Whip up these easy Air Fryer Blueberry Hand Pies for a refreshing summer treat! Crispy, sweet, and perfectly portable—ready in minutes for everyday fun! 🍇🥧✨

Last year, I made Cherry Puff Pastry Pies in the air fryer, and they were a game changer! I decided to try them with blueberries (changed some of the other ingredients as well) and these were superb.

For this recipe, I used my Pampered Chef Deluxe Air Fryer:

Ingredients

  • 10 oz fresh blueberries
  • 1/2 c. granulated sugar
  • 1 ½ tablespoons fresh lemon juice
  • 1 1/2 tbsp. cornstarch
  • 17.3-ounce frozen puff pastry
  • 1 large egg, beaten
  • coarse sugar, for garnish

Instructions

In a medium saucepan, combine blueberries and sugar. Cook over medium heat until blueberries begin to release their juices, 4 to 6 minutes, stirring occasionally.

Meanwhile, mix cornstarch and lemon juice together in a small bowl until combined. Stir in the lemon zest, along with the cornstarch slurry into blueberry mixture, then bring to a gentle boil, stirring often. Once boiling, remove from heat. Let cool completely.

Make the Hand Pies

Cut puff pastry sheet into 6 rectangles. Spoon 3 tablespoons of cooled blueberry mixture onto each of the 3 bottom rectangles.

Place the top rectangles over the blueberry filling, lining up the edges as best you can. Crimp the edges with a fork to seal shut. Repeat this entire step with 2nd pastry sheet so you have a total of 6 pastry pies.

In a small bowl, whisk the egg. Brush tops of pastry pies with egg wash, then sprinkle with coarse sugar. Chill pies in the refrigerator for at least 25 minutes.

Air Fry at 360⁰ F/180⁰ C for 12-14 minutes, switching trays at the halfway mark. Let cool on rack until ready to serve.

Notes

Tips for Perfect Hand Pies:
Thaw the Puff Pastry Properly: Make sure to thaw the puff pastry sheets according to the package instructions.
This will make them easier to handle and ensure they puff up beautifully in the air fryer.
Don’t Overfill: Be careful not to overfill the pies, as the filling can leak out during cooking
Seal Well: Use a fork to crimp the edges securely to prevent the filling from escaping.
Experiment with Fillings: This recipe works well with various fruit fillings, so feel free to get creative!

Tender chicken and veggies in a thick, creamy filling, covered by a golden flaky crust, this chicken pot pie is as comforting as it is delicious! I found this recipe from Taste of Home, and wanted to give it a try, as we love a double-crusted chicken pot pie, but especially enjoy it with a puff pastry top.

For this recipe, I used the Stone Square Baker With Tray:

Ingredients

  • 1 package (17.3 ounces) frozen puff pastry, thawed
  • 2 ½ pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 6 tablespoons butter
  • 1 large onion, chopped
  • 1 shallot, diced
  • 2 garlic cloves, diced
  • ½ teaspoon dried thyme
  • ½ teaspoon rubbed sage
  • 3/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 ½ cup plus 1 tablespoon light cream, divided
  • 10-ounces frozen mixed vegetables
  • 1 tablespoon lemon juice
  • 1 large egg yolk

Instructions

Dice chicken, onion, shallot, and garlic; set aside.

Place puff pastry sheets onto a large cutting board. Cut each sheet into five 2-inch strips. Weave strips to make a lattice design. Freeze for 15 minutes or until ready to place over pot pie.

Preheat oven to 400°F/200⁰C

Season chicken with salt and pepper. In a large skillet, heat butter over medium-high heat; sauté chicken until browned, 5-7 minutes. Remove from pan.

In same skillet, sauté onion until tender, 5-7 minutes. Stir in garlic and herbs; cook for one minute. Stir in flour until blended; cook and stir 1 minute. Pour in in broth and 1 ½ cups of the light cream. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes.

Stir in vegetables, lemon juice, add back the chicken and season, if necessary, with additional salt and pepper; return to a boil. Transfer to Stone Square Baker. Top with lattice, trimming to fit.

Whisk together egg yolk and remaining light cream, then brush over puff pastry.

Bake, uncovered, until filling is bubbling, and pastry is golden brown, 45-55 minutes. Cover loosely with foil if pastry starts getting too dark. Let stand 15 minutes before serving.

Easy to make and oh-so-delicious, this Cherry Puff Pastry Hand Pies recipe is simply puff pastry filled with homemade cherry pie filling, and you can make them even faster in the Air Fryer!

I found this recipe on Delish. I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership beginning over a year or so ago, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. You can learn more about their membership here; this is a code I found online, as I believe the normal cost is $35/year, but this code looks like you can still get it for $20/year, which is great! I have found it to be extremely useful, although I have not yet taken advantage of their hotline – yet.

One thing about this recipe is that it seems the amount used for fresh cherries may be off – they have listed to substitute ¼ cup fresh cherries for 12 ounces frozen – that did not seem right at all.  I used the same number of fresh cherries as frozen, and it was perfect!

  • 1/2 c. granulated sugar
  • 1 tsp. fresh lemon juice
  • 1/8 tsp. salt
  • 1 1/2 tbsp. cornstarch
  • 1 1/2 tbsp. room temperature water
  • 1 tsp. vanilla extract
  • 1 box (2 sheets) frozen puff pastry, thawed
  • 1 large egg, beaten
  • 2 tsp. milk
  • coarse sugar, for garnish

Instructions

Remove stem and pit cherries.

In a medium saucepan, combine cherries, sugar, lemon juice, and salt. Stirring occasionally with a rubber spatula or wooden spoon, cook over medium heat until cherries begin to release their juices, 4 to 6 minutes.

Meanwhile, mix cornstarch and water together in a small bowl until combined and milky and set aside. Stir in cornstarch mixture, then bring to a boil, stirring often.

Once boiling, remove from heat and stir in vanilla extract. Let cool completely.

In a small bowl, mix together the beaten egg and milk. Using a pastry brush, brush edges of the bottom rectangles with the egg wash.

Cut puff pastry sheet into 6 rectangles Spoon 3 tablespoons of cooled cherry mixture onto each of the 3 bottom rectangles.

Place the top rectangles over cherry filling, lining up the edges as best you can. Crimp the edges with a fork to seal shut.   • Brush tops of pastry pies with egg wash, then sprinkle with coarse sugar. Chill pies in the refrigerator for at least 25 minutes.

  • Air Fry at 360⁰ F/180⁰ C for 10-12 minutes, switching trays at the halfway mark. Let cool on rack until ready to serve.

Alternatively, you can bake these in the oven at 375°F/190°C for 30-35 minutes until tops are golden.
