Slow Cooker Lemon Garlic Chicken – the Kitchn (Video)

I am LOVING our new Rockcrok®Digital Slow Cooker Stand! You can cook in the Rockcrok® Dutch Oven on the stove, then transfer it directly to the slow-cooker base.  One pot to clean, I always love that.

Let’s jump right in!

Ingredients

  • 1 tablespoon olive oil
  • 4 boneless, skinless chicken breasts
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon pepper, or to taste
  • 1 cup chicken broth
  • ½ cup freshly squeezed lemon juice
  • 8 cloves garlic, smashed
  • 2 tablespoons unsalted butter, room temperature
  • 2 tablespoons all-purpose flour
  • Flat Italian parsley, chopped for garnish

Instructions

Heat oil in Rockcrok® Dutch Oven until shimmering over medium heat.  Quickly sear chicken until lightly browned on both sides; remove from stove, and place in Rockcrok®Digital Slow Cooker Stand.

Peel garlic and smash with the back of a knife.  Add to pot, along with lemon juice and broth.  Cover, and set slow cooker to LOW for 3 hours, or until internal temperature of chicken reaches 165°F/75⁰C.

Remove chicken, set aside. Combine butter and flour to make a paste.  Remove Rockcrok® Dutch Oven from the Rockcrok®Digital Slow Cooker Stand, and place back on stove.  Bring broth to a boil over medium-high heat.  Add in the flour mixture, stirring constantly to combine.  Cook an additional 3-4 minutes, until the sauce is thickened, stirring frequently. 

Pour sauce over chicken, garnish with freshly chopped parsley.  Serve immediately.

Crispy Fried Green Beans (Video)

We went out to a nice dinner with our wonderful friends, Pete and Terry to the Redstone American Grill, which I believe is a chain restaurant. It was there that I encountered this tasty gem of a recipe, and I was determined to recreate it, so that’s what I did! Theirs came with a Lemon Garlic Aioli, and I found a great recipe for that one, Maya over at Wholesum Yum. You can learn more about Maya here, I’m very excited to check out her recipes, as many of them are keto friendly!

Let’s jump right in!

Ingredients

  • 1.5 pounds fresh green beans
  • 1 cup Italian Breadcrumbs
  • ¾ cup grated Parmesan Cheese
  • 1 teaspoon Lemon Zest
  • 1 tablespoon Lemon Garlic Rub
  • 3 tablespoons flat Italian parsley, chopped
  • 1 cup all-purpose flour
  • 2 eggs
  • Oil for frying

Lemon Garlic Aioli

  • 1egg
  • 4 cloves of garlic, pressed
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh Lemon juice
  • ¼ teaspoon kosher salt
  • 1 cup Extra-Virgin Olive Oil

Instructions

Blanch green beans by cooking for two minutes in a pot of salted boiling water.  Prepare an ice bath; remove green beans from boiling water and plunge into ice bath for 5 minutes. Drain, and set aside.

In one coating tray, combine breadcrumbs, cheese, zest. Lemon Garlic Rub and chopped parsley, stirring to mix well. In another tray, place the flour, and place the eggs in the last tray, whisking to combine.

Dip the green beans first in the flour, then the egg, then the breadcrumb mixture.

Heat oil to 350⁰ F/177⁰ C.  Add Green Beans, cook 4 minutes or until golden brown; remove from pan, and drain on board or plate lined with paper towels.

Lemon Garlic Aioli

Add all ingredients in the order that they appear to a large jar or container, without stirring.  Using an immersion blender, gently bring it into the container, touching the bottom and begin to process.  Once the ingredients become thick, you may then slowly move the immersion blender up and down to finish the aioli. If preparing ahead of time, cover and chill until ready to serve.

Serve green beans immediately with the aioli.

Sous Vide Garlic Butter Halibut – Izzy Cooking

Normally, I try to feature a variety of different bloggers and recipes, but apparently, I liked Izzy Cooking so much, I’m back with them already!  You can learn more about Izzy here, and check out the other recipe of theirs I’ve recently reviewed, crème brûlée, here.  The only thing I changed in this recipe is using Crushed Peppercorn and Garlic Rub in place of the fresh garlic. 

Here’s a quick Sous Vide refresher:

Sous Vide is a method of cooking foods in a water bath at a precisely controlled (lower) temperature for an extended period time. The results speak for themselves. You won’t ever worry about overcooking an expensive cut of meat, it will come out perfectly tender and juicy, based on the temperature YOU select, every single time. So far, I notice also that using the sous vide method leaves me time to do other things, as it’s a matter of placing your food in a reusable or zip top bag and into the water, pressing START and it does its thing.

