Sweet Honeycrisp apples, Bosc pears and dried cranberries with a crunchy oat topping is full of fall flavors and will be a delicious addition to your holiday dessert table!

I found this wonderful recipe from The Food Network, courtesy of Ina Garten – who is one of my all-time favorite cooks!

For this recipe, I used the new Pampered Chef Stone Round Baker, the Apple Wedger to wedge the apples AND pears and Cinnamon Plus Spice Blend:

Ingredients

  • 2 pounds ripe Bosc pears (4 pears)
  • 2 pounds firm Honeycrisp apples (6 apples)
  • 3/4 cup dried cranberries
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lemon zest
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 ½ teaspoons Cinnamon Plus Spice Blend

For the topping:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, lightly packed
  • ½ teaspoon kosher salt
  • 1 cup old-fashioned oats
  • 1 cup cold unsalted butter cubed (2 sticks)

Instructions

Preheat oven to 350°F/175⁰C.

Peel and core the pears and apples and cut them into large chunks, then place in large bowl.

Zest lemon and orange, then juice both to make 2 tablespoons juice from each. To the apples and pears, add the cranberries, zests, juices, granulated sugar, flour, and Cinnamon Plus Spice Blend, tossing gently to coat. Pour into Stone Round Baker and set aside.

For the topping:

Combine the flour, granulated and brown sugars, salt, oats, and butter in the Deluxe Stand Mixer with the paddle attachment. Mix on low speed for 1-2 minutes, or until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.

Place the Stone Round Baker on a parchment-lined sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm with vanilla ice cream, if desired.

Ingredients
  

  • 4 Bosc pears

Creamy, tart and sweet lemon curd sits in a buttery tartlet, topped with fresh berries.  These Lemon Berry Tartlets from Allrecipes are the perfect dessert to brighten everyone’s day!!

I first made this dessert last month, for my friend, Theresa, who was celebrating her 25th anniversary as a business owner, and they were a hit! 

Back to the recipe – I used the Easy Lemon Curd Recipe I posted last week to fill the tartlets, but you could always used a different filling of your choice, custard or perhaps jam, I think any of these would be terrific.  Whatever filling you choose, this recipe is incredibly easy to make.

I baked the tartlets on my Stone Bar Pan:

Stone Cookie Sheet

Get ready for the best cookies—soft in the center, crispy but never burned on the bottom! This stone also turns out the best pizza and flatbreads, appetizers, biscuits and scones, roasted vegetables, garlic bread, brunch braids, and so much more. Because the unglazed cooking surface draws moisture away, everything cooks consistently and turns out light and crispy.

Let’s jump right in!

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 tablespoon all-purpose flour for dusting
  • 1 egg, beaten
  • ⅓ cup lemon curd
  • 6 fresh blackberries
  • 6 fresh raspberries
  • 1 tablespoon confectioners’ sugar for dusting

Instructions

Preheat oven to 400°F/200⁰C.

Place frozen puff pastry sheet on a work surface dusted with flour. Allow to thaw for 2 to 3 minutes. Use a 2-inch round cookie/biscuit cutter to cut out 12 round pieces.

Use a slightly smaller round cookie/biscuit cutter, cut out inner circles in each pastry round, leaving them in place.

Place pastry rounds on baking stone, then brush with the beaten egg.

Bake 13-15 minutes, until golden brown and puffed. Cool completely prior to filling (this took about 10 minutes for me).

Cut around the small inner circle of each pastry round and gently push it down (I used the flat end of my Cake Tester to do this perfectly). Fill each tartlet with lemon curd and top with a blackberry or raspberry. Use Powdered Sugar Shaker to dust with confectioners’ sugar.

Cherry Basil Galette – (Video)

Fresh, juicy cherries combined with basil creates a beautiful galette that is the perfect dessert for summer!

If you had told me I would EVER pair basil with fruit, I would have thought you did not know me well.  Before this recipe, basil was for very specific recipes, such as Italian pasta dishes or certain Thai dishes.  That all changed with this recipe for a cherry basil galette, which was born for me when I saw Pampered Chef’s new recipe for a Strawberry Galette, only I did not have any fresh strawberries.

I used our Cherry & Olive Pitter to remove the pits, which makes quick work of it, since I can remove 4 pits at the same time! Here’ s some info:

Pit Four Fruits at One Time

If you love fresh cherries and olives, but not the mess or the time it takes to remove the pits, this handy tool quickly pits four cherries at once without bruising or wasting any of the fruit. The clear bottom tray catches all the juice and pits, mess-free. And the non-slip feet keep it in place while you zip through. The top locks to make it easy to store in a drawer.

The basil truly enhanced the flavor of the cherries, and it was unlike any dessert I’ve previously had.  Mind you, I have been a picky eater, and I realize that this may not be a new dessert for many of you.  However, I am quite proud of myself for giving this a try, and I hope you’ll make this and let me know what you think.  Let’s jump right in!

Ingredients

  • 1 lb fresh cherries, stems and pits removed
  • 3 tbsp sugar, plus more for sprinkling
  • 2 tablespoons cornstarch
  • 2 tablespoons torn basil leaves (about 5 basil leaves), plus more for garnishing
  • 1 tablespoon lime juice
  • 1 pkg (15 oz) refrigerated pie crust (1 crust), softened according to package directions OR homemade piecrust
  • 2-3 tablespoons softened butter, cubed
  • 1   egg, beaten
  • Optional: ice cream or whipped cream

Instructions

Preheat the oven to 425°F.

Remove the stem from the cherries, and use the Cherry & Olive Pitter to remove pits.

Combine the cherries, sugar, cornstarch, basil, and lime juice; toss gently to combine. Let the mixture stand for 3–4 minutes.

Unroll the pie crust and place it on the Cast Iron Sizzle Skillet.

Pour the cherry mixture into the center of the pie crust, leaving about 2″ (5 cm) uncovered around the edge. Fold the outer edge of the crust over the filling, overlapping every 2″ (5 cm) to form an even border. Pinch the pleats to seal.

Add the butter on top of the filling. Brush the crust with egg wash and sprinkle with additional sugar.

Bake for 28–30 minutes, or until the crust is golden brown and the filling is bubbling. Let it cool on the skillet for 20 minutes before serving. Top with additional basil and serve with ice cream and/or whipped cream, if you’d like.
