Craft your own cheesy delight with this Quick & Easy Beer Cheese recipe! Creamy, tangy, and rich, it’s a flavor explosion waiting to happen! I made this recipe to go alongside the delicious Beer Bread I made the other day. It’s amazing!  Combined with the cheeses that add a smooth and tangy taste, the Guinness stout really brings out a deep malty undertone, complemented by hints of roasted barley and caramelized notes. Overall, it offers a delicious balance of savory, salty, and umami flavors, with a distinct Irish twist.

Ingredients

First Stage

  • 1 cup milk
  • ½ cup Guinness Stout Beer
  • 1 clove garlic
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

Second Stage

  • ¼ cup all-purpose flour
  • 3 tbsp butter

Add-In

  • 4 oz. cheddar cheese, cut into cubes
  • 4 oz. Swiss cheese, cut into cubes

Instructions

Add the first stage ingredients, in the order listed, to the Deluxe Cooking Blender. Replace and lock the lid. Turn the wheel to select the SAUCE setting; press the wheel to start.

Meanwhile, add the flour and butter to a microwave-safe bowl and microwave on HIGH for 1½ minutes, stirring every 30 seconds, to make a roux.

When prompted to “Add,” remove the vented lid cap and carefully add the roux to the pitcher. Replace the cap and press the wheel to start .*

When the timer is up, press CANCEL. Remove the cap and carefully add the add-in. Replace the cap and blend on speed 3 of the CUSTOM BLEND setting for 1 minute, or until the cheese is fully incorporated.**

Serve alongside pretzels or beer bread.

Safety Tips:
* The pitcher will be hot during and after cooking. Do not touch the hot glass.
** Use the pitcher handle and helper handle to tilt and lift the pitcher up from the base. Remove the lid away from your body and use the pitcher handle to pour the food.

If you do not want to use beer, you can substitute 12 ounces of your favorite flavored sparkling water, carbonated soft drink or fruit juice for the beverage.

    • 12 ounces (1 1/2 cups) beer, non-alcoholic beer or sparkling fruit juice
    • 1 pouch (19 ounces) Beer Bread Mix
    • 1 tablespoon butter, melted

    Instructions

    Preheat oven to 350°F/175⁰C.

    Combine bread mix with beer in large bowl; mix just until dry ingredients are moistened. (Do not overmix.)

    Spoon batter into pan; drizzle with butter, if desired. Bake 50-55 minutes or until cake tester inserted in center comes out clean and top is golden brown.

    Cool bread in pan 5 minutes; remove from pan. Serve warm or cool.

    Ground beef Shepherd’s Pie is a hearty and comforting dish that’s a hug on a plate!  

    I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership costs me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses.     For the Mashed Potatoes

    • 3 lbs. russet potatoes, peeled and cut in half
    • 1 cup water
    • 1/2 cup butter (1 stick)
    • ½ cup heavy cream
    • Salt and pepper, to taste
    • Flat parsley, for garnish

    For the Filling

    • 2 lb. lean ground beef
    • Salt and pepper to taste
    • 1 medium yellow onion, chopped
    • 2 medium carrots, peeled, chopped
    • 3 cloves garlic, chopped
    • 2 teaspoons chopped fresh rosemary
    • 2 teaspoons chopped fresh thyme
    • 3 tablespoons tomato paste
    • 1/2 cup red wine
    • 1 cup beef broth
    • 3 tablespoons Worcestershire sauce
    • 3 tablespoons all-purpose flour
    • 1 cup frozen corn
    • 1 cup frozen peas
    • 3 tablespoons grated Parmesan
    • 1 tablespoon chopped fresh parsley

    Instructions

    For the Mashed Potatoes

    Peel potatoes, slice in half.

    Place the water in the inner pot of the Deluxe Multi Cooker. Add the potatoes to the Pressure Cooker Steamer Basket and place in the inner pot.

    Cook on CUSTOM for 20 minutes, then release the pressure manually.

    Place the warm potatoes into the inner pot. Add the butter, salt and pepper; mash and thoroughly combine. Stir in the cream, top with parsley and more salt and pepper to taste.

    For the Filling

    Preheat oven to 400°F/200⁰C.

    Add beef to a large skillet over medium-high heat. Season with 2 teaspoons salt and 1/2 teaspoon pepper. Break up beef with the Mix ‘N Chop and cook until crumbly and no longer pink, 6 to 8 minutes. Transfer beef to a plate. Pour off all but 2 tablespoons beef drippings.

