🍧 Beat the heat with this 3-ingredient coconut sorbet! 🥥✨ Made in your ice cream maker, it’s easy, refreshing, and perfect for summer days! WE LOVE coconut, so I decided to try making this sorbet. Absolute WINNER!!  It’s delicious, non-dairy, and so creamy, you’ll think you’re having ice cream!

Ingredients

  • 40 ounces coconut milk (three cans)
  • 1 cup sugar
  • ½ cup sweetened coconut flakes shredded

Instructions

Heat coconut milk and sugar in a small saucepan over medium heat, stirring until sugar is dissolved. Allow to cool, then transfer to the Classic Batter Bowl and chill in refrigerator until mixture reaches 45⁰F/7⁰C.

Remove the bowl of the ice cream maker from the freezer and attach the assembled clear lid to the bowl.  Set the timer for 30 minutes.  Once the paddle starts rotating, pour the mixture into the bowl.

Add in the sweetened coconut flakes when there is less than one minute left on the timer.

When the Ice Cream Maker stops turning, check the doneness. The mixture should be soft-serve consistency.  Serve immediately for soft serve or cover and store in the freezer to allow the sorbet to harden.

  • Add in the sweetened coconut flakes when there is less than one minute left on the timer.

  • When the Ice Cream Maker stops turning, check the doneness. The mixture should be soft-serve consistency. Serve immediately for soft serve or cover and store in the freezer to allow the sorbet to harden.

Notes

The sorbet will be a “soft-serve” consistency when it first comes out of the machine. For a firmer, scoop-able sorbet, cover the bowl with the Stretch-Fit Silicone Lid and place in the freezer for 2–4 hours.

Cool off this summer with our super easy Cold Brew Popsicles topped with homemade magic shell! Perfectly refreshing and simple to make.

For this recipe, I used one of my favorite summer products, the Quicksicle Maker, along with one of my new favorite products, the Cold Brew Pitcher:

For the Popsicles

  • 1 cup cold brew coffee
  • 1/3 cup heavy cream, coconut milk, or coffee creamer
  • 4 tbsp Gourmet Brown Sugar Syrup

For the Magic Shell

  • ½ cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

For the Popsicles

Mix all ingredients together until combined.

Pour the mixture into the wells of the Quicksicle Maker and freeze for eight minutes, or until set.

For the Magic Shell

Place chocolate and coconut oil in the Silicone Prep Bowl or other microwave-safe container. Microwave 45-60 seconds, stirring every 30 seconds, or until smooth.

Drizzle over popsicles, and place back in freezer for 5 minutes to harden.

    For this recipe, I used my Deluxe Multi Cooker:

    Ingredients

    For the Beans

    • 8 cups water
    • 1-pound dry navy beans, rinsed and picked through
    • 1 tablespoon olive oil
    • 6 ounces salt pork, diced
    • 6 ounces bacon, cut into small pieces
    • 1 small onion, diced
    • ½ cup apple cider vinegar

    For the Sauce

    • 1 cup water
    • ⅓ cup molasses
    • ¼ cup ketchup
    • ¼ cup brown sugar
    • 2 tablespoons pure maple syrup
    • 1 tablespoon yellow mustard

    Instructions

    Combine water and beans in the Deluxe Multi Cooker. Lock the Lid. Select BEANS for 20 minutes. Press and hold the button to start.

    When the timer is up, let the pressure release naturally for 10 minutes, then press the steam button to release the rest of the pressure; hit the cancel button.

    Drain and rinse beans with cold water and set aside. Rinse and wipe out the Instant Pot insert and place back into the pressure cooker.

    Turn on the Deluxe Multi Cooker and select the SEAR function. Heat olive oil until shimmering, 2 to 3 minutes. Add salt pork, bacon, and onion; cook until fat begins to render, 1 to 2 minutes. Pour in 1/2 cup apple cider vinegar and scrape any browned bits off the bottom. Turn the Deluxe Multi Cooker off.

    For the sauce, whisk together molasses, ketchup, brown sugar, maple syrup, mustard, and water in a small bowl.

