Lemon Ricotta Pasta & Spinach – The Clever Meal (Video)

Quick and delicious, this Lemon Ricotta Pasta & Spinach recipe is filled with lemony brightness, tender spinach, and creamy ricotta. Bonus points for being able to pull this together in 15 minutes for the most amazing and easy weeknight dinner! 

I was searching for a fast recipe that my whole family would like when I found this deliciousness from Katia over at The Clever Meal.  You can learn more about Katia here. I was thrilled to find her, as I absolutely love Mediterranean recipes, and as she is originally from Italy, my heart – and stomach were won over!

What I also like about this recipe is that you can change it to whatever you have on hand – for example, basil or arugula.  Hubby is not able to eat spinach (due to kidney stones) so I was able to adapt this recipe by using basil instead.  Delicious! One thing I might add to the sauce would be some red pepper flakes, which Katia does recommend as an optional garnish.  I think the next time I try it, I might add some to the sauce recipe as well.

Adjustable Double Grater

Easy-to-Store Folding Grater

Let’s jump right in!

Ingredients

  • 8-ounces pasta of choice
  • 8-ounces baby spinach

For the Sauce

  • 1 cup whole-milk ricotta cheese
  • 1/3 cup grated Parmesan cheese
  • 1 lemon zested and juiced
  • 1 tablespoon extra-virgin olive oil
  • 1 garlic clove pressed
  • Salt and pepper to taste

Garnish

  • Grated Parmesan Cheese
  • Lemon wedges
  • Extra-virgin olive oil
  • Red pepper flakes

Instructions

Begin to boil pasta in salted water according to package directions, cooking just until to al dente. While pasta is cooking, grate cheese.

To make sauce:

In a small bowl, combine ricotta, olive oil, Parmesan, lemon zest and juice, garlic, salt, and pepper. Taste for seasonings, adding more as needed.

To Finish:

When pasta is finished cooking, place spinach in colander. Reserve ½ cup of pasta water, then drain pasta into the colander over the spinach. Pour the pasta and spinach back into the pot. 

Add ricotta sauce, along with a little bit of the reserved pasta water.  Coat pasta evenly with the sauce, adding a bit more of the pasta water only if needed to make the sauce creamier.

Serve immediately with more Parmesan cheese, lemon wedges, extra-virgin olive oil and red pepper flakes, if desired.

Ingredients
  

  • 8 oz pasta your choice I used spaghetti

Starchy pasta water doesn’t just help thin the sauce to the right consistency; it also helps it cling to the pasta better and emulsify with the fat and cheese you’re going to be adding. – From Serious Eats

Creamy and delicious, this ricotta cheese takes only three ingredients to make and is ready in no time!  This wonderful recipe comes from Maria over at She Loves Biscotti.  You can learn more about Maria here.  I will be checking out more of her delicious recipes, as this one was perfect!!

Let’s jump right in!

Ingredients

  • 4 cups whole milk do NOT used ultra-pasteurized/ultra-filtered milk
  • ¼ teaspoon salt
  • 1 ½ tablespoons lemon juice OR white vinegar

Instructions

Add first TWO ingredients, in the order listed to the Deluxe Cooking Blender. Replace and lock the lid. Push the wheel to get to the CUSTOM HEAT setting.  Turn wheel to select 185°F/85⁰C.  Push the wheel again to set the timer to 00:00 minutes. Press the wheel to start.

Once the blender beeps and is done, carefully remove the lid, and add in the lemon juice or white vinegar.  Stir to incorporate, and you will notice that the curds will separate from the whey. Replace the lid and let rest for 15-20 minutes.

Remove the lid, and strain into the strainer bag.  Drain 5-7 minutes for creamier ricotta cheese, and up to 20 minutes for drier cheese. 

Use immediately, or store when cooled up to three days in the refrigerator.

Notes:  To make this on the stove, add the first two ingredients to a large pot (can double recipe), but you will have to stir often and watch the temperature to make sure the milk does not scorch or go beyond 185°F/85⁰C. 

Follow the remaining directions, stir in the vinegar, cover the pot, and use a ladle to scoop cheese into a cheesecloth to drain.

Please be SURE to use whole milk that is NOT ultra-pasteurized, otherwise you will not be able to make this recipe.

To freeze, store in a freezer-safe container for up to one month.

  • 1.5 tbsp lemon juice OR white vinegar

Instructions
 

  • Add first TWO ingredients, in the order listed to the Deluxe Cooking Blender. Replace and lock the lid. Push the wheel to get to the CUSTOM HEAT setting. Turn wheel to select 185°F/85⁰C. Push the wheel again to set the timer to 00:00 minutes. Press the wheel to start.

Tomato Basil Whipped Mozzarella Tart – Pampered Chef (Video)

Another tasty recipe from Pampered Chef, this is one I received for spring and it is scrumptious. Juicy tomatoes, creamy ricotta and mozzarella mixed with fresh basil?  All included over a baked refrigerated pizza crust.  I needed a fast meal, and this came together quickly.  I hope that you will enjoy it, let’s jump right in! 

Ingredients

  • 3 tbsp (45 mL) olive oil, divided
  • 1 pkg (13.8 oz./391 g) refrigerated pizza dough
  • 2 tsp (10 mL) Italian seasoning, divided
  • 2 cups (500 mL) cherry or grape tomatoes, halved
  • 1 tsp (5 mL) garlic powder
  • ½ tsp (2 mL) salt
  • ½ lemon, juiced (1–2 tbsp/15–30 mL)
  • Whipped Basil Mozzarella
  • 4 oz. (125 g) fresh mozzarella cheese
  • ½ cup (125 mL) ricotta
  • 6 basil leaves, torn, plus additional for topping
  • 1 tbsp (15 mL) milk
  • ¼ tsp (1 mL) salt

Preheat the oven to 425 °F.

Coat the bottom of a 12″ (30-cm) Cast Iron Skillet with 1 tbsp of oil. Spread the pizza dough into the bottom of the pan, pressing it into the edge. Fold over extra dough to create a lip. Use a fork to pierce the bottom and edges of the crust; brush with 1 tbsp  of oil and sprinkle with 1 tsp  of Italian seasoning.

Toss the tomatoes with garlic powder and the remaining oil and Italian seasoning. Place in a single layer on a sheet pan.

Place the skillet with the crust on the bottom rack and sheet pan with the tomatoes on the top. Bake until the crust has browned and the tomatoes have softened, 17–20 minutes. If the crust bubbles, press it down with a spatula, carefully, in case steam is released.

To make the whipped basil mozzarella, add all the ingredients to a food processor. Process until smooth and creamy, about 30 seconds, scraping down the sides of the bowl as needed.

Let the crust cool for about 5 minutes, then spread the whipped basil mozzarella over the inside of the crust. Top with the tomatoes.

When ready to serve, drizzle with lemon juice, top with additional basil, if you’d like, and cut into wedges.

  • 1 tbsp olive oil, divided

  • ½ tsp salt

  • 4 oz fresh mozzarella cheese
  • ½ cup ricotta cheese
  • 6 basil leaves, torn, plus more for garnish
  • 1 tbsp milk
  • ¼ tsp salt

Instructions
 

  • Preheat the oven to 425 °F.