Sous Vide and Seafood

The sous vide method of cooking is a fantastic way to preserve the texture and flavor of your seafood, without ever overcooking.  It is also one of the most nutritious methods of cooking, since we are using a lower temperature, we will be retaining more nutrients.  Also, it’s just so darn easy, you definitely should give it a try.  Okay, let’s jump right in!!

Ingredients

  • 1-pound fresh halibut filet
  • ¾ teaspoon Crushed Peppercorn and Garlic Rub
  • 3 tablespoons unsalted butter, divided
  • Salt and pepper to taste
  • 4 sprigs fresh thyme
  • 1 lemon, thinly sliced

Fresh parsley, for garnish

Instructions

Fill the inner pot of the Deluxe Multi Cooker with water 1″ below the ½ fill line. Lock the lid and select SOUS VIDE. Set the temperature to 132° F and the timer for 1 hour; press and hold START.

Slice lemon into about 5-6 slices.

Season Halibut with salt and pepper to taste.  Sprinkle with Crushed Peppercorn and Garlic Rub, add thyme and butter to each filet. 

Place lemons is a reusable or zip top freezer bag, then add halibut over the lemon in one layer.  Use more bags as needed if you are not able to cook in one layer. 

When you hear beeps and ADD is displayed on the DMC, open the lid and submerge the bag gently in water using the water displacement method. 

Water Displacement method – seal the bag almost all the way, leaving a small corner open.  Slowly submerge the bag into the water, gently pressing to help air escape.  Seal bag when food is completely submerged (but NOT the top of the bag), seal the bag.

Lock the lid and press START. It will display the word “RUN”.

Cooking times:

  • If your filets are 1’ thick, cook between 30-45 minutes
  • If your filets are 1.5” thick, cook between 45-60 minutes

When the timer is up (or when you are finished cooking based on thickness), press CANCEL. Carefully remove the bag. Use a fish spatula to gently remove halibut from bag and onto plate or board.  Pat dry and let rest a few minutes.

Heat your skillet over medium-high heat, adding one tablespoon butter.  When butter is foaming, add halibut to skillet and sear about 30 seconds until lightly browned. Remove from pan immediately.

Garnish with parsley, if desired.  Serve with lemon wedges.

(Cheesy) Garlic Bread – AKA My Take on a Joshua Weissman Recipe

Happiness is warm, cheesy and garlicky – in my book, anyway!  I was thrilled when I came across Joshua Weissman and his delicious recipes.  You can read more about Joshua’s story here.  His personal story, and struggles with his weight, are very inspiring, and I hope that you will take the time to learn more about him.  His recipe videos are fun, educational and you will be able to see his passion for cooking shining through. 

For this recipe, I am featuring our Stone Bar Pan.  I have had mine for almost 26 years, and use for everything from garlic bread, cooking bacon in the oven, seafood, meat, cookies, brownies, and I’ve even made “SpongeBob Square Pancakes” on them!!

Made in the USA, they are Microwave-, freezer, oven-, dishwasher-, and broiler-safe to 550°F. Like all our stones, you can use it to make your favorite baked goods, frozen foods, or reheated leftovers that are just as good or better than day one. And it only gets better with age. A nonstick seasoning will develop as you use it—the darker it looks, the better it cooks!

For this recipe, Joshua shared three different ways to make garlic bread, I chose the classic version, as that is what my family likes best.  The only addition I made to this was to add in some fresh mozzarella cheese, because my guys LOVE cheesy garlic bread.  This recipe did not disappoint!  It has the PERFECT amounts of garlic and all the seasonings – and butter – so if you like garlic bread, you will LOVE this recipe, with or without the extra mozzarella.  Enough said, let’s jump right in!

Ingredients

  • 1 cup unsalted butter, softened
  • 4-6 garlic cloves, finely chopped
  • ¼ cup parsley, finely chopped
  • ¼ cup Parmigiano Reggiano, grated
  • ¼ cup Fresh Mozzarella cheese, grated
  • 1 large ciabatta loaf

Instructions

Preheat oven to 400 ⁰F.

Peel and chop garlic.  Wash, then chop the flat Italian parsley.

Grate your Parmesan and mozzarella cheeses.

Combine softened butter, garlic, parsley, Parmesan and Mozzarella.  Mix well.

Slice loaf of Ciabatta bread in half lengthwise.  Spread garlic butter mixture all over the cut bread, being sure cover with all of the garlicky deliciousness.

Place on a Stone or baking pan, and bake for 10-12 minutes, until golden brown. 

Remove from oven, then slice and serve.

Cheesy Garlic Bread

Infused with garlic, butter and seasonings, filled with flavor AND cheesy goodness,this garlic bread recipe from @joshuaweissman is such an easy recipe to put together,and sure to become a family favorite!

