What is Garlic Confit and what do I do with it?

Confit is a French method of cooking food (like garlic or tomatoes) in fat over low heat for a longer period.  Garlic confit boasts a mellow, sweet, and creamy flavor that is a far cry from the sharpness of raw garlic. Slowly cooked in aromatic oil, the garlic cloves become tender, almost caramelized, imparting a rich and nuanced taste. The result is a versatile and indulgent ingredient that adds depth and sophistication to a variety of dishes, ranging from pasta and roasted vegetables to spreads and dressings. I’ve used it to make compound butters as well – delicious!

For this recipe, I used my Mini Deep Covered Baker:

Make a Perfectly Cooked Meal for Two!

With the Mini Deep Covered Baker, you can easily prepare dinner for two, sides, desserts, and even roasts in the microwave or oven. This 10¼” x 6¼” (26 cm x 16 cm) baker is the perfect size for baking bread, cooking pot roast, or preparing side dishes and desserts.

Plus, no preheating is necessary—just put your food on the stone, cook it, and serve it without dirtying another dish. And when it’s time for cleanup, just place the pieces into the dishwasher. That’s it!

Tostones with Cilantro Ajillo Dipping Sauce – Sophisticated Gourmet

Twice fried to perfection, these crispy tostones and sauce are easy to make, the perfect appetizer or side dish! Tostones are made from plantains with green skin.   They are super easy to make once you know how, and I have used this recipe several times and really love it.

This Dominican Tostones recipe comes from Kamran Siddiqui over at Sophisticated Gourmet, and you can learn more about Kamran here. I absolutely LOVE the homemade cilantro ajillo (garlic) sauce that you serve with these tostones.

What Are Plantains? You may have seen them at the grocery store, next to yellow bananas. While technically they are in the banana family, you would not eat them raw, they are cooked like a vegetable. The skin is green, until it begins to ripen and then it will turn yellow to black when they are very ripe and sweet. Tostones taste like a yuca or potato, I like them better than potato chips!

For this recipe, I used my Pampered Chef Enameled Cast Iron Skillet with Lid and Spider Strainer:

Enameled Cast Iron Skillet with Lid

Braising Pan and Skillet in One Meet the perfect combination of skillet and Dutch oven. With a wide cooking surface, shallow sides, and oven-to-table design, whether a busy weeknight or relaxing weekend, you can braise, bake, sauté, simmer, or roast whatever’s on the menu. The self-basting lid adds juices back into whatever you’re cooking for added moisture and flavor. This classic gray skillet has a light-colored enameled interior, which means you can start using it right away—no seasoning required—and it lets you easily see food browning so you can avoid scorching it. With the durability of cast iron comes a certain weightiness. But not to worry—this skillet has two sturdy handles to help you lift and carry dishes from the oven right to your dinner table. Plus, cast iron’s excellent heat retention means that food stays hot and delicious even if not everyone makes it to the table as soon as dinner’s ready. Guarantee

  • Lifetime guarantee

Spider Strainer:

Stainless Steel Spider Strainer Whether you’re cooking delicate foods like ravioli or eggs, deep frying, or blanching, straining your food should be less…well, straining. Our Spider Strainer has a large, durable stainless-steel wire basket, so you can easily scoop large amounts of food and strain liquids quickly. Lift food out of boiling water, soups, stocks, or oil using the long soft-grip handle so your hands can stay comfortable and safe.

Crispy Fried Green Beans (Video)

We went out to a nice dinner with our wonderful friends, Pete and Terry to the Redstone American Grill, which I believe is a chain restaurant. It was there that I encountered this tasty gem of a recipe, and I was determined to recreate it, so that’s what I did! Theirs came with a Lemon Garlic Aioli, and I found a great recipe for that one, Maya over at Wholesum Yum. You can learn more about Maya here, I’m very excited to check out her recipes, as many of them are keto friendly!

Our Flex+ Multi-Prep Set is what I used to make the aioli, besides being an amazing multi-use product, it’s also on sale this month!! Here’s some info:

3 Cordless Prep Tools in One

Slicing, chopping, grating, pureeing, emulsifying, mixing, and blending doesn’t have to be time-consuming or frustrating. With the Flex+, you get three complete cordless, time-saving prep tools in one: an immersion blender, 6-cup (1.5-L) food processor, and a hand mixer, so you can quickly, effortlessly, and safely whip up whatever you’re making, anytime, anywhere.

Just click the power handle to one of the attachments, choose a blade (food processor) or beaters/whisks (hand mixer), pop on one of the batteries, and you’re ready to go. We’ve included two rechargeable batteries to give you about 60 minutes of total run time.

The power handle has push-button control for comfortable one-handed operation. Five speeds (three for the hand mixer) easily adjust during use for flexibility and control. Indicator lights show how much battery life is left and the speed you’re using. A safety lock prevents the Flex+ from accidentally turning on.

Immersion Blender

Big jobs or small, its slim size, stainless blade, and cookware-safe design means you control the texture of the foods you blend. You’ll enjoy smooth soups and gravies, and all kinds of sauces such as pesto, tomato, chimichurri, barbecue, dressings, marinades, mayonnaise, milkshakes, and smoothies. It includes a blending container to make homemade mayonnaise and dressings in under two minutes.

