Spring into flavor with our Pampered Chef Deluxe Blender! Creamy asparagus soup in just 30 mins – fresh, fast, and fabulous!

I’ve made asparagus soup before, but wanted to try it in our Deluxe Cooking Blender. I was able to leave out the butter and I will say that it’s very creamy even before you add the heavy cream, so it’s not only very healthy but very delicious!

Let’s jump right in!

Ingredients

  • 2 cups low-sodium chicken broth
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 2 lb. asparagus, ends trimmed
  • 1 small onion quartered
  • 1 cup frozen sweet peas
  • 1 clove garlic

Add-In

  • 1/2 cup heavy cream, plus more for garnish

Toppings

  • Freshly chopped chives
  • Freshly chopped dill

Instructions

Add first SEVEN ingredients, in the order listed to the Deluxe Cooking Blender. Replace and lock the lid. Turn the wheel to select the SOUP setting. Press the wheel to start.

Once soup is done, carefully remove the lid, and add heavy cream.  Replace the lid, and pulse for 10 seconds, until ingredients are incorporated.

Serve immediately, and garnish with chives, dill, and more heavy cream, if desired.

Notes

Store leftovers in an airtight container for up to 4 days. You can also freeze asparagus soup for up to 3 months in a freezer-safe storage container. Let thaw overnight in the refrigerator before reheating.

Six-ingredient Sunshine Cake: Lemon, carrot, sour cream, and boxed mix = easy, breezy, sunny delight! This is one of my all-time favorite Pampered Chef recipes. I’ve made it in the microwave in our (now-retired) Stoneware Fluted Pan, and I wanted to try it in our Mini Fluted Cake Pan. It was perfect!  The perfect size, and one box of cake mix makes enough for 12 cakes.

Let’s jump right in!!

Ingredients

  • 1   lemon, zested and juiced, keep juice separate
  • 1   orange, zested and juiced, keep juice separate
  • 1 small carrot, grated
  • 3  eggs
  • 16 ounces sour cream OR Greek Yogurt
  • 1 pkg (18.25 oz/510-520 g) yellow cake mix OR Homemade Yellow Cake Mix
  • 1/4 cup powdered sugar

Instructions

Preheat oven to 325°F/165⁰C

Brush the Mini Fluted Cake Pan lightly with oil.

Whisk together eggs, sour cream or yogurt, carrot, lemon zest and orange zest in a bowl.

Add cake mix, mixing until blended, about one minute.

Fill each well of the pan 2/3 full.

Bake for 20 minutes, or until toothpick inserted into the center comes out clean.

Cool for 5-10 minutes, then invert pan to remove cakes.

Meanwhile, juice lemon and orange.

Using clean basting brush, brush reserved citrus juices over top and sides of warm cake. Sprinkle powdered sugar over cakes. Enjoy!

Notes

To Microwave, use a Microwave safe vessel, such as the Rockcrok® Dutch Oven. Microwave on HIGH 11-14 minutes or until wooden pick inserted near center comes out clean. (Cake will be slightly moist on top near center.) Let stand in microwave 10 minutes. Loosen cake from sides of pan; invert onto serving plate. If using a microwave oven without a built-in turntable, rotate cake once after 6 minutes of cooking. This cake is best when prepared and served the same day.

Create a mouthwatering Pork Saltimbocca & Peas in just 35 minutes! Quick, flavorful, and perfect for busy evenings. I found this on the Food Network, and it was easy enough to make on a weeknight! Of course, you’ll want to adjust the time you cook your chops based on how thick they are, but if you get them ½-inch thick, dinner’s ready in a flash!

Ingredients

  • 4 boneless center-cut pork chops (1/2 inch thick; 5 ounces each)
  • Kosher salt
  • 3 tablespoons olive oil, divided
  • 1/2 cup all-purpose flour
  • 1 large shallot, finely chopped
  • 8 fresh sage leaves
  • 1/2 cup dry white wine
  • 1 1/4 cups low-sodium chicken broth, divided
  • 3 ounces prosciutto about 5 thin slices, with 1 slice chopped
  • 2 ounces fontina cheese (grated, about 1 cup)
  • 1/4 cup grated Parmesan cheese
  • 10 ounces frozen peas

Instructions

Preheat oven to 400°F/200⁰C. Use the Food Chopper to chop shallots.

Season the pork with salt. Heat 2 tablespoons of olive oil 12″ (30-cm) Signature Nonstick Skillet over medium-high heat.

Use the Coating Trays to dredge the pork in the flour and add to the skillet; reserve the flour.

Sear pork until browned, 1 minute per side. Transfer to a plate.

Reduce the heat to medium; add the shallot to the skillet and cook, stirring, until soft, 3 minutes.

Increase the heat to medium high. Add the sage and 2 teaspoons of the reserved flour. Cook until sizzling, 30 seconds.

Add the wine; bring to a boil. Cook until reduced by half, 2 minutes.

Add 1 cup broth; return to a boil and cook until thickened, 2 minutes. Add the pork; return to a simmer. Top each chop with a prosciutto slice, then the fontina and Parmesan. Remove the handle from the skillet, and bake until cheese is melting, 1 to 2 minutes.

