Carnitas in the quick cooker/instant pot

I thought I would start with the one food blogger that I am a total fan girl over – Nagi at – love her!!

I found her several years ago, when I decided I wanted to make pulled pork, but I was so sick of barbecue after having lived in Georgia for 10 and 1/2 years. I wanted something different, and Nagi’s recipe was the answer!

I am a big researcher. I Google anything I ever want to know, and I definitely recommend you do the same if you’re looking for a good recipe. Do your research, because they are not all the same. This is especially important so that you can make sure that you have all the ingredients at home in order to make a specific recipe.

Back to Nagi, and her amazing carnitas recipe. When I read it, I had only ever made pulled pork by pouring barbecue sauce over it, so I was a little surprised to see that she used orange juice on her pork. Come to find out, citrus juice is a great meat tenderizer. I gave it a try and I was not disappointed at all. In fact, ever since I found that recipe, I think I’ve only made barbecued pulled pork twice! This recipe is absolutely amazing, there are so many things you can do with it, but what I like to do best is simply put it in a taco serve with cilantro and pickled onions.
