Create a tasty family favorite in 20 minutes! Our Cannellini Beans with Tomatoes and Prosciutto is simple, delicious, and perfect for busy weeknights! I saw a recipe like this on Reddit a while back, and always wanted to give it a try, with my own spin on it. I added some prosciutto, since I had it on hand, and it crisped up nicely and added a bit of saltiness to this delicious dish. I also topped it with some burrata that I had, but you could certainly substitute with ricotta, or whatever you have on hand. This is a very forgiving recipe, and I love that it can be pulled together with ingredients you already have on hand.

Let’s jump right in!

Ingredients

  • 1 large shallot finely chopped
  • 3 cloves garlic sliced
  • 2 pints of cherry tomatoes
  • 1 tablespoon olive oil
  • 2 slices prosciutto torn
  • 30 ounces cannellini beans 2 cans, drained
  • 4 ounces burrata cheese

Toppings

  • Basil or other fresh herbs of your choice
  • Pine nuts

Instructions

Prepare your vegetables – slice the garlic, chop shallots; set aside.

In 12″ Stainless Steel Nonstick Skillet over medium-high heat, heat oil, then add shallots and sauté for three minutes, until translucent and slightly caramelized. Add in garlic and prosciutto, and sauté for one minute.

Turn the heat down to medium, then add in tomatoes. Cook for 10 minutes, until tomatoes begin to burst, adding a splash of wine or water if necessary. Use immersion blender to blend tomatoes until smooth, or to desired texture.

Add cannellini beans, and simmer for 5 minutes until heated through. Remove from heat and add burrata cheese,

Top with basil and pine nuts as desired. Serve immediately with some crusty bread.

Whip up a flavor-packed skillet chicken with juicy tomatoes, crispy pancetta, and gooey mozzarella in a snap! I adapted this recipe from NYT Cooking, and we’ve made it at least three times already.  It’s easy and delicious!  For the sides, I like to make some broccolini with garlic, and you can add some pasta, or even potatoes if you like.For this recipe, I used my 12″ Stainless Steel Nonstick Skillet, the Garlic Prep Tool and the Mix ‘N Chop:

Ingredients

  • 3½ pounds bone-in chicken thighs
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 5 ounces pancetta, diced
  • 3 garlic cloves, thinly sliced
  • 2 anchovy fillets
  • ½ teaspoon red pepper flakes
  • ¼ cup dry white wine
  • 28 ounces whole plum tomatoes
  • 1 large basil sprig, plus more chopped basil for serving
  • 8 ounces ciliegine mozzarella balls

Instructions

Preheat oven to 400°F/200⁰C. Use the Garlic Prep Tool to slice garlic. Pat chicken dry and season with salt and pepper.

In 12″ Stainless Steel Nonstick Skillet over medium-high heat, warm oil over medium-high heat. Add pancetta and cook, stirring frequently, until browned. Use a slotted spoon to transfer pancetta to a paper-towel-lined plate.

Turn heat to medium, then add chicken to skillet, skin side down. Cook for 5-7 minutes, until nicely browned, then flip chicken and cook for another 5 minutes. Remove the chicken from the pan onto a large plate. Leave only one tablespoon of oil in the skillet, discard the rest.

Add garlic, anchovy fillets, and red pepper flakes to skillet; fry for one minute, or until fragrant. Pour wine into pan to deglaze. Stir in tomatoes and basil. Cook, breaking up tomatoes with the Mix ‘N Chop or a spatula, until sauce thickens slightly, about 10 minutes.

Return chicken to skillet. Transfer skillet to oven and cook, uncovered, until chicken is no longer pink, about 30 minutes.

Scatter ciliegine mozzarella balls over skillet, and place back into the oven until they are beginning to melt, about 5 minutes.

Top with pancetta and chopped basil before serving.

You can use split chicken breast if that’s what you have, or even a cut-up chicken. Adjust the time accordingly to the size of the pieces.

Freshly baked potato rolls are easier than you think! Soft, fluffy, and oh-so-delicious. This recipe is my adaptation from two different recipes, one from Allrecipes and the other from Delish.

For this recipe, I used my Deluxe Stand Mixer and Stone Rectangular Baker With Tray:

Ingredients

For the Rolls

  • ¼ cup water approximately 110°F/43⁰C
  • 1 teaspoon sugar
  • 2 ¼ teaspoons active dry yeast
  • ¼ cup sugar
  • 1 large russet potato cooked and mashed @1 cup
  • 1 cup milk
  • 6 tablespoons butter melted
  • 1 egg
  • 1 ½ teaspoons salt
  • 4 ½ – 5 cups all-purpose flour

For the Topping

  • 2 tablespoons butter melted

Instructions

Peel, dice, boil, and mash potato; set aside. *

In bowl of Deluxe Stand Mixer fitted with dough hook attachment, combine water and 1 teaspoon sugar. Sprinkle yeast on top and let sit until foamy, about 5 minutes.

Add to bowl the sugar, mashed potato, milk, butter, egg, and salt.  Mix to combine.  Add in the flour.

Set Deluxe Stand Mixer to Knead for five minutes**, or until the dough comes together and pulls away from the side of the bowl.

Transfer dough to a clean bowl. Cover and let rise in a warm area for 1 hour, until doubled in size.

Uncover dough and punch it down to release air then turn out onto a lightly floured board.  Divide dough into 16-20 even pieces, then roll each piece into a smooth ball.