    In same skillet over medium heat, cook onion and carrots, stirring, until onions begin to soften, 5 to 6 minutes. Add garlic, rosemary, and thyme and cook, stirring, until fragrant, about 2 minutes more. Return beef and accumulated juices to skillet; stir in tomato paste. Cook, stirring, until tomato paste turns dark red, 3 to 4 minutes. Add wine and cook, stirring, until almost completely evaporated, 2 to 3 minutes. Stir in broth and Worcestershire and bring to a simmer. Sprinkle with flour and cook, stirring occasionally, until sauce is thickened, about 5 minutes. Stir in corn and peas. Remove from heat.

    If using the 12″ (30-cm) Signature Nonstick Skillet, leave in pan and top filling with mashed potatoes, spreading to cover filling completely. Sprinkle with Parmesan; season with a pinch of pepper. Alternatively, you can transfer filling to a 13” x 9” baking stone or pan and proceed with recipe).

    Remove handle from 12″ (30-cm) Signature Nonstick Skillet and bake shepherd’s pie until beef mixture is bubbling, about 25 minutes. Remove from oven.

    Place a rack in upper third of oven and turn broiler to high. Broil until top begins to brown, 1 to 2 minutes.

    Sprinkle with remaining 1 tablespoon of parsley. Let cool 10 minutes before serving.

      Golden and crispy potatoes piled high with tender corned beef and amazing toppings these Irish Nachos make the perfect appetizer for St. Patrick’s Day! ! I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. You can learn more about their membership here; this is a code I found online, as I believe the normal cost is $35/year, but this code looks like you can still get it for $20/year, which is great! I have found it to be extremely useful, although I have not yet taken advantage of their hotline – yet.

      For this recipe, I used my handy-dandy Deluxe Multi Cooker  to make the corned beef, and my Half Sheet Pan & Baking Rack Set to roast the potatoes.

      Ingredients

      For Corned Beef

      • 2-3 pounds corned beef
      • 1/3 cup Dijon mustard
      • 2 tablespoon packed brown sugar
      • 12 ounces Guinness Stout
      • 4 pounds medium Yukon gold potatoes, cut into 1/2″ thick rounds
      • 2 tablespoons extra-virgin olive oil
      • 1 teaspoon dried oregano
      • 1/2 teaspoon garlic powder
      • Kosher salt to taste
      • Freshly ground black pepper, to taste
      • 1 cup shredded yellow cheddar cheese
      • 1 cup shredded white cheddar cheese
      • 1/2 small red onion, thinly sliced
      • 1 (15-oz.) can black beans, rinsed and drained
      • 1/2 cup sour cream
      • 1 tablespoon prepared horseradish
      • Pickled jalapeños for garnish
      • Freshly chopped chives for garnish

      Instructions

      For the Corned Beef:

      In a small bowl, combine mustard and brown sugar. Brush all over corned beef brisket.

      Place corned beef in steamer basket of the Deluxe Multi Cooker with Guiness Stout, set to CUSTOM, 90 minutes. Press button to start. Once timer goes off, allow pressure to naturally release for 10 minutes.  Press steam button to release any additional pressure, and remove corned beef to cutting board.

      Allow corned beef to rest an additional 10 minutes, then shred.

      For the Potatoes

      Wash potatoes, then slice, unpeeled, into 1/2″ thick rounds. Place slices into a large pot of cold water, ensuring that they are cover completely.  Bring to a boil over high heat. Boil only until just tender, about 5 minutes.  To test this, inserting a knife into the middle of a potato should meet with a bit of resistance.  Drain and dry on baking rack or with paper towels.

      Preheat oven to 425°F/220⁰C.

      Line two sheet pans with foil. Place potatoes in a single layer divided evenly between both pans.  Drizzle with oil and sprinkle with oregano, garlic, salt and pepper, coating both sides of potatoes.

      Bake for 30 minutes, or until golden and crisp.

      One on of the sheet pans, bring the potatoes together in a mound.  Top with half of both cheeses, red onion, beans, and shredded corned beef. Top with potatoes from the other tray, adding remaining cheese, red onions, beans, and corned beef. Place tray back in oven and bake an additional 5 minutes, until cheese is melted.

      Combine sour cream and horseradish in a small bowl.

      Remove nachos from oven, and top with dollops of sour cream, pickled jalapeños, and chives.