6-cup (1.5-L) Food Processor

Get fresh flavor in a flash without breaking a sweat. Choose one of the three blades based on what you’re making. The multiuse blade can cut foods to the size and texture you want, even purees. The grating blade is reversible so you can coarsely or finely grate fresh ingredients in no time. The slicing blade slices and shaves veggies for salads and sautes, potatoes and zucchini for gratins, and apples or any firm produce. (Please note, the slicing blade won’t slice cheese.)

Hand Mixer

Let’s jump right in!

Ingredients

  • 1.5 pounds fresh green beans
  • 1 cup Italian Breadcrumbs
  • ¾ cup grated Parmesan Cheese
  • 1 teaspoon Lemon Zest
  • 1 tablespoon Lemon Garlic Rub
  • 3 tablespoons flat Italian parsley, chopped
  • 1 cup all-purpose flour
  • 2 eggs
  • Oil for frying

Lemon Garlic Aioli

  • 1egg
  • 4 cloves of garlic, pressed
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh Lemon juice
  • ¼ teaspoon kosher salt
  • 1 cup Extra-Virgin Olive Oil

Instructions

Blanch green beans by cooking for two minutes in a pot of salted boiling water.  Prepare an ice bath; remove green beans from boiling water and plunge into ice bath for 5 minutes. Drain, and set aside.

In one coating tray, combine breadcrumbs, cheese, zest. Lemon Garlic Rub and chopped parsley, stirring to mix well. In another tray, place the flour, and place the eggs in the last tray, whisking to combine.

Dip the green beans first in the flour, then the egg, then the breadcrumb mixture.

Heat oil to 350⁰ F/177⁰ C.  Add Green Beans, cook 4 minutes or until golden brown; remove from pan, and drain on board or plate lined with paper towels.

Lemon Garlic Aioli

Add all ingredients in the order that they appear to a large jar or container, without stirring.  Using an immersion blender, gently bring it into the container, touching the bottom and begin to process.  Once the ingredients become thick, you may then slowly move the immersion blender up and down to finish the aioli. If preparing ahead of time, cover and chill until ready to serve.

Serve green beans immediately with the aioli.

That’s it!  Please let me know if you try these recipes, and also, what you might serve instead of the aioli, I would love to hear from you.

Sous Vide Garlic Butter Halibut – Izzy Cooking

Normally, I try to feature a variety of different bloggers and recipes, but apparently, I liked Izzy Cooking so much, I’m back with them already!  You can learn more about Izzy here, and check out the other recipe of theirs I’ve recently reviewed, crème brûlée, here.  The only thing I changed in this recipe is using Crushed Peppercorn and Garlic Rub in place of the fresh garlic.

Here’s a quick Sous Vide refresher:

Sous Vide is a method of cooking foods in a water bath at a precisely controlled (lower) temperature for an extended period time. The results speak for themselves. You won’t ever worry about overcooking an expensive cut of meat, it will come out perfectly tender and juicy, based on the temperature YOU select, every single time. So far, I notice also that using the sous vide method leaves me time to do other things, as it’s a matter of placing your food in a reusable or zip top bag and into the water, pressing START and it does its thing.

Sous Vide and Seafood

The sous vide method of cooking is a fantastic way to preserve the texture and flavor of your seafood, without ever overcooking.  It is also one of the most nutritious methods of cooking, since we are using a lower temperature, we will be retaining more nutrients.  Also, it’s just so darn easy, you definitely should give it a try.  Okay, let’s jump right in!!

Ingredients

  • 1-pound fresh halibut filet
  • ¾ teaspoon Crushed Peppercorn and Garlic Rub
  • 3 tablespoons unsalted butter, divided
  • Salt and pepper to taste
  • 4 sprigs fresh thyme
  • 1 lemon, thinly sliced

Fresh parsley, for garnish

Instructions

Fill the inner pot of the Deluxe Multi Cooker with water 1″ below the ½ fill line. Lock the lid and select SOUS VIDE. Set the temperature to 132° F and the timer for 1 hour; press and hold START.

Slice lemon into about 5-6 slices.

Season Halibut with salt and pepper to taste.  Sprinkle with Crushed Peppercorn and Garlic Rub, add thyme and butter to each filet.

Place lemons is a reusable or zip top freezer bag, then add halibut over the lemon in one layer.  Use more bags as needed if you are not able to cook in one layer.

When you hear beeps and ADD is displayed on the DMC, open the lid and submerge the bag gently in water using the water displacement method.

Water Displacement method – seal the bag almost all the way, leaving a small corner open.  Slowly submerge the bag into the water, gently pressing to help air escape.  Seal bag when food is completely submerged (but NOT the top of the bag), seal the bag.

Lock the lid and press START. It will display the word “RUN”.

Cooking times:

  • If your filets are 1’ thick, cook between 30-45 minutes
  • If your filets are 1.5” thick, cook between 45-60 minutes

When the timer is up (or when you are finished cooking based on thickness), press CANCEL. Carefully remove the bag. Use a fish spatula to gently remove halibut from bag and onto plate or board.  Pat dry and let rest a few minutes.

Heat your skillet over medium-high heat, adding one tablespoon butter.  When butter is foaming, add halibut to skillet and sear about 30 seconds until lightly browned. Remove from pan immediately.

Garnish with parsley, if desired.  Serve with lemon wedges.

That’s it!  This is a great recipe if you’re just starting out with sous vide, easy and oh, so delicious and buttery!  Definitely head over to Izzy Cooking and show them some love, tell them I said hello!