For the Peas

Heat the remaining 1 tablespoon olive oil in a small saucepan over medium heat. Add the chopped prosciutto; cook until crisp, 1 to 2 minutes.

Add the peas, the remaining 1/4 cup broth and 1/4 teaspoon salt. Cover and cook until the peas are tender, 5 minutes.

Uncover; increase the heat to medium high. Cook until the liquid is reduced, 1 minute. Serve with the pork.

You’ll want to adjust the time you cook your chops based on how thick they are, for example, with 1-inch thick bone-in pork chops, sear them 3-4 minutes per side, then bake them 5 minutes, or until internal temperature reaches 145°F/63°C.

Cannellini Beans with Tomatoes and Prosciutto (Video)

Create a tasty family favorite in 20 minutes! Our Cannellini Beans with Tomatoes and Prosciutto is simple, delicious, and perfect for busy weeknights! I saw a recipe like this on Reddit a while back, and always wanted to give it a try, with my own spin on it. I added some prosciutto, since I had it on hand, and it crisped up nicely and added a bit of saltiness to this delicious dish. I also topped it with some burrata that I had, but you could certainly substitute with ricotta, or whatever you have on hand. This is a very forgiving recipe, and I love that it can be pulled together with ingredients you already have on hand.

Ingredients

  • 1 large shallot finely chopped
  • 3 cloves garlic sliced
  • 2 pints of cherry tomatoes
  • 1 tablespoon olive oil
  • 2 slices prosciutto torn
  • 30 ounces cannellini beans 2 cans, drained
  • 4 ounces burrata cheese

Toppings

  • Basil or other fresh herbs of your choice
  • Pine nuts

Instructions

Prepare your vegetables – slice the garlic, chop shallots; set aside.

In 12″ Stainless Steel Nonstick Skillet over medium-high heat, heat oil, then add shallots and sauté for three minutes, until translucent and slightly caramelized. Add in garlic and prosciutto, and sauté for one minute.

Turn the heat down to medium, then add in tomatoes. Cook for 10 minutes, until tomatoes begin to burst, adding a splash of wine or water if necessary. Use immersion blender to blend tomatoes until smooth, or to desired texture.

Add cannellini beans, and simmer for 5 minutes until heated through. Remove from heat and add burrata cheese,

Top with basil and pine nuts as desired. Serve immediately with some crusty bread.

Indulge in effortless elegance with this velvety Tomato-Garlic Confit Pasta Sauce. Simple ingredients, sensational flavor! A few weeks ago, I made tomato-garlic confit and ended up with some left over. I didn’t feel like cooking the other night, so I tried making a sauce with the leftovers, and oh – my- goodness!  The result was amazing. It had this incredible velvety texture, with the perfect balance between the tomatoes and garlic. It was one of the easiest sauces I’ve ever made and tasted like something from a fancy restaurant – without the hefty price!

My plan going forward will be to make the confit once a month or so.  This way, I will have it not only as an appetizer, but for this sauce and any other recipes I might think of to try with it.  Delicious!!

What else can I use the confit for?

Tomato-Garlic Confit is a versatile condiment that can enhance various dishes. Here are some ideas:

  • Bruschetta Topping: Spread it on toasted bread slices and top with fresh basil for a delicious bruschetta.

Ingredients

For the Tomato-Garlic Confit

  • 1-quart cherry tomatoes
  • 2 bulbs of garlic peeled
  • 1 ½ cups Extra-Virgin Olive Oil enough to cover tomatoes at least halfway
  • ½ teaspoon red pepper flakes or to taste
  • Fresh thyme can also use basil or rosemary if you like

For the Sauce

  • 1/3 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 16-ounces penne pasta or pasta of choice cooked according to package
  • ½ cup pasta water as needed

Toppings

  • Flat parsley chopped
  • Additional Parmesan cheese

Instructions

For the Tomato-Garlic Confit

Preheat oven to 325°F/165⁰C.

Place tomatoes and garlic in Mini Deep Covered Baker. Cover at least halfway with olive oil, add in the red pepper flakes and thyme.

Bake for 45-60 minutes, or until most tomatoes have burst, and garlic is soft and tan in color. Transfer the confit with the oil to a heat-proof container. Refrigerate immediately once cooled if not using right away. This can be prepared and stored for up to two weeks in the refrigerator.

For the Sauce

Strain the confit to separate the oil (save the oil to use later in salad dressing and for cooking).

Begin to boil pasta in salted water according to package directions, cooking just to al dente. Drain cooked pasta, and reserve ½ cup of the pasta water.

Heat one tablespoon of the reserved confit oil over medium heat in 12″ Stainless Steel Nonstick Skillet. Add in the confit, cooking for 5 minutes, stirring, and smashing tomatoes and garlic with the back of a spoon.

Pour the cream into the pan and use an immersion blender to create a smoother sauce.

Add in the pasta, and half of the reserved pasta water. Stir gently until pasta is evenly coated with the sauce. Add in the grated Parmesan cheese, gently stirring until combined.

Top with freshly chopped flat parsley. Serve immediately, with extra grated Parmesan cheese alongside.