Ingredients
  

  • 1 cup unsalted butter, softened
  • 4-6 garlic cloves, finely chopped
  • ¼ cup parsley,finely chopped
  • ¼ cup Parmesan Reggiano Cheese, grated
  • ¼ cup Fresh Mozzarella, grated
  • 1 large Ciabatta Loaf

Instructions
 

  • Preheat oven to 400 ⁰F.
  • Peel and chop garlic.  Wash, then chop the flat Italian parsley.
  • Grate Parmesan and mozzarella cheeses.
  • Combine softened butter, garlic, parsley, Parmesan and Mozzarella.  Mix well.
  • Slice loaf of Ciabatta bread in half lengthwise. Spread garlic butter mixture all over the cut bread, being sure cover with all of the garlicky deliciousness.
  • Place on a Stone or baking pan, and bake for 10-12 minutes, until golden brown.  Remove from oven, then slice and serve.

Garlic and Bacon Green Beans – Julia’s Album (Video)

One of the reasons I started this blog was so that I could keep track of my favorite recipes AND food bloggers in one place, and another is to show all of you how my favorite recipes can be made easier if you are using the right products.  Julia over at https://juliasalbum.com is one of my favorite food bloggers, as her recipes involve LOTS of comfort food.  You can learn more about Julia here.

This recipe, however, is not just great food, it is keto friendly!  Green beans are, apparently, lower in carbs than some vegetables, which seems to make them a perfect addition to any low carb meal.  At least, I believe it does, but I am still learning about all of this. If you know better, then by all means, enlighten me!  At any rate, I love this wonderful and easy recipe, and I think you will, too. 

Let’s jump right in!!

What you’ll need:

  • 1-pound fresh green beans
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4-6 garlic cloves
  • 6 slices of bacon

Instructions

Boil water in Dutch oven; add trimmed green beans and ½ teaspoon salt. Cook on medium-low heat for 5 minutes. Drain the beans, set aside.

Cook bacon in Air Fryer for 14 minutes.  Cool, and cut into pieces. 

Peel and chop 4-6 cloves of garlic (depending on your garlic preference).

Melt butter in a large skillet on medium heat, along with olive oil. Add chopped garlic and sauté for about 30 seconds. Add in green beans and bacon pieces. Sauté on medium heat for about 1 minute, stirring to combine.

  • 1 tbsp garlic-infused canola oil or olive oil
  • 1 tbsp butter
  • 4-6 cloves garlic
  • 6 slices bacon

Pressure Cooker Mashed Cauliflower – Diethood (Video)

Confession:

I have always hated cauliflower. I never like the smell, the taste, etc. That all changed with this recipe, pressure cooker mashed cauliflower with garlic and chives from Katerina over at https://diethood.com/. You can learn more about Katerina here.

This month, my focus is going to be on low carb keto friendly recipes. I got this idea and encouragement for my friend Elaine (Hi Elaine!), as she and her husband have started eating low-carb. I honestly had no idea what that was about, and was a little bit afraid to check them out for fear of losing flavor. Elaine has helped to prove me wrong! The recipes I have found have been easy and really full of flavor and very delicious. Through this new research, I have discovered some really wonderful food bloggers and I will definitely go back to try new recipes from each of them. I will DEFINITELY be back to check out more from Katerina, her dessert recipes are gluten free!

This recipe was truly delicious, creamy and unbelievably like mashed potatoes. I seriously love my mashed potatoes, so it says a lot for me to give this compliment. Enough said, let’s jump right in!

What you’ll need:

  • 1 large head cauliflower, core removed and roughly cut into florets 
  • 1/2 tablespoon olive oil
  • 4 cloves garlic, peeled and smashed
  • 1 1/2 cups chicken broth
  • 1/2 tbsp butter
  • 1 tbsp sour cream
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp chopped fresh chives, plus more to garnish

Instructions

Set Quick Cooker to SEAR. Add oil to pot, heat for one minute. Smash garlic, add to pot. Saute until lightly golden on all sides, about one minute.

Add chicken broth, heat another minute.

Hit CANCEL. Place cauliflower in steam basket, and place into quick cooker. Cooker. Cover with lid, and set to CUSTOM setting, 3 minutes. Press START.

When timer is up, hit cancel. Push steam release button to Quick release pressure. Open the lid halfway and let stand 3 minutes.

Drain out all of the liquid (you can save the liquid for another use) and mash the cauliflower and garlic with a potato masher, or transfer them to a blender or food processor (I used my blender). Add in butter, sour cream, salt and pepper. If you’re using the blender, pulse until blended and creamy.

Transfer to an insulated bowl to keep warm while you’re waiting for the rest of your dinner. 

Lastly, add in Parmesan cheese and chives, and maybe another pat of butter. Stir well. 

That’s it! This recipe was so easy to make and really, really delicious! I can’t believe I’m saying this, but I think we’ll add this to our monthly rotation of recipes. It was that good!
