooking. With less surface moisture, the sous vide process can more efficiently transfer heat to the salmon, promoting a precise and uniform cooking experience.
  6. Enhanced Sous Vide Bag Seal: The surface dryness achieved through dry brining facilitates a better seal when placing the salmon in the sous vide bag. This is crucial for an airtight seal, preventing water from entering the bag and compromising the sous vide cooking process.

Sous Vide and Seafood

The sous vide method of cooking is a fantastic way to preserve the texture and flavor of your seafood, without ever overcooking.  It is also one of the most nutritious methods of cooking, since we are using a lower temperature, we will be retaining more nutrients.  Also, it’s just so darn easy, you should give it a try.

Let’s jump right in!

Ingredients

  • 1-pound fresh halibut filet, cut into two pieces
  • 1 teaspoon kosher salt
  • 1 teaspoon Freshly ground black pepper (or to taste)
  • 2 tablespoons unsalted butter, divided
  • 4 sprigs fresh thyme

Garnish

  • Fresh parsley
  • Lemon wedges

Instructions

Fill the inner pot of the Deluxe Multi Cooker with water 1″ below the ½ fill line. Lock the lid and select SOUS VIDE. Set the temperature to 130°F/54⁰C and the timer for 1 hour; press and hold START.

BRINE – Salt the halibut and let rest for 15 minutes, up to one hour. Pat dry.

Season Halibut with any remaining salt, and pepper. Top with 1 tablespoon butter on each filet. 

Add halibut to Large Reusable Storage Bag or zip top freezer bag  in one layer. Add sprigs of thyme to each piece of halibut.

When you hear beeps and ADD is displayed on the Deluxe Multi Cooker, open the lid and submerge the bag gently in water using the water displacement method.

Water Displacement method: seal the bag almost all the way, leaving a small corner open.  Slowly submerge the bag into the water, gently pressing to help air escape.  Seal bag when food is completely submerged (but NOT the top of the bag), seal the bag.

Lock the lid and press START. It will display the time that you set it for.

Cooking times:

  • If your filets are 1’ thick, cook between 30-45 minutes
  • If your filets are 1.5” thick, cook between 45-60 minutes

When the timer is up (or when you are finished cooking based on thickness), press CANCEL.

Carefully remove the bag. Use a fish spatula to gently remove halibut and put onto a small sheet pan. Remove thyme, then pat the halibut dry and let rest for a few minutes.

Turn your broiler to HIGH, and broil halibut for 3-5 minutes, until lightly browned on top.

Garnish with parsley, if desired.  Serve with lemon wedges.

  • 4 sprigs fresh thyme

BRINE – Season the halibut with 1/2 teaspoon salt and let rest for 15 minutes, up to one hour. Pat dry.

  • Season Halibut with remaining salt, and pepper. Top with 1 tablespoon butter on each filet.

  • When you hear beeps and ADD is displayed on the Deluxe Multi Cooker, open the lid and submerge the bag gently in water using the water displacement method.

  • Cooking times:
    – If your filets are 1’ thick, cook between 30-45 minutes
    – If your filets are 1.5” thick, cook between 45-60 minutes
  • When the timer is up (or when you are finished cooking based on thickness), press CANCEL.
  • Carefully remove the bag. Use a fish spatula to gently remove halibut and put onto a small sheet pan. Remove thyme, then pat the halibut dry and let rest for a few minutes.
  • Turn your broiler to HIGH, and broil halibut for 3-5 minutes, until lightly browned on top.
  • Garnish with parsley, if desired. Serve with lemon wedges.

Notes

You can alternatively keep the halibut in the reusable bag and place the bag in ice water for 5 minutes or until chilled. Dry the bag and label it, then place in the refrigerator up to 48 hours or the freezer up to three months.

Spice up your dinner in just 3 minutes! Watch how to create succulent Pressure Cooker Pork Tenderloin with flavorful gravy—quick, easy, and irresistible! I came up with this recipe because while I love pork tenderloin, many of the recipes I looked at did not have gravy, which I was craving.  I had some leftover Tawny Port Wine, so I used that which was amazing.  You could definitely use another red wine or could even try white if you like!

For this recipe, I used my Deluxe Multi Cooker and Herbs de Provence Seasoning Mix:

Let’s jump right in!

Ingredients

  • 1.5 lbs. pork tenderloin
  • 1 tablespoon Herbs de Provence Seasoning Mix
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper or to taste
  • 3 tablespoons olive oil divided
  • 2 cloves garlic sliced
  • 1 shallot diced
  • 1/3 cup red wine
  • 1 cup chicken broth

Slurry for Gravy

  • 1 tablespoon cornstarch
  • 1 tablespoon cold water or broth

Instructions

Use a sharp knife to remove any silverskin* from pork.  Cut into two pieces to fit your pressure cooker if necessary.

Slice garlic and dice shallots; set aside.

Combine Herbs de Provence, smoked paprika, salt, and pepper with two tablespoons of olive oil in bowl, whisking well. Add pork, turning to coat.

Select SEAR-HIGH- 20 MINUTES on the Deluxe Multi Cooker. Wait three minutes, then add remaining olive oil to the inner pot.  Add in the pork tenderloin, searing 2-3 minutes per side, until lightly browned. Remove pork from inner pot.

Add in garlic and shallots cooking 1 minute or until fragrant. Pour in wine and scrape any browned bits (called fond) from the bottom of the inner pot.  Add in the broth, and then hit CANCEL. Place the pork back into the inner pot.