Place them into the Stone Rectangular Baker With Tray***, cover and let rise for another 30 minutes. 

Preheat oven to 400°F/200⁰C.

Remove cover, then bake rolls until golden, about 25 minutes. 

Brush with melted butter and serve warm.

Potato Rolls (Video)

Freshly baked potato rolls are easier than you think! Soft, fluffy, and oh-so-delicious.

For the Rolls

  • ¼ cup water approximately 110°F/43⁰C
  • 1 teaspoon sugar
  • 2 ¼ teaspoons active dry yeast
  • ¼ cup sugar
  • 1 large russet potato cooked and mashed @1 cup
  • 1 cup milk
  • 6 tablespoons butter melted
  • 1 egg
  • 1 ½ teaspoons salt
  • 4 ½ – 5 cups all-purpose flour

For the Topping

  • 2 tablespoons butter melted

  • Peel, dice, boil, and mash potato; set aside. *
    1 large russet potato
  • In bowl of Deluxe Stand Mixer fitted with dough hook attachment, combine water and 1 teaspoon sugar. Sprinkle yeast on top and let sit until foamy, about 5 minutes.
    ¼ cup water, 1 teaspoon sugar, 2 ¼ teaspoons active dry yeast
  • Add to bowl the sugar, mashed potato, milk, butter, egg, and salt. Mix to combine. Add in the flour.
    ¼ cup sugar, 1 cup milk, 6 tablespoons butter , 1 egg, 1 ½ teaspoons salt, 4 ½ – 5 cups all-purpose flour, 1 large russet potato
  • Set Deluxe Stand Mixer to Knead for five minutes**, or until the dough comes together and pulls away from the side of the bowl.
  • Transfer dough to a clean bowl. Cover and let rise in a warm area for 1 hour, until doubled in size.
  • Uncover dough and punch it down to release air then turn out onto a lightly floured board. Divide dough into 16-20 even pieces, then roll each piece into a smooth ball.
  • Place them into the Stone Rectangular Baker With Tray***, cover and let rise for another 30 minutes.
  • Preheat oven to 400°F/200⁰C.
  • Remove cover, then bake rolls until golden, about 25 minutes.
  • Brush with melted butter and serve warm.
    2 tablespoons butter

Notes

*Alternatively, you can use leftover mashed potatoes.
**You can also knead this dough by hand.
***If you are baking your rolls in a pan other than the Stone Rectangular Baker With Tray, then I recommend greasing your pan so that the rolls do not stick.

Craft your own cheesy delight with this Quick & Easy Beer Cheese recipe! Creamy, tangy, and rich, it’s a flavor explosion waiting to happen! I made this recipe to go alongside the delicious Beer Bread I made the other day. It’s amazing!  Combined with the cheeses that add a smooth and tangy taste, the Guinness stout really brings out a deep malty undertone, complemented by hints of roasted barley and caramelized notes. Overall, it offers a delicious balance of savory, salty, and umami flavors, with a distinct Irish twist.

I made the beer cheese using my Pampered Chef my Deluxe Cooking Blender:

Ingredients

First Stage

  • 1 cup milk
  • ½ cup Guinness Stout Beer
  • 1 clove garlic
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

Second Stage

  • ¼ cup all-purpose flour
  • 3 tbsp butter

Add-In

  • 4 oz. cheddar cheese, cut into cubes
  • 4 oz. Swiss cheese, cut into cubes

Instructions

Add the first stage ingredients, in the order listed, to the Deluxe Cooking Blender. Replace and lock the lid. Turn the wheel to select the SAUCE setting; press the wheel to start.

Meanwhile, add the flour and butter to a microwave-safe bowl and microwave on HIGH for 1½ minutes, stirring every 30 seconds, to make a roux.

When prompted to “Add,” remove the vented lid cap and carefully add the roux to the pitcher. Replace the cap and press the wheel to start .*

When the timer is up, press CANCEL. Remove the cap and carefully add the add-in. Replace the cap and blend on speed 3 of the CUSTOM BLEND setting for 1 minute, or until the cheese is fully incorporated.**

Serve alongside pretzels or beer bread.

Safety Tips:
* The pitcher will be hot during and after cooking. Do not touch the hot glass.
** Use the pitcher handle and helper handle to tilt and lift the pitcher up from the base. Remove the lid away from your body and use the pitcher handle to pour the food.

Embrace simplicity with our Easy Beer Bread recipe – just 3 ingredients, no fuss! The Beer Bread Mix from Pampered Chef has long been one of my favorites, and I always make some for St. Patrick’s Day celebrations. If you do not want to use beer, you can substitute 12 ounces of your favorite flavored sparkling water, carbonated soft drink or fruit juice for the beverage.

For this recipe, I used my Beer Bread Mix and Stone Loaf Pan:

  • 12 ounces (1 1/2 cups) beer, non-alcoholic beer or sparkling fruit juice
  • 1 pouch (19 ounces) Beer Bread Mix
  • 1 tablespoon butter, melted

Instructions

Preheat oven to 350°F/175⁰C.

Combine bread mix with beer in large bowl; mix just until dry ingredients are moistened. (Do not overmix.)

Spoon batter into pan; drizzle with butter, if desired. Bake 50-55 minutes or until cake tester inserted in center comes out clean and top is golden brown.

Cool bread in pan 5 minutes; remove from pan. Serve warm or cool.
