Sweet and smoky, this melt-in-your-mouth chicken is seasoned with brown sugar and applewood spice, wrapped in bacon, then baked until caramelized to perfection.  A flavorful dinner that’s easy enough to make any night of the week! We love bacon, and it always seems we have chicken for dinner, so I wanted to try this combination.  Our Smoky Applewood Rub is terrific, and I hoped it was pair nicely with the brown sugar.  Oh my goodness, it was so delicious!  The flavors melded together beautifully, and I can assure you that this meal is now part of my monthly dinner rotation.

Let’s jump right in!

Ingredients

  • 4 boneless skinless chicken breasts
  • 12 slices bacon
  • ½ cup brown sugar
  • 2 tablespoons Smoky Applewood Rub
  • ¼ teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 tablespoon flat parsley, chopped for garnish

Instructions

Preheat oven to 375°F/190⁰C.

Combine brown sugar, Smoky Applewood Rub, salt and pepper in small bowl. 

Rub half of the mixture all over the chicken breasts.

Wrap  three slices of bacon (two if using smaller pieces of chicken) around each piece of chicken.

Place chicken in Enameled Cast Iron Skillet.  Top with the remaining applewood-brown sugar mixture. Bake for 25-35 minutes, basting with pan drippings occasionally, until the bacon is nicely browned, and the internal temperature of the chicken reaches 165°F/75⁰C.

You may broil for an additional 2-3 minutes if you prefer crispier bacon.  Garnish with freshly chopped parsley and serve immediately.

Full of Fall flavors, bits of bacon and dripping with maple glaze, this Maple Bacon Pull-Apart Bread from @delish is sweet and savory – and super-easy to put together! I found this recipe on Delish, and I’ve said it before, and I’ll say it again – Delish has a TON of amazing recipes, including the one I’m featuring today! I gave their unlimited membership a try last year, so I am speaking from my own (read: they are not paying me for this review) experiences. The membership cost me $20 for the year, and it includes a wonderful year-long subscription to their quarterly magazine filled with delicious (and easy!) recipes, unlimited access to Delish recipes, members-only access to a one-on-one hotline to ask for help from their food editors, and other wonderful bonuses. You can learn more about their membership here; this is a code I found online, as I believe the normal cost is $35/year, but this code looks like you can still get it for $20/year, which is great! I have found it to be extremely useful, although I have not yet taken advantage of their hotline – yet.

For this recipe, I used the Stone Loaf Pan, which I’ve used for meatloaf and, of course, sandwich bread

Ingredients

  • 16.3 – ounce tube refrigerated biscuit dough
  • 3 tablespoons melted butter
  • 3 tablespoons maple syrup, divided
  • 1/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • ¼ teaspoon kosher salt
  • 8 slices bacon, cooked and crumbled
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk

Instructions

Cook bacon in oven that’s been preheated to 400°F/200⁰C for 20-22 minutes, or until golden. Let cool, then crumble into pieces; set aside.

Turn oven temperature down to to 300°F/150⁰C.

Cut each biscuit in half to create 16 rounds. Mix melted butter with 1 tablespoon maple syrup. Brush on both sides of each biscuit round.

In a medium bowl, combine both sugars and the salt. Coat each biscuit in the sugar mixture, tapping off excess.

Make your stack: onto one biscuit, sprinkle a handful crumbled bacon and cover with another biscuit. Repeat this process until all bacon and biscuits are used, ending on a biscuit.

Place your biscuit stacks into the loaf pan on their sides, so the layers stand upright. If you have any extra maple butter, brush the top of the loaf. Bake until biscuits are puffy and golden, about 40 minutes. Let cool slightly and remove from pan.

While cooling, make the glaze: In a medium bowl, whisk milk and maple syrup into powdered sugar until smooth. Drizzle over warm loaf and serve.

Garlic and Bacon Green Beans – Julia’s Album (Video)

One of the reasons I started this blog was so that I could keep track of my favorite recipes AND food bloggers in one place, and another is to show all of you how my favorite recipes can be made easier if you are using the right products.  Julia over at https://juliasalbum.com is one of my favorite food bloggers, as her recipes involve LOTS of comfort food.  You can learn more about Julia here.

This recipe, however, is not just great food, it is keto friendly!  Green beans are, apparently, lower in carbs than some vegetables, which seems to make them a perfect addition to any low carb meal.  At least, I believe it does, but I am still learning about all of this. If you know better, then by all means, enlighten me!  At any rate, I love this wonderful and easy recipe, and I think you will, too. 

Let’s jump right in!!

What you’ll need:

  • 1-pound fresh green beans
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4-6 garlic cloves
  • 6 slices of bacon

Instructions

Boil water in Dutch oven; add trimmed green beans and ½ teaspoon salt. Cook on medium-low heat for 5 minutes. Drain the beans, set aside.

Cook bacon in Air Fryer for 14 minutes.  Cool, and cut into pieces. 

Peel and chop 4-6 cloves of garlic (depending on your garlic preference).

Melt butter in a large skillet on medium heat, along with olive oil. Add chopped garlic and sauté for about 30 seconds. Add in green beans and bacon pieces. Sauté on medium heat for about 1 minute, stirring to combine.

Bacon Infused Bourbon – The Baconer

This is the first time I am trying this recipe. I had never before heard of bacon infused bourbon, but what could be better? I absolutely love bacon, and bourbon is pretty nice as well.  I found this recipe over at, of all places, https://thebaconer.com.  I simply couldn’t resist!  You can learn more about Camillo Velasquez and Alicia Lewis here. They Love Bacon even more than I do, apparently!  This recipe was easy to make, and the bacon created a delicious smokey scent and added a bit of flavor to the bourbon. Overall it was delicious, and their recipe couldn’t be easier! Let’s do this!

What you’ll need:

  • 750 ml bottle of bourbon
  • 12 oz thick bacon

Kitchen items I use to prepare this recipe:

Directions

Place bacon on Stone Bar Pan and bake in 400° oven for about 20 minutes, until golden. 

Let bacon cool slightly, and remove and save for another meal or recipe, such as Bacon Bourbon Caramel Popcorn!

Pour bacon fat into batter bowl through the Fine Mesh Strainer

Next, pour the entire bottle of Bourbon into Classic Batter Bowl and whisk together with bacon fat. Cover, and freeze overnight.

When you take the batter bowl out the next day, remove the cover and you’ll see the layer of frozen bacon fat on top of the infused bourbon. Use a large knife to break through the layer of fat.

Use tongs to remove all of the fat, or as much as you can. 

Pour the infused bourbon into another Batter Bowl, using the fine mesh strainer but also either a strainer bag or some cheesecloth just to make sure to get out any leftover impurities.

Lastly, use a funnel and either pour the infused bourbon back into the original bottle, or you can do what I did and get smaller bottles and funnel it into those to give as holiday gifts. Anyone you know who loves bacon and bourbon would love to receive this! It’s such a beautiful color, the aroma is amazing and bourbon lovers everywhere can appreciate it.