Lock the lid and select CUSTOM-3 MINUTES and press START. It will display the word “RUN“.

Make the Slurry

Whisk together the cornstarch and water (or broth, if using) until smooth; set aside.

Once timer goes off, release the pressure manually. Carefully open the lid and remove pork. Place the Deluxe Multi Cooker back on SEAR.

Pour the slurry into the broth mixture, whisking constantly until combined, and gravy is thickened.  Let cook for an additional two minutes, then hit CANCEL.

Slice pork and serve immediately with gravy.

  • Add in garlic and shallots cooking 1 minute or until fragrant. Pour in wine and scrape any browned bits (called fond) from the bottom of the inner pot. Add in the broth, and then hit CANCEL. Place the pork back into the inner pot.

Notes

*Silverskin, also known as connective tissue, is a tough and silvery membrane that covers part of a pork tenderloin. It doesn’t break down easily during cooking, so it’s recommended to remove it to improve the tenderness of the meat.
Here’s how you can remove silverskin from a pork tenderloin:
1. Trim the Ends: Begin by trimming any excess fat and the tapered ends of the tenderloin.
2. Locate the Silverskin: Find the silverskin on the surface of the pork tenderloin. It’s usually a shiny, silvery-white layer.
3. Insert Knife Underneath: Use a sharp knife to gently lift a corner of the silverskin. Slide the knife just under the silverskin, angling it slightly upwards to avoid removing too much meat.
4. Peel Away: Once you have a good grip with the knife under the silverskin, use a gentle sawing motion to peel it away. Keep the knife as close to the membrane as possible to minimize meat loss.
5. Repeat: Continue this process until you’ve removed all the silverskin from the pork tenderloin.
6. Trim Remaining Fat: After removing the silverskin, you may notice some excess fat. Trim this away as well.
Taking the time to remove the silverskin will result in a more tender and enjoyable pork tenderloin when cooked.

Perfectly seasoned, juicy and tender, these Pressure Cooker Chicken Thighs are one of the easiest weeknight recipes to pull together! I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. You can learn more about their membership here; this is a code I found online, as I believe the normal cost is $35/year, but this code looks like you can still get it for $20/year, which is great!   • 6 bone-in skin-on chicken thighs
  • 2 teaspoons freshly chopped thyme
  • 1 teaspoon smoked paprika
  • Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, sliced
  • 1 cup chicken broth
  • 2 sprigs fresh thyme
  • 2 tablespoons all-purpose flour

Instructions

Slice garlic and set aside.

Season chicken all over with chopped thyme, paprika, salt, and pepper.

Set Deluxe Multi Cooker to SEAR/HIGH, 15 minutes. Add oil to pot, then add in chicken thighs skin-side down. Sear 4 minutes per side until golden, then sear the other side for three minutes.  Sear chicken in batches as needed.  Remove chicken from pot.

Add the sliced garlic to the inner pot and cook until fragrant, 1 minute. Add chicken broth to inner pot, scraping any browned bits (fond) from the bottom of the pot; add in thyme sprigs.

Place the Deluxe Multi Cooker Steamer Basket inside the inner pot, then place the chicken inside the basket. Lock the lid, set to POULTRY, 12 minutes. Press button to start. Once timer goes off, allow pressure to release naturally.

Carefully remove chicken and basket. Remove thyme sprigs. Place back on SEAR.

Remove three tablespoons of the hot broth from the pot and add to the flour, whisking until smooth. Pour mixture into the pot, whisking constantly while mixture comes back to a simmer.  Cook until gravy is slightly thickened, approximately 5-6 minutes. Season to taste with salt and pepper. 

Pour some of the gravy over the chicken, and serve the rest on the side.

Creamy and buttery, these pressure cooker mashed potatoes are an easy-to-make side dish to serve at your Thanksgiving dinner, or anytime! Ingredients

  • 3 lbs. gold or russet potatoes, peeled and cut in half
  • 1 cup water
  • 1/2 cup butter (1 stick)
  • ½ cup heavy cream
  • Salt and pepper, to taste
  • Flat parsley, for garnish

Instructions

Peel potatoes, slice in half.

Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.

Cook on CUSTOM for 20 minutes, then release the pressure manually.

Stir in the cream, top with parsley and more salt and pepper to taste. Serve immediately, or keep warm up to two hours in Insulated Serving Bowl Set.

Pressure Cooker Mashed Potatoes

Rich with butter and cream, these pressure cooker mashed potatoes are an easy-to-make side dish to serve at your Thanksgiving dinner, or anytime!

Ingredients

  • kosher salt and pepper, to taste
  • Flat parsley, chopped for garnish

Instructions
 

  • Peel potatoes, slice in half.
    3 lbs gold or russet potatoes, peeled and cut in half
  • Place the water in the inner pot of the Deluxe Multi Cooker.Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.

  • Cook on CUSTOM for 20 minutes, then release the pressure manually.
  • Place the warm potatoes into the inner pot. Add the butter,salt and pepper; mash and thoroughly combine. Stir in the cream, top with parsley and more salt and pepper to taste. Serve immediately, or keep warm up to two hours in Insulated Serving Bowl Set.

Notes

To prep ahead, peel and cut potatoes, store in container or zip-top bag with cold water enough to cover potatoes.  You can do this one day ahead, then proceed with the rest of the recipe when ready.