    Return cooked beans to the pot along with the molasses mixture. Gently stir to combine. Lock the lid. Select CUSTOM/HIGH PRESSURE; set timer to 25 minutes, press and hold button to start.

    When the timer is up, let the pressure release naturally for 10 minutes, then press the steam button to release the rest of the pressure; hit the cancel button.

    Remove lid and stir to combine. Beans will thicken as they cool. Serve hot or warm.

    • 1 tablespoon olive oil
    • 6 ounces salt pork diced
    • 6 ounces bacon cut into small pieces
    • 1 small onion diced
    • ½ cup apple cider vinegar

    For the Sauce

    • 1 cup water
    • cup molasses
    • ¼ cup ketchup
    • ¼ cup brown sugar
    • 2 tablespoons pure maple syrup can add 2 more tbsp if desired
    • 1 tablespoon yellow mustard

    • Combine water and beans in the Deluxe Multi Cooker. Lock the Lid. Select BEANS for 20 minutes. Press and hold the button to start.
      8 cups water, 1 lb dried navy beans
    • When the timer is up, let the pressure release naturally for 10 minutes, then press the steam button to release the rest of the pressure; hit the cancel button.
    • Drain and rinse beans with cold water and set aside. Rinse and wipe out the Instant Pot insert and place back into the pressure cooker.
    • Turn on the Deluxe Multi Cooker and select the SEAR function. Heat olive oil until shimmering, 2 to 3 minutes.
      1 tablespoon olive oil
    • Add salt pork, bacon, and onion; cook until fat begins to render, 1 to 2 minutes. Pour in 1/2 cup apple cider vinegar and scrape any browned bits off the bottom. Turn the Deluxe Multi Cooker off.
      6 ounces salt pork
    • For the sauce, whisk together molasses, ketchup, brown sugar, maple syrup, mustard, and water in a small bowl.
      6 ounces bacon, 1 small onion, ½ cup apple cider vinegar
    • Return cooked beans to the pot along with the molasses mixture. Gently stir to combine.
      1 cup water, ⅓ cup molasses, ¼ cup ketchup, ¼ cup brown sugar, 2 tablespoons pure maple syrup, 1 tablespoon yellow mustard
    • Lock the lid. Select CUSTOM/HIGH PRESSURE; set timer to 25 minutes, press and hold button to start.
    • When the timer is up, let the pressure release naturally for 10 minutes, then press the steam button to release the rest of the pressure; hit the cancel button.
    • Remove lid and stir to combine. Beans will thicken as they cool. Serve hot or warm.

    Notes

    To store any leftovers, allow to cool then transfer to an airtight refrigerator/freezer-safe container. Store in the refrigerator up to three days, or the freezer up to three months.

    Whip up these easy Air Fryer Blueberry Hand Pies for a refreshing summer treat! Crispy, sweet, and perfectly portable—ready in minutes for everyday fun! 🍇🥧✨

    Last year, I made Cherry Puff Pastry Pies in the air fryer, and they were a game changer! I decided to try them with blueberries (changed some of the other ingredients as well) and these were superb.

    For this recipe, I used my Pampered Chef Deluxe Air Fryer:

    Ingredients

    • 10 oz fresh blueberries
    • 1/2 c. granulated sugar
    • 1 ½ tablespoons fresh lemon juice
    • 1 1/2 tbsp. cornstarch
    • 17.3-ounce frozen puff pastry
    • 1 large egg, beaten
    • coarse sugar, for garnish

    Instructions

    In a medium saucepan, combine blueberries and sugar. Cook over medium heat until blueberries begin to release their juices, 4 to 6 minutes, stirring occasionally.

    Meanwhile, mix cornstarch and lemon juice together in a small bowl until combined. Stir in the lemon zest, along with the cornstarch slurry into blueberry mixture, then bring to a gentle boil, stirring often. Once boiling, remove from heat. Let cool completely.

    Make the Hand Pies

    Cut puff pastry sheet into 6 rectangles. Spoon 3 tablespoons of cooled blueberry mixture onto each of the 3 bottom rectangles.

    Place the top rectangles over the blueberry filling, lining up the edges as best you can. Crimp the edges with a fork to seal shut. Repeat this entire step with 2nd pastry sheet so you have a total of 6 pastry pies.

    In a small bowl, whisk the egg. Brush tops of pastry pies with egg wash, then sprinkle with coarse sugar. Chill pies in the refrigerator for at least 25 minutes.

    Air Fry at 360⁰ F/180⁰ C for 12-14 minutes, switching trays at the halfway mark. Let cool on rack until ready to serve.

    Tips for Perfect Hand Pies:
    Thaw the Puff Pastry Properly: Make sure to thaw the puff pastry sheets according to the package instructions.
    This will make them easier to handle and ensure they puff up beautifully in the air fryer.
    Don’t Overfill: Be careful not to overfill the pies, as the filling can leak out during cooking
    Seal Well: Use a fork to crimp the edges securely to prevent the filling from escaping.
    Experiment with Fillings: This recipe works well with various fruit fillings, so feel free to get creative!

    🍌🍨 Whip up some creamy Butter Pecan Banana Ice Cream! Blend ripe bananas, rich custard, and buttery pecans for a summer treat that’s a breeze to make! 🌞🍦

    For this recipe, I used our Ice Cream Maker and Classic Batter Bowl:

    Ice Cream Maker

    Ingredients

    Ice Cream Custard Base

    • 2 cups heavy cream
    • 5 large egg yolks
    • 1 cup whole milk
    • ¾ cup sugar
    • ¼ teaspoon kosher salt
    • 3-4 very ripe bananas
    • 1 tablespoon pure vanilla extract
    • 1 tablespoon dark rum or vodka* – optional, to keep ice cream creamier

    For the Butter Pecans

    • 1 cup pecans
    • 2 tablespoons melted butter
    • Pinch of salt

    Instructions

    Please be sure to freeze your ice cream maker base for at least 24 hours prior to using.

    Separate egg yolks from egg whites (save egg whites for another use).  Whisk yolks with ¼ cup of the sugar until pale yellow in color. Set aside.

    Slowly add in heavy cream, milk, ½ cup of the sugar and the salt to a saucepan, stirring to combine. Heat just until bubbles begin to form – do NOT bring to a boil. 

    Add ¼ cup of hot mixture into the yolk/sugar mixture, whisking quickly to temper the yolks.  Continuing adding ¼ cup of the hot mixture until completely incorporated into the yolks. 

    Pour combined mixture back into pan, heat over medium-low heat until thickened.  You will know it’s ready when custard leaves a line that is not dripping on the back of spoon. Remove from heat.

    Place your peeled bananas into the blender, along with half of the custard mixture. Puree, then add back into the custard in the batter bowl, along with the rum (if using) and the vanilla, stir to combine.  Cover and chill until custard base reaches 45⁰ F/7⁰ C.

    For the Butter Pecans

    Preheat oven to 350⁰ F/177⁰ C. Melt butter, then combine with the pecans and salt.

    Place coated pecans on baking sheet and bake for 8-10 minutes, until nicely toasted.  Remove from oven and once cooled, chop into large pieces. 

    Make the Ice Cream

    Remove the bowl of the Ice Cream Maker from the freezer and attach the assembled clear lid to the bowl.  Set the timer for 25 minutes. Once the paddle starts rotating, pour the banana custard mixture into the bowl. During the last minute of churning, pour the butter pecans through the shoot.

    When the Ice Cream Maker stops turning, check for doneness. The mixture should be soft-serve consistency. If needed, add more time until the desired consistency is reached. Cover and let ice cream harden, if desired.

    • Remove the bowl of the Ice Cream Maker from the freezer and attach the assembled clear lid to the bowl. Set the timer for 25 minutes. Once the paddle starts rotating, pour the banana custard mixture into the bowl. During the last minute of churning, pour the butter pecans through the shoot.
    • When the Ice Cream Maker stops turning, check for doneness. The mixture should be soft-serve consistency. If needed, add more time until the desired consistency is reached. Cover and let ice cream harden, if desired.

    Notes

    The ice cream will be a “soft-serve” consistency when it first comes out of the machine. For a firmer, scoop-able ice cream, cover the bowl with the Stretch-Fit Silicone Lid and place in the freezer for 2–4 hours.
